Recipe: Cranberry Brie Bites
Cranberry Brie Bites are super easy to make, perfect as holiday appetizer or bites and versatile. Right from the type of pastry to the filling, one can opt to use what they have at hand or customize it their family’s liking. And did I mention they taste really good even when they become cold? Many brie bite recipes use crescent roll dough, flaky pastry dough or shortcrust pastry. I have used phyllo pastry. Not only do these bites turn out ultra crispy but also are a little more healthier than the fat loaded shortcrust or flaky pastry. I would have loved to use ready made phyllo tart shells. But I don’t get them in my small town. But no worries, as I used the phyllo sheets to create the shells or cups.
Memories
25th December is double celebration time for us – Christmas and hubby’s birthday. And he absolutely loves brie. This year, it was just the two of us for Christmas cum birthday. And in Magog, all restaurants are closed for Christmas so there is no question of dining out. So I had planned what I will be making throughout the day. For breakfast, baked oats, for lunch a salad along with some Cranberry Brie Bites, dinner Spinach Ricotta Ravioli. And dessert some Cranberry Cheesecake. The plan for breakfast and dessert went fine. But everything in between didn’t!
The day was absolutely beautiful… nice powdery snow, sunshine, no wind chill. Perfect day for a walk by the lake. After breakfast we put on our warm clothes and went for a long walk. On the way back home, stopped at the supermarket to pick up the freshly made ravioli and sauce. Hubby saw these le pain des fleurs (crispbread) and picked up some garlic cream cheese to go with it. When we reached home, we were so hungry that we decided to have the crispbread and coffee. Bad idea to watch telly and eat as we had more than a few! Come dinner time and we were not that hungry to enjoy pasta. But hubby was open to the idea of Cranberry Brie Bites without the salad. So that turned into dinner. As for the Mini Cranberry Cheesecakes I made, we had that too. Except for breakfast, the whole day turned into a pretty ‘cheesy’ day. Hubby reckoned, that is what we do for birthdays, eat what you like!
Sharing Cranberry Brie Bites With Sunday Funday
For this Sunday Camilla suggested we share New Year’s Eve Nibbles. Can be sweet or savoury. Whenever, we have a New Year’s Eve party we serve up several starters and dessert options. Some are literally finger food while for some you need a small plate or bowl. I thought of sharing Cranberry Brie Bites with phyllo pastry for this theme.

Ingredients Required For Cranberry Brie Bites
Phyllo Pastry
Use ready made phyllo tarts if you get them. You can replace the phyllo pastry with shortcrust or flaky pastry. If you are using shortcrust or flaky pastry, use mini muffin tins or shape them into small bite shapes.
Cranberry Sauce
Use homemade or ready made sauce. You can replace that with some jam if you want to. Use apricot, strawberry, raspberry, etc. Making cranberry sauce at home is really easy. Add 1 cup sugar and water in a saucepan. Bring the water to a boil or till the sugar melts. Add 340g of fresh cranberries to the boiling water. Lower the heat and gently boil the mixture for 10 minutes. Most of the cranberries will pop and the sauce will become thicker. Take the pan off the heat. As the sauce cools, it will become thicker.
Brie Cheese
Use good quality brie cheese. I like using the creamy version as it melts very well. Need about 180-200g brie. Cut the cheese into pieces that are about a teaspoonful or so.
Pistachio
Pistachios slivers to add on top. Can easily replace them with roughly chopped walnuts or pecans.
Butter
I like to use salted butter as it adds a slight saltiness to the bites. Melt 2 tbsp butter. It will be enough to brush the muffin tins and the phyllo sheets.

CRANBERRY BRIE BITES
Ingredients
- 6 sheets phyllo pastry about 14"X 18"
- 180-200 g brie cheese
- ½ cup cranberry sauce
- 2 tbsp pistachio slivers
- 2 tbsp butter
Instructions
- Preheat the oven to 180℃.
- Thaw the phyllo pastry. I prefer to leave it in the fridge overnight.
- Count 6 sheets of phyllo pastry. Stack them together. Lay it with the length side towards you.
- Cut into 4 equal parts width wise. Lengthwise it will be into 3 strips.
- Totally you should have 12 pieces or stacks.
- Cover them with a damp cloth till you are ready to use them.
- Melt the butter. I do that in the microwave oven for 15-20 seconds.
- Brush the muffin tins lightly with some butter.
- Take one stack, separate all 6 sheets. Brush one with melted butter, lightly.
- Cover with another sheet. Brush with melted butter. Repeat till you have a stack of 6 sheets.
- Place the stack over the muffin tin cup. Gently press it down into the cup using your fingers or a small jar or glass.
- Repeat the same process with the remaining 11 stacks.
- Bake the empty phyllo cups for 5-7 minutes or until light golden in colour.
- Cut the brie cheese into about 1 tsp pieces or just under 1 inch cube.
- Remove the half bake phyllo cups from the oven.
- Add one piece of brie cheese in each cup.
- Bake the phyllo cups for 5 minutes.
- Remove the phyllo cups from the oven.
- Transfer them to a wire rack to cool.
- Add about 1 tsp of cranberry sauce in each cup.
- Sprinkle some pistachio slivers over the sauce.
- Cranberry Brie Bites are ready.
Notes
- Use ready made phyllo tarts if you get any.
- Add more brie cheese if you want to.
- If you don't have cranberry sauce can easily use any jam of good quality.
- Can add chopped walnuts or pecans instead of pistachios.

oh love that gorgeous golden color on them. Love how we can use seasonal fruit for the sauce and jazz it up according to the time of the year. Perfect party pleaser recipe!
