Recipe: Strawberry Yogurt Sherbet
Strawberry Yogurt Sherbet is an easy to make, healthy, quick, cooling, refreshing frozen treat. Add the ingredients in a blender or food processor and sherbet is ready within minutes. And the best part is that no refined sugar is used. I like to use either maple syrup or honey.
Spring Is Here
When I got back from India at the beginning of April, we still had a bit of snow. And summer season had already begun in India. So from the hot to the cold. Took us a few days to adjust to the extreme change in temperature. Spring this year arrived a bit late in Magog. For the past few days we had sunny weather coupled with some humid days. As I write this post, today it has been raining and it is extremely humid. Such weather calls for some frozen treat. That is when my yogurt sorbet recipe comes in handy.

What Is A Sherbet?
A sherbet is different from a sorbet. Sorbets are mainly made from fresh juice/puree, sugar and water. Sherbets contain fresh fruit juice or puree, some dairy product and sugar. This results in a more creamier frozen treat compared to a sorbet. Sherbet originates from Turkey, way back during the Ottoman Empire. The popular Middle Eastern fruity sugary ice drink sharbat resulted in a sherbet in Turkey. Generally milk is added to give it a more creamier texture than a sorbet. Over time, many variations of sherbet have been prepared to suit ones palate and dietary needs. The inclusion of dairy doesn’t make the texture of the frozen treat like an ice cream as the amount of dairy added is little comparatively.

Camilla suggested we use strawberries to celebrate National Strawberry Month. Perfect timing as slowly fresh strawberries are appearing in the market. When in season and on offer, I like to freeze some so I can use them for sorbets, sherbets, smoothies and baking. I decided to redo an old post for this theme. Ingredients Required For Strawberry Yogurt Sherbet
Strawberries
For this recipe you need frozen strawberries. To freeze strawberries, wash and wipe them gently with a kitchen towel. Hull the strawberries. Layer them in a single layer in a tray or a freezable container. Put them in the freezer . I usually leave them overnight. You can then store them in a ziploc bag. Alternately, buy ready frozen strawberries from the supermarket. We need about 16oz (approx. 450g)
Greek Yogurt
Instead of using milk I prefer to use Greek Yogurt for this sherbet recipe. Not only is it more healthier but adds a bit of protein too to your frozen treat. Use plain Greek Yogurt and not the flavoured ones as they contain sugar.
Maple Syrup| Honey
Add according to your taste. But to keep it healthier don’t make it too sweet. Generally, strawberries are sweet therefore adds natural sweetness. If they are a bit sour you may need to add a bit more honey or maple syrup.
Lemon Juice
Add a bit of lemon juice for flavour and a bit of zing.



STRAWBERRY YOGURT SHERBET
Ingredients
- 16 oz frozen strawberries about 4 cups
- ½ - ¾ cups greek yogurt
- ¼ cup maple syrup or honey
- 1 tbsp lemon juice
Instructions
- Add strawberries, maple syrup, lemon juice and yogurt in a blender.
- Blend the mixture till the strawberries are crushed and the mixture is smooth.
- Serve the sherbet immediately.
- Or transfer the sherbet into a freezable container.
- Leave it in the freezer till required.
- To serve, remove the strawberry yogurt sherbet from the freezer.
- Leave it at room temperature for 10 minutes or less if your kitchen is too hot.
- Scoop the sherbet into serving bowls.
- Enjoy. Can drizzle some balsamic glaze over the sherbet before serving. Tastes really good.
Notes
- To freeze strawberries, wash and hull them. Place them on a tray or a container in a single layer and freeze. Once frozen you can store them in a bag or container in the freezer.
- Use more honey or maple syrup if the strawberries are a bit sour.
- Can use frozen mixed berries. mango, or other fruits.
