Recipe: Vegetarian Nachos
Vegetarian Nachos is an easy throw together kind of dish to serve as starters for your party or enjoy it as a meal during the lazy weekend as it is loaded with veggie and beans. If I am making it as a meal to take care of tortilla chips craving, I prefer to make individual portions in small baking trays. That way we’re not fighting for the toppings, and pulling off the melted cheese from each others tortilla chips. But today it is a trayful of veggies, beans, cheese and chips.

January 29th is National Corn Chip Day (in US). Stacy who blogs at Food Lust People Love suggested “Corn chips include ones like Fritos or any kind of fried tortilla chip, made from blue corn, white corn, yellow corn. Crush them to add to the top of a casserole, or roll your chicken nuggets in them for crunch. Float them on soup or add them to a sandwich. Your corn chip of choice must be used as an ingredient in the recipe, not just to accompany dip or salsa on the side.”
Have not used fritos as such in my cooking. For me it was snack that my kids loved when they were younger. Can’t remember when I bought a packet last. But tortilla chips, that is a different story. But looking forward to learning how to use Fritos in a dish from fellow members of Sunday Funday.

What Is Nachos?
As the story goes, this popular dish was created as a quick fix at a restaurant Victory Club in 1940 by Ignacio Anaya Garcia. Back then he was a maître d at the restaurant. Mamie Finan and a group of U.S. military officers’ wives who husbands were stationed at the nearby U.S. Army base Fort Duncan went to the restaurant. Anaya was not able to find the cook. He went to the kitchen saw some tortilla. He cut into triangles, deep fried them, added grated cheese and jalapeno and bell peppers. Reheated the whole dish and served it. After tasting the dish Finan asked what it was called and Anaya quickly answered Nachos.. the common Spanish nickname for Ignacio.
Nachos Variations
If you scan the website, there are numerous toppings that are added to nacho dish. With minced meat, a variety of vegetables, different kinds of cheeses, sauces, salsa, cooked pulses. This is one dish that allows you to create your own version. I prefer to use shredded cheese as opposed to cheese sauce.
Also, I find it is an excellent way to add loads of veggies and beans. During corn season, I make a huge corn salad and add that as a topping with some feta and sour cream. Sometimes leftover bhaji from Pav bhaji becomes a topping. With a generous amount of chopped onion, some chillis and cheddar cheese, it is superb.
Ingredients Required For Vegetarian Nachos
Tortilla Chips
I like using whatever corn chips are available.
Cooked Beans
Use red, black or for a change use garbanzo or chickpeas. I have used canned black beans.
Corn
Whenever available I like to use fresh corn. This time round have used frozen corn. I cooked it in the microwave for 2 minutes. Can also used canned corn.
Salsa Sauce | Salsa Roja
Cooked Salsa. I have used ready made salsa roja.
Pico De Gallo
Pico De Gallo or raw salsa as we commonly know it as. To make Pico De Gallo you will need fresh tomatoes, onion, jalapeno, lime juice, salt, pepper and cilantro.
Cheese
Grated or shredded cheese. I like to use a mixture, cheddar and Jack Monterey. Sometimes I use the ready made Tex Mex blend of grated cheeses. If you wish, can use cheese sauce but I not a big fan of it.
Avocado
Just love adding chopped avocado. Adds an amazing creamy bite to the nachos.
Cilantro |Fresh Coriander
Add for that earthy flavour.
Spring Onion
Optional. But if you have some at hand add to the nachos. Adds a flavourful crunch.

VEGETARIAN NACHOS |VEGGIE LOADED NACHOS
Ingredients
FOR VEGETARIAN NACHOS
- 100-150 g corn tortilla chips
- 1 cup cooked beans red or black
- 1 cup corn frozen or canned
- 1 cup grated cheese cheddar, Jack Monetery or both
- ½ cup salsa roja
- ½ cup sour cream
- 1 medium avocado diced or sliced
- ¼ cup cilantro chopped
- ¼ cup spring onion chopped
FOR PICO DE GALLO
- 1 small onion chopped
- 1 large tomato chopped
- 2 tbsp cilantro chopped
- 1 tbsp lime juice
- 1 small jalapeno chopped
- ¼ tsp salt
- ¼ tsp black pepper powder
Instructions
PREPARATION OF VEGETARIAN NACHOS
- Preheat the oven to 180℃.
- Line a baking tray with some parchment paper. Makes cleaning the tray later on much easier. I used a 10"X12" tray.
- If you are using frozen sweet corn, then cook it before using it for the nachos. Steam, boil or microwave it.
- Arrange the tortilla chips in the lined tray. Make sure they overlap a bit. Don't leave huge spaces in between.
- Scatter half quantity of the beans and sweet corn over the chips.
- Scatter ½ quantity of both the shredded or grated cheeses.
- Scatter the remaining beans and corn.
- Top with the remaining cheeses.
- Bake the nachos for 10 minutes to allow the cheeses to melt a bit.
- Take the tray out of the oven.
- Spread the salsa roja over the melted cheese.
- Return the tray back in the oven and bake for the remaining 5 minutes.
- Take the tray out and scatter the chopped avocado, cilantro and spring onion.
- Scatter the pico de gallo.
- Dot the baked nachos with blobs of sour cream.
- Serve immediately.
PREPARATION OF PICO DE GALLO
- While the nachos are baking, prepare the pico de gallo.
- Mix all the ingredients in a bowl.
- If you want to make the pico de gallo ahead then don't add salt. Add just before using it as it gets watery.
Notes
- Add topping of your choice. Can add refried beans, leftover chile, etc.
- Can omit salsa roja and add pico de gallo only.
- The quantity of the ingredients is a rough guidance. Add more or less of whatever you like.
- Can use cheese sauce instead of shredded cheese.
- I have used both cheddar and Jack Monterey. Jack Monterey is a creamier cheese which melts well.

I completely agree with making individual portions but honestly, I usually don’t since the big pan is quicker. Your nachos are gorgeous with all those toppings, Mayuri! Wish I had some right now.
