Recipe: Sweet Potato Brie Bites

Sweet Potato Brie Bites are easy to make, delish and a crowd pleasing appetizer or starter. Swap the brie with cream cheese, halloumi, paneer, goat cheese, feta, etc. I came across one recipe that used marshmallows. For me it had to be brie as hubby and both simply love it. Sweet flavours with a bit of saltiness certainly get all the taste buds working to the optimum.

Sharing Sweet Potato Brie Bites Recipe With The Group Sunday Funday

For this Sunday the theme is Elegant Appetizers For Mom. Wendy who blogs at A Day in the Life on the Farm requested the following, “Next Sunday is Mother’s Day. Share an appetizer that would feel at home on a Mom’s Day Brunch Buffet”.  Now elegant was the key word here, well at least for me. How to make an appetizer elegant?  Then I remembered that I had saved an Instagram reel to try out later. Must admit have quite a few of those. But a bit of a warning, many of the picture worthy, drooling images, don’t work out in reality. I have had my fair share of failures. And hubby will say ” stick to the way you make it”. And I do wish I had. However, when it comes to Chef Zouheir, the story is entirely different.

Chef Zouheir Inspired Appetizer

Chef Zouheir’s recipes are a fusion of different food cultures, the reels simply visually tantalizing and the best part is that his recipes work well.  However, I cannot represent them with finesse and elegance the way he does. I had come across his reel on sweet potato bites and had saved it to try out later. I don’t regret trying out the recipe at all. Perfect combinations of flavours and elegance. His reels and recipes are an inspiration on how to get colours to pop up in any dish. Must admit he uses some the most expensive ingredients liberally – pomegranate, pistachios, saffron.

 

Mother’s Day

Unfortunately, Mother’s Day is usually a mixture of sadness and happiness. Sad because my mum passed on in 2011 and my mother in law in 2023. A box of Ferraro Roche and lilies made my mum happy. My mother in law, she loved Cadbury’s hazelnut chocolates. I remember when we visited her in 2021, my hubby bought a whole box of Ritter Sport’s Milk Chocolate with Whole Hazelnuts. She happily received them, but complained she preferred the Cadbury ones. When I pointed out that Ritters had more hazelnuts, her loyalty towards Cadbury one was steadfast. We  bought the Cadbury ones in India. She kept both for herself!

Mixed feelings as I get to spend it with my younger son but not my daughter and the eldest son. However, that is the reality of life. These days families are so far apart. I do envy families who live nearby.

Ingredients Required For Sweet Potato Brie Bites

Sweet Potatoes

For this recipe I definitely will go with the orangish ones and not the white ones. I opted to peel the sweet potatoes before slicing them as the skin didn’t look that good. I think if the produce is fresh, would go for baking them with the skin. So entirely up to you what you prefer, with or without the skin. We need thick slices. I would go for about ½ inch thickness. Thinner and they may not hold shape as one use their fingers to enjoy these bites. Thicker ones will take longer to bake. Also you want a balance of flavours and not just taste the sweet potato.

Olive Oil

We need good quality olive oil to coat the sweet potato slices.

Salt

For the sweet potatoes. Be careful when adding salt as brie is slightly salty.

Pepper Powder

Black pepper powder for the sweet potatoes. Can use finely or coarsely ground peppercorns.

Brie

Use good quality brie. I opted for the creamier one. It melts easily. If you go for the less creamy one, that too will work fine. In that case, the cheese will hold its shape a bit.

Dried Cranberries

Brie is always paired with a fruit. I like the tanginess from the cranberries.

Honey

For this recipe I went with honey instead of maple syrup. If you have  good flavourful honey drizzle the bites with it for added flavour. Or simply use maple syrup. To easily drizzle the honey over the bites I warmed it up in the microwave oven for 15 secs. May need 5 -10 seconds more depending on the microwave. But don’t let it boil.

Walnuts

Toasted and roughly chopped walnuts, to add on top of the bites. Adds a bit of crunch. Can use any nuts of your choice. Toast the walnuts in a pan over low heat or in the microwave for about 1-1½ minutes.

Fresh Thyme

Adds flavour and looks elegant. Opt for other fresh herbs like rosemary, tarragon, chives, dill, basil.

Red Chilli Flakes

Optional ingredient. I added a few flakes on top.

 

 

 

 

 

SWEET POTATO BRIE BITES

Ingredients
  

  • 550 g sweet potatoes
  • 150 g brie
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp pepper coarsely ground
  • ¼ cup honey
  • ½ tsp red chilli flakes
  • ¼ cup dried cranberries
  • ¼ cup walnuts toasted and roughly chopped
  • some fresh thyme

Instructions
 

PREHEAT THE OVEN

  • Preheat the oven to 200℃.
  • Also allow the baking tray to become hot in the oven.
  • When you place the sweet potato slices on the hot tray, it will sear them a bit.
  • So yes, the tray is NOT lined.

PREPARE THE SWEET POTATO SLICES

  • Wash the sweet potatoes thoroughly if you are baking them with the skin.
  • Peel the sweet potatoes if you are baking them without the skin.
  • Trim the ends and cut ½ inch thick slices.
  • Put the slices in a mixing bowl.
  • Add olive oil, salt and pepper. Mix the slices well so they get coated with the oil.

BAKE THE SWEET POTATO SLICES

  • Take the hot tray out of the oven. Lightly coat it with some olive oil using a pastry brush.
  • Arrange the slices in the tray.
  • Bake for 10 minutes. Remove the tray from the oven and flip the slices.
  • Bake for 10 minutes or till the sweet potato slices are done. Insert a fork in the middle of one of the slices. It should go in easily.
  • While the sweet potato slices are baking, cut the brie cheese into small cubes.
  • Remove the tray from the oven.
  • Arrange about 3 small cubes of brie on each slice. If the slices are small then 2 will be enough.
  • Return the tray to the oven and allow the brie to melt a bit. This will take about 3-4 minutes. You want it melt a bit and not completely.

FINAL PREPARATION

  • While the brie is melting, heat the honey for 15 seconds or a bit more. Make sure you use a heatproof bowl.
  • Remove the tray from the oven. The brie will have melted a bit.
  • Transfer the sweet potato slices to your serving board or plate.
  • Top them with the toasted walnuts.
  • Add dried cranberries.
  • Drizzle honey over the slices.
  • Top with some fresh thyme and red chilli flakes.
  • Serve while still hot.

Notes

  • Use any nuts of your choice.
  • Replace honey with maple syrup.
  • Use any dried fruit of your choice.
  • You can bake the sweet potato slices and keep them in the fridge. When you bake them again with the brie they will warm up.
  • Don't over bake the sweet potato slices.
