Recipe: Tandoori Cauliflower Steaks
Tandoori Cauliflower Steaks are not only healthy but so flavourful and not too difficult to make. Generally tandoori cauliflower is made with florets and served as an appetizer. Making them into “steak” form allows one to enjoy them as a meal or a side dish. Bake them in a tandoor, oven or air fryer. If you want to make the starter version then check out the recipe here. I enjoy the “steak” with some salad on the side. You can easily serve it as a side with any of your favourite main dish.
Cauliflower And Me
I generally don’t like overcooked cauliflower, just find it lacks texture and flavour. However, cauliflower with a bit of bite is a whole new story. So, whenever I make a sabji with cauliflower, it will have a bite. I know, some of you may think that I not cooked it properly but it is what it is! Bland cauliflower is a big no no so most of my cauliflower dishes will be loaded with flavours.
Some Interesting Facts About Cauliflower:
- Did you know that yellow/orange, green and purple cauliflowers exist? Yes they do. Its during my first trip to the famous Jean Talon market in Montreal that I saw these colorful beauties.
- Basically, cauliflower is a bland vegetable and therefore easily incorporated into a variety of dishes.
- Grated cauliflower easily replaces rice in many dishes for those who are looking for low carb options.
- You may be surprised to know that cauliflower is actually flower buds of the plant.
- Rich in Vitamin C, adding a few florets to any dish ups the intake of Vitamin C.
- Its better to steam than boil cauliflower as boiling results in loss of valuable nutrients.
- The leaves and stalks of cauliflower are edible.
- Cauliflower is believed to originate in the Mediterranean region, more specifically Cyprus.

Ingredients Required For Tandoori Cauliflower Steaks
Cauliflower
Choose fresh cauliflower. Use a large or medium cauliflower as you want two similar cauliflower slices. To make perfect “steaks”, remove the leaves. Place the cauliflower on a chopping board with stem down. Cut it into half. Then from each half cut thick slices of about an inch thick. The number of slices or steaks you’ll get depends on the size of the cauliflower. The remaining sides of the cauliflower can easily be used for other recipes. Both the slices of cauliflower that I used weighed 430g in total.
Yogurt
Plain yogurt and should be a bit thick. If it is watery, remove the whey.
Chickpea Flour
Known as besan, chana atta required so that the marinade sticks to the cauliflower steaks and makes it a bit crispy.
Semolina |Rice Flour
Helps to make the marinade a bit crispy. Also helps to absorb any liquid from the yogurt or wet cauliflower. For gluten free version use rice flour.
Tandoori Spice Mixture
Make it at home following this recipe or can be bought from any Indian store or online. Can replace the tandoori masala with garam masala or any other spice blend of your choice.
Kasuri Methi
Dried fenugreek leaves. Adds so much flavour to the steaks.
Turmeric Powder
Haldi, hardar. Need a little. Easily available in the stores, online or Indian stores.
Kashmiri Chilli Powder
Here I have used Kashmiri Chilli Powder as it adds a lovely colour to the marinade and also it is not too hot. Feel free to use chilli powder and quantity of your choice.
Fresh Ginger
Minced or grated
Green Chilli
Minced. Add according to your taste.
Garlic
Peeled and minced.
Salt
I have used table salt. Use any salt of your choice. Add according to your taste.
Lemon Juice
I have used 1 tbsp lemon juice. However, do taste the yogurt before you add lemon juice. If it is sour, add less lemon juice.
Jaggery Powder
An optional ingredient. Adding it balances the flavours. If you don’t have jaggery, substitute it with brown or white sugar.
Oil
Use any oil of your choice. Need a little to add to the marinade and to brush some on the parchment paper.
Fresh Coriander
Chopped, for garnishing.

TANDOORI CAULIFLOWER STEAKS
Ingredients
- 2 cauliflower steaks, approx 430g in total 1 inch thick
- ½ cup plain yogurt thick
- 1 tbsp chickpea flour
- 1 tbsp semolina |rice flour
- ½ tsp turmeric powder
- ½ tsp Kashmiri chilli powder
- 1 tsp tandoori spice mixture
- 1 tbsp kasuri methi
- 1 tsp jaggery powder | brown sugar optional
- 1 tsp salt
- 1 tbsp oil
- 1 tbsp lemon juice
- 1 tsp garlic minced
- 1 tsp ginger minced
- 1 tsp green chilli minced
- 1 tsp oil for greasing
- 1 tbsp fresh coriander chopped
Instructions
GET CAULIFLOWER STEAKS READY
- Take a medium or large cauliflower. Remove all the leaves.
- Trim the stem. Place the cauliflower on a chopping board with stem down.
- Using a sharp knife, cut the cauliflower into half.
- From each half, with the stem still down, cut 1 inch thick slice of the cauliflower.
- Repeat with the other half.
- The remaining cauliflower can be used for another recipe.
- Wash or soak the 2 cauliflower steaks well to remove any worms or insects.
- Pat dry the steaks with a kitchen towel to remove excess water.
PREPARE THE MARINADE
- Add yogurt in a mixing bowl.
- Add chickpea flour and semolina or rice flour.
- Add turmeric, chilli powders. Add the tandoori spice blend.
- Add the minced ginger, garlic and green chillis.
- Crush the kasuri methi between your palms and add to the yogurt.
- Add salt, jaggery, 1 tbsp oil and lemon juice.
- Mix the marinade well.
MARINATE THE CAULIFLOWER STEAKS
- Line a baking tray with some parchment paper.
- Brush the paper with 1 tsp oil.
- Arrange the two cauliflower steaks in the tray.
- Brush marinade on both the slices. Use up about ¾ of the marinade. As you apply it, it will find its way to the spaces in between.
- Allow the steaks to marinate for 30 minutes. If preparing later put it in the fridge.
ROASTING | BAKING THE CAULIFLOWER STEAKS
- Preheat the oven to 180℃.
- Bake the cauliflower steaks for 20 minutes.
- Remove the tray from the oven after 20 minutes.
- Flip the steaks over. Brush the remaining marinade between the two steaks.
- Return the tray in the oven and bake for 15-20 minutes.
- Prick the cauliflower steak with a fork. It should go in easily. Here we are not over cooking the cauliflower.
- For a bit charred look you can broil the steaks on high for 3-5 minutes.
- Sprinkle some chopped coriander and serve immediately with some salad or with your main dish.
Notes
- Use medium or large cauliflower. I used a large cauliflower. The total weight of the two slices was 430g.
- Add spices of your choice.
- If you want more crispy cauliflower steaks add more oil to the marinade. I used less to make it a healthy meal.
- Make sure the plain yogurt is thick.

I’m going to try these on the grill. I think that will work out great when I need a vegetarian option during grilling season.

Wendy I think it should work on the grill. I’d probably blanch the steaks in hot water for a few minutes. The florets cook quickly but the stems takes longer.

I love the use of the besan and semolina in the marinade to help the cauliflower cook to a crunchy outside. I’ve tried to make “steaks” before but they fell apart. I will give it another go to try your recipe, Mayuri, because it looks so good!

Thank you so much. Stacy buy a tightly packed cauliflower and I think the thickness matters. Too thin and they may fall apart.
