• Avocado Egg Sandwich

    September 8, 2013mayurisjikoni

Avocado Egg Sandwich Avocado Egg Sandwich is an easy, filling, delicious with a unique flavour kind of sandwich. Enjoy it for breakfast or lunch. Pack it in the lunch box for yourself or kids. Avocado adds creaminess and taste to an otherwise plain egg sandwich. Memories The first time I tasted avocado in a sandwich was some years back when my son Nikil suggested it. Initially,I just looked at him thinking “what an avocado in a sandwich”! I allowed him to make the sandwiches for us, not wanting to deter his culinary exploratory journey. The sandwiches were so creamy and delicious and flavourful. And since then avocados feature a lot in my sandwiches whenever possible. A Meal On Its Own I love preparing avocado egg…

    July 5, 2013mayurisjikoni

Recipe: Mashed Avocado & Tomato Bruschetta Mashed Avocado Tomato Bruschetta is a delicious, easy to make, refreshing and healthy appetizer or starter.  Small bread slices are topped with garlicky mashed avocado and chopped tomatoes, onion and fresh herb of your choice. The combination of avocado, tomato, onion and garlic is simply awesome. A refreshing bruschetta to enjoy as a starter, appetizer, snack or with some soup. What Type Of Bread To Use For Bruschetta? Any actually, as long as the slices are not too thin. The slices should be at least ½ inch thick so it holds the topping and does not get soggy quickly. Also the crumb should be good with a decent crust. I like to use baguette, ciabatta, sourdough. Traditionally in Italy…

Add noodles, tofu, vegetables of your choice and you have a new soup in a jiffy. Memories Yesterday as I sat down at my bedroom window to type out this post, the internet suddenly disappeared. Looked up and saw thick black smoke coming out from a building in the distance. Hubby and I couldn’t pin point exactly which building was on fire. Our mobiles started pinging… messages pouring in that the building housing Africaonline was on fire. Africaonline is an internet provider. No wonder the internet went off. We were praying that no one is injured or worse. Mombasa Fire Brigade don’t…

  • Eggless Banana Walnut Bread

    November 20, 2012mayurisjikoni

Recipe: Eggless Banana Walnut Bread Eggless Banana Walnut Bread is so easy to make and an excellent way to use up over ripe bananas. Besides that, the eggless version turns out super soft just like the one with eggs. I bake banana bread often as I can make it slightly different every time. Changes the nuts, add other dry fruits like raisins, cranberries, blueberries. Skip chocolate chips or add more. Add some cocoa powder to the batter.   A Bit About Eggless Banana Walnut Bread An easy peasy recipe, it is all about mixing the wet and dry ingredients and baking it. Sometimes I use plain flour but mostly prefer using wheat flour. Did you know that mashed banana especially the ripe ones are a…

  • Potato Salad With Dill

    September 13, 2012mayurisjikoni

Recipe: Potato Salad With Dill Mention Potato Salad to my hubby and only one type comes to his mind, the creamy potato salad with dill. Whenever I buy baby potatoes to try out a new dish, he will insist that I make his potato salad. The first time I made it for a dinner party, I used fresh cream. Though it tasted really good, by the time we served it, it had become like a big clumpy thick mass. Next time I made it, I added thick plain yogurt. That worked well. Slowly the cream got replaced totally by thick yogurt. Do we miss the fresh cream in it? Not at all. Fresh or Dried Dill While most herbs can be interchangeable for a dish,…

EVENT: FOODIES_ REDOING OLD POSTS #31 Recipe: Sourdough Calzone Sourdough Calzone is a crusty, delish, oven baked, folded pizza. Add any stuffing of your choice. Make them small to enjoy as a sandwich or bake a big one to enjoy as a main meal with some salad. Updated on 07/08/2020 I must admit that when I first made calzone at home it was as flat as a pancake. Though the taste was amazing, the single click and how a calzone should look was just off scale…completely off scale. Amazing, how over years we tend to learn how to hone our techniques and methods. Admittedly, for this post I’ve not only changed the photo but altered the recipe as for sure this is much better than…

EVENT: FOODIES_ REDOING OLD POSTS #45 RECIPE: VEGETABLE BAKED PASTA Vegetable Baked Pasta Vegetable Baked Pasta loaded with vegetables,is cheesy, creamy and simply irresistible. It is totally comfort food for my family. In fact I prepare Vegetable Baked Pasta every fortnight. The vegetables vary but the sauces remain the same. This pasta dish is a version of the traditional Italian dish called PASTA AL FORNO. For Pasta Al Forno pasta is boiled about 3-4 minutes less than instructed on the packet. The pasta is then mixed or layered in a baking dish with a meaty sauce. The meat used varies from Italian sausage to minced meat. Then it is baked. In Italian the word ‘Al Forno” means to the oven, meaning baked. For my version of…
