Chanya Tondak is a Goan style curry made from dried peas, coconut and spices. Chanya refers to the dried peas and tondak is a Goan coconut legume curry. It is also known as Tonak. Tondak or Tonak can be made from any legume, lentil or peas. Whenever possible, I make it with red cowpeas and it is known as Alsande Tondak. The key ingredient for any tondak or tonak is the freshly prepared spice mixture. Tondak is usually enjoyed with the local Goan Pav (bread), rice or Unndo (another Goan style bread). One can enjoy it for breakfast or dinner. Perfect curry for vegans.
Memories
I had first shared the Tondak recipe with red cowpeas way back on 12/02/2018 with the group Blogging Marathon. At that time the theme was Main Course With Gravy or Rice. The photos were nothing to write home about – a bit hazy and dull.

As my followers may by know, this year I wanted to share dal, curries or sabjis for this year’s challenge. So far so good. ZEYTIN PIYAZI | GREEN OLIVE SALAD
Zeytin Piyazi is a tangy, refreshing, easy to make Turkish green olive salad. It is a traditional dish from the southeastern part of Turkey which is generally enjoyed for breakfast or as part of a mezze. Usually enjoyed with some bread. A simple salad made from green olives, tomato, onion, fresh herbs and seasoning. Sometimes walnuts, bell pepper, green apples, other herbs are added.
Aloo Bhaji & Poori is a classic Indian breakfast dish consisting of a potato curry and fluffy puffed up flatbread. Aloo is potato and bhaji here refers to a curry. It is a simple and yet comforting breakfast dish.
BATETA RINGAD NU SHAAK | GUJARATI STYLE POTATO BRINJAL CURRY
Bateta Ringad Nu Shaak is a basic, popular, easy to make potato and aubergine curry. This Gujarati style curry, sabji or shaak is usually prepared as a side dish to khichdi and kadhi. Or when made with a bit more sauce or gravy it can be easily enjoyed with some rotli or paratha.
Chora Nu Shaak, Gujarati Style is a black eyed bean curry which is usually served on special occasions or at weddings along with some tuvar ni dal and other side dishes. This Gujarati shaak or curry is generally prepared without any onion or garlic.
Dalithoy, Konkani style dal is also known as Dalithoi. It is believed that no Konkani special occasion or wedding is complete without a Dalithoy. A simple dal preparation but packed with flavours. It is unbelievable how tasty this dal is in spite of the very few spices used.
Dim Posto is a traditional, popular Bengali style of egg curry made in a creamy, rich gravy consisting of poppy seeds. Dim In Bengali is Eggs and Posto is poppy seeds. This curry has is mild with an earthy nutty flavour. The main flavour profile of this curry is poppy seeds, mustard oil and green chillis. This egg curry recipe is actually very easy to prepare.
Fansi Dapka Nu Shaak is a version of the traditional Dapka Nu Shaak. Generally guvar or cluster beans are used to make this dumpling like yogurt based shaak or curry. The dapka or dumplings are made of chickpea flour. Instead of guvar or cluster beans I have used French Beans. Dapka Nu Shaak can vary from region to region and home to home. Some make it without yogurt.
Kadai Aloo Gobi is a flavourful, delicious dhaba or restaurant style side dish that is usually served with roti, naan or paratha. Kadai means wok, aloo is potato and gobi is cauliflower.
Veg Hariyali is a medley of vegetables cooked in a creamy green gravy or sauce made from spinach, mint and fresh coriander. This green sauce or gravy is quite different to the palak sauce we commonly associate with palak paneer, palak chicken, etc.
Iru Puli Kuzhambu is a traditional tangy curry or gravy from the state of Tamil Nadu, India whereby both tamarind and yogurt along with a few spices are used. It is unbelievably tasty, comforting and definitely different from any other curries or gravies that I have tasted.
Vegetable Jalfrezi is a popular, spicy, tangy side dish or curry. Mixed vegetables are stir fried and added to a tomato based gravy. The vegetables are cooked on high heat till a bit crispy but not overcooked. They are then added to a tomato based gravy which is thick. In fact this is one curry which is almost dryish in the sense that there is not much gravy.
Kachhe Kele Ke Kofte is an Indian curry dish made from raw banana or plantains and paneer. This no onion or garlic curry dish is ideal for fasting days like Navratri, Ekadashi, Ram Navmi, Janmashtami, etc as it contains no grains or beans.
Lasooni Palak is a Punjabi style spinach gravy that is topped with a generous amount of fried garlic. It is also known as lehsuni palak or Garlic Spinach Curry. It is a popular road side eatery or dhaba dish. Generally, lasooni palak is served as a pureed creamy spinach sauce or gravy.
Mambazha Pulissery is a traditional Kerala style sweet and tangy mango curry made with ripe mangoes, coconut and yogurt. It is prepared as the main dish for the Onam Sadya. It is also enjoyed as a curry with rice during the mango season. Mambazha is the Malayalam (local dialect of Kerala) is ripe mango.
Navratan Korma is a rich, creamy, slightly sweetish Mughlai vegetable curry made using 9 gems or main ingredients. Nav is 9 and Ratan is gems or jewels. Typically, a mixture of vegetables, nuts, fruits and paneer are used to make this delicious korma or curry
Olan is a traditional Kerala dish, from white ash gourd, cowpeas or black eyed peas, coconut milk and simple seasonings.It is prepared asa part of the Onam Sadya. Easy to make, this delicious curry is gluten free, vegan without any onion or garlic. Instead of ash gourd I have used pumpkin.
Panchmel Dal or Rajasthani Panchratna Dal is a high protein dal or curry made from five different lentils. Nourishing, a bit spicy and delicious creamy, this dal can be enjoyed with some roti, rice or baati and churma.
Mughlai Paneer Qorma is a luxurious royal-style curry featuring tender paneer cubes simmered in a velvety sauce of yogurt, aromatic spices, nuts, and cream. Serve with some naan or rice.
Mysore Rasam, also known as Mysuru Saaru is a South Indian thin lentil curry or soup like preparation. Prepared with cooked lentils, tomato and freshly ground spices, it is generally enjoyed with rice. Alternately, you can sip on it like a soup especially during the cold season. In the state of Karnataka it is known as Saaru. If you ever get the opportunity to enjoy a full South Indian meal, rasam will be served with it.
Sai Bhaji is a traditional, nutrient rich Sindhi curry consisting of dal, leafy greens and seasonal vegetables. Easy to make and rich in veg protein, it is an essential part of the regular Sindhi Thali. The curry is usually smooth and creamy once cooked, without the addition of cream or nut paste. In Sindhi language sai means greens and bhaji is the vegetables.
Can use either green or yellow dried peas. Soak them overnight in enough warm water. Next day drain out the water, rinse the peas and cook them. I cooked them in the Instant Pot. You can cook them either in the Instant Pot or pressure cooker as it is much quicker then allowing them simmer in a pan.
Water
Need water for soaking the peas. Then need some more for cooking the peas. You may need to add some water while preparing the curry.
Salt
Add according to your taste.
Potato
An optional ingredient. I like to add it. Peel and cut the potato into chunks. Best to cook them with the peas.
Fresh Coconut
Either fresh grated coconut or frozen. Do not use desiccated coconut for this recipe.
Onion
I have used red onion. We need about 1 cup of finely chopped.
Garlic
About 3-4 cloves of garlic, peeled. Cut the garlic into pieces.
Tamarind
About 1 tbsp tamarind pulp. I usually keep tamarind pulp ready in the freezer. You can buy ready made pulp. To make pulp at home, soak tamarind in hot water for 20-30 minutes. Then rub off the pulp from the soaked tamarind using your hand. Strain the mixture. Rub the remaining fibres with a spoon against the sieve to remove all the pulp.
Oil
We need some oil to temper the curry. Can use any oil of your choice. I have used sunflower oil.
Fresh Coriander
Wash and chop some fresh coriander. Add the stems too if they are tender. They tend to be full of flavour.
Spices Required:
Black Peppercorns
Cardamom
Dried Red Chillis
Coriander Seeds
Fennel Seeds
Cinnamon
Cumin Seeds
Cloves
Mustard Seeds
Turmeric Powder
CHANYA TONDAK

Chanya Tondak is a Goan style curry made from dried peas, coconut and spices. Chanya refers to the dried peas and tondak is a Goan coconut legume curry. It is also known as Tonak. Tondak or Tonak can be made from any legume, lentil or peas. Tondak is usually enjoyed with the local Goan Pav (bread), rice or Unndo (another Goan style bread). One can enjoy it for breakfast or dinner. Perfect curry for vegans.
Soak the peas in enough warm water for 8 hours or overnight. It is better to have the water at least 2 inches above the level of the peas.
Drain out the water.
Rinse the peas with fresh water.
Add the soaked peas to the Instant Pot.
Add about 500 ml water.
Also add the potato chunks.
Add ½ tsp turmeric powder.
Pressure cook the peas for 15 minutes at normal low.
If you are using a pressure cooker then cook them for about 3-4 whistles.
Allow the pressure to drop naturally before opening the Instant Pot or pressure cooker.
The peas should be soft.
PREPARATION OF THE MASALA
Heat 1 tbsp oil a pan over medium heat.
Add the chopped onion and stir fry till it becomes a bit soft.
Add garlic and stir fry for 1 minute.
Add the spices - black pepper, cinnamon, cloves, fennel, cumin, coriander seeds, dried red chillis and cardamoms.
Stir fry the mixture for 1-2 minutes.
Add the grated coconut. Stir fry for 1-2 minutes till you get the aroma of coconut. Don't burn it.
Add the tamarind pulp and mix well.
Allow the mixture to cool down a bit.
Process the mixture in a food processor to a smooth paste.
PREPARATION OF CHANYA TONDAK
Heat 1 tsp oil in a pan over medium heat.
When it is hot add the mustard seeds.
As soon as they begin to pop, add the masala mixture.
Stir fry the masala for 1-2 minutes.
Add the boiled peas and potato mixture along with the water in which they were cooked.
Add salt and if required about ¼ tsp turmeric powder to give a nice yellow colour.
Mix well.
If required about about ½ cup water. Remember you want the tondak to be thick and not watery.
Allow the tondak to simmer for 5-7 minutes.
Add chopped coriander and mix well. Tondak is ready.
Serve it with some soft dinner rolls or rice.
Notes
Can replace dried peas with any legumes of your choice. Red cowpeas, chickpeas, black eyed peas, puy lentils( whole masoor), green moong beans, brown chickpeas are a few suggestions.
Add vegetable of your choice. Can add eggplant, cauliflower, carrot, cucumber, etc.
Make sure you use fresh or frozen coconut and not desiccated.
Soak the peas overnight so that they cook well. Hard peas don't make a tasty tondak.
