Banana Chocolate Cake

Recipe: Banana Chocolate Cake

This Banana Chocolate Cake is moist, fudge like,  decadent dessert. The tropical flavour of ripe sweet  bananas blends well with the deep, comforting cocoa flavour. The best part is that this is completely egg free. Yes no eggs used. I like to add orange zest to give this cake a citrusy flavour. In fact, I have baked this cake countless times for birthdays of family members.

Memories

April is full of birthdays and anniversaries. Last weekend we celebrated my hubby’s uncle’s (mamaji) 77th birthday. I baked this  cake for his birthday. It had to be eggless as mamaji is a total vegetarian, no eggs or meat or fish. I had loads of over ripe bananas and thought of using them up. Hot weather means bananas do not stay good for too long. I thought of using butter icing and then changed my mind as I thought a 77 year old man deserves a more classy cake. He wanted to serve ice cream as dessert so mamiji requested for a cake that could be served with ice cream. I decided to drizzle the cake with some chocolate ganache. The Banana Chocolate Cake tasted absolutely delicious with vanilla ice cream.

Redoing An Old Post

I posted the recipe for Banana Chocolate Cake, the egg free version on 21/04/2015. At that time, I didn’t get the chance to take more photos of the bake. Had only one photo. While redoing this old post, I couldn’t use the bundt pan as I don’t have it anymore. The quality of water back in Mombasa was so bad that the pan got rusted. I do want a bundt pan but they tend to be pretty expensive, at least the better quality ones. Maybe one day will just go ahead and buy it or wait for a sale. I decided to bake the cake in a normal round cake tin.

Ingredients Required For Banana Chocolate Cake

All Purpose Flour

Also known as plain flour. Best way to measure with a cup is to spoon the flour into the cup and level it off, rather than scooping with it.

Sugar

For this cake I like to use brown sugar. However, you can use white granulated sugar instead.

Cocoa Powder

We need unsweetened cocoa powder for this recipe.

Baking Soda

As the leavening agent. Also known as Soda Bicarbonate.

Banana

Best to use over ripe bananas the ones where the skin starts to turn black. They tend to be at their sweetest. We need 1 cup mashed banana which is about 2 large bananas. I always freeze over ripe bananas for bakes and smoothies. Don’t throw them away.

Vanilla Extract

Add some for flavour.

Salt

Add about ¼ tsp to bring out the flavours of the other ingredients.

Oil | Melted Butter

I like to use neutral smelling oil like canola or sunflower oil. Or you can opt for melted butter. Oil allows the cake to stay moist for a longer time.

Hot Water

We need hot water for this cake recipe. Since it is an egg free cake, it helps to gelatinize the starch in the flour, helps the crumb to be moist. Also it helps to bloom the cocoa powder and intensifies its flavour.

Milk | Juice

In addition to hot water we add either milk or fresh orange juice in this recipe.

Orange Zest

Orange and chocolate go hand in hand. I love adding orange zest for flavour. Whenever I need to squeeze fresh oranges, I first peel the skin, without the white part. And then I process them in a spice blender. Any extra zest is stored in a ziplock or air tight container in the freezer. Ideal for cakes, cookies, muffins, smoothies, pancakes, etc.

Nuts

For this cake I prefer using either pecans or walnuts. We need about ½ cup coarsely chopped nuts.

Chocolate Chips

About ½ cup chocolate chips, Can use either dark or milk chocolate ones.
