Easy Migas Recipe is my go to recipe when I want a hearty, flavourful and quick brunch. What I like about this recipe is that it I can choose to add vegetables or make a simple one with just onion tomato and tortilla chips. Or make it wholesome with beans, corn, meat of your choice. The first time I made it, a simple version was tried out. Over time I added some more ingredients.
What Is Migas?
When it comes to Spanish or Portuguese style Migas, stale bread is used. With the Mexican version torn stale corn tortilla are added to the scrambled eggs. The Tex Mex cuisine takes a step further on the more easier side and uses tortilla chips. I save the broken tortilla chips that no one wants to eat. And it all goes into the Tex Mex version of Migas. Migas is the Spanish word for crumbs. Serve it with a topping of salsa, avocado, beans, corn, cheese or mix it all in.

Ingredients Required For Easy Migas Recipe
Eggs
Need 4 eggs to make the egg scramble. Whisk the eggs lightly with salt added.
Onion
Need about ¼ cup, finely chopped. Can use white, red or yellow onion.
Jalapeño
Add according to your taste. I have used one jalapeño which I chopped up roughly.
Garlic
Use 1-2 cloves of garlic. Peel and finely chop or mince.
Spring Onion
I have two spring onions, finely chopped.
Salsa Sauce
I had homemade salsa so used that. Feel free to use store bought salsa sauce. If you don’t have either, go for chopped tomatoes and cook till they become soft.
Oil & Butter
I used oil for cooking the onion and other vegetables. I used butter for the scrambled eggs. You can use oil or butter.
Cheese
Use any cheese of your choice. I used a mixture of shredded cheddar and mozzarella. If you want to, can use feta or cotija.
Salt
Add according to your taste.
Pepper Powder
Black pepper powder.
Cilantro
Chop the cilantro or coriander. Chop the stems too if they are tender.
Avocado
Dice the avocado. Add a bit of lime or lemon juice so it doesn’t turn black.
Cumin Powder
Need about ½ tsp.
Tortilla Chips
Need about 1-2 cups of tortilla chips.
Sweet Corn
I have used about ½ cup of sweet corn. Can use fresh, frozen or tinned.
Red | Black Beans
Cooked beans either red or black.






EASY MIGAS RECIPE
Ingredients
- 4 large eggs
- ½ cup onion finely chopped
- 1-2 cloves garlic chopped or minced
- 1-2 jalapeño chopped
- 1-2 spring onion chopped
- ½ cup sweet corn cooked
- ½ cup red | black beans cooked
- 1 tbsp olive oil
- 1 tbsp butter
- 2 tbsp cilantro chopped
- 3 tbsp salsa sauce
- 1 medium avocado peel and dice
- ½ tsp salt
- ½ tsp cumin powder
- ¼ tsp pepper powder
- 1-2 cups tortilla chips
Instructions
- Prepare all the vegetables and fruit.
- Heat a wide pan over medium heat.
- Add olive oil.
- Stir fry the onion till it becomes soft.
- Add the jalapeño and garlic. Stir fry for 1-2 minutes.
- Add the sweet corn and beans. Mix well. Allow the mixture to become hot.
- Add the black pepper and cumin powders. Mix well.
- Add the salsa sauce and mix well.
- Add the spring onion. Mix well. Push the mixture to one side of the pan.
- Add butter in the empty side of the pan.
- Allow it to melt a bit.
- Pour the whisked egg mixture.
- Scramble the eggs.
- Once the eggs are cooked mix in the vegetables that are on the side.
- Add the tortilla chips. Mix well.
- Add chopped avocado, grated cheese and cilantro.
- Serve Migas immediately with extra salsa sauce on the side.
Notes
- Can serve Migas without the sweet corn and beans.
- Add chopped tomatoes and taco seasoning if you don't have salsa sauce.
- Serve with chopped salsa if you like.
- Add any tortilla chips of your choice.
