• Pasta with Spinach Sauce

    June 10, 2012mayurisjikoni

EVENT: FOODIES_ REDOING OLD POSTS #30 Updated on 24/07/2020 I have so many old posts that need a new look. How many times I must have prepared this easy pasta with spinach sauce but did not remember to take better clicks. Eventually,  when I made it day before yesterday, remembered to take better photos. The recipe remains the same. By joining the  group The Foodies_Redoing Old Posts, I get the opportunity to redo old recipes. Memories Besides vaghareli rotli, my brother loves pasta. Ask him any time whether he will have pasta and he will not refuse. If made with cream, white sauce and loaded with cheese, all the more better. While I was visiting the family in UK, my brother asked me to make…

  • Avocado,Tomato & Feta Salad

    May 24, 2012mayurisjikoni

Recipe: Avocado,Tomato & Feta Salad  Avocado, Tomato & Feta Salad is so easy to put together, delicious and a healthy meal on its own or as a side dish. Feta pairs so well with both avocado and tomato. This is my favourite summer time salad especially when a variety of tomatoes are in season. What Is Feta? Feta is a type of Greek cheese that is made from sheep or goat’s milk. It is a brined white cheese. Sometimes it is made from a combination of goat and sheep milk. Authentic feta is usually soft, crumbly. One is usually not able to cut it into perfect cubes the way we can for hard cheese. You will find that Feta is used in many Greek dishes.…

  • Fresh Pineapple Salsa

    May 16, 2012mayurisjikoni

Fresh Pineapple Salsa Fresh Pineapple Salsa is a delicious combination of sweet and tangy ingredients with a bit of spiciness. Can be served with any Mexican Dish, as a starter with chips or simply enjoy it on its own as a salad. What is a Salsa? Technically, a salsa is a sauce made with cooked ingredients, the most common being tomato, onion, cilantro, chilis and lemon juice. Salsa Fresca is a fresh sauce. No cooking takes place for the Salsa Fresca. The ingredients are chopped and mixed together. Usually enjoyed with some tortilla chips or on its own as a starter or a salad. This Pineapple Salsa is actually a Salsa Fresca. Memories  I’ve got to thank my daughter for this recipe. I’d barely begun…

  • Avocado Vinaigrette

    May 1, 2012mayurisjikoni

Avocado Vinaigrette Avocado Vinaigrette is a classic traditional entrée which is so simple to prepare but a very delicious way to enjoy avocados. The only important factors for this so easy to prepare starter is that the avocado should be just ripe and that the vinaigrette does not taste like acetic acid, too acidic and tangy.   Memories – No anchovies for me please! I remember when some old classic restaurant in Mombasa would serve Avocado Vinaigrette as a starter/entrée. Mostly, there wouldn’t be a suitable vegetarian starter except for Avocado Vinaigrette. Though labelled as vegetarian, it would have anchovies! Most restaurant owners do not understand that when you are a vegetarian it includes no fish! “But fish is vegetarian Ma’am” is the answer I…

  • Baked Broccoli

    March 10, 2012mayurisjikoni

Baked Broccoli Baked cauliflower is a popular dish, but have you tried baked broccoli? I really don’t like steamed or boiled broccoli on its own. So the best way I like enjoying this vegetable is baking it with some sauce, cheese and sometimes adding other veggies like cauliflower, corn or mushrooms.Baked Broccoli makes a delightful dinner option, served with a salad on the side and home baked bread. Broccoli belongs to the cruciferous family i.e. in the same family as cauliflower, cabbage, mustard leaves, kale.   Health Benefits of Broccoli   Broccoli contains twice the  amount of Vitamin C compared to an orange. Rich in selenium, a mineral that has found to have anti cancer and anti viral properties. It is a rich source of…

    January 13, 2012mayurisjikoni

RECIPE: OLIVE AND ROSEMARY FOCACCIA Olive and Rosemary Focaccia is so aromatic, flavourful and the best part is, that it is so easy to make. Enjoy it on its own with some flavoured olive oil, with some soup or even you pasta dish so that you can wipe the sauce off the plate with it. Take some focaccia along with some salad and wine for a picnic. What Is Focaccia? Focaccia is an Italian olive oil bread. It is flat and can be of any shape – round, square, rectangle or as individual portions. The focaccia dough is much softer than normal bread dough.
