• 88. ruby pink delight

    June 14, 2012mayurisjikoni

Grapefruit is available in abundance, both the local and imported ones. I prefer using the local pomelo. It tends to taste less bitter. The segments may not be as pink as the ones in the photo but I got lucky. If you like, you can use proper grapefruit. The tanginess of the grapefruit and sweetness from honey is a wonderful combination.      GRAPEFRUIT /POMELO ONION SALAD Serves 2   1 cup grapefruit segments 2 handfuls of greens, any of your choice ½ medium or 1 small white onion ¼ cup roasted walnut pieces 8 to 10 mint leaves   Dressing : 1 tbsp olive oil 1 tsp balsamic vinegar 1 tsp honey ¼ tsp salt ½ tsp coarse pepper powder Remove the membrane from…

  • 74. Eggless coleslaw

    June 1, 2012mayurisjikoni

Niku’s idea Coleslaw is such a basic salad, widely served with burgers, baked potatoes, chips or french fries, in sandwiches and so many other things. Unfortunately all those who don’t eat eggs cannot really have it as it has mayonnaise. I make my coleslaw at home without the mayonnaise. Once when I made the coleslaw to go with the baked potatoes, Niku said ‘Mum, make the cabbage salad a bit more interesting. Add some grapes’. That was when he was just about 7 or so. Then and there I should have figured out that my son will choose a career where food is the major interest. He is not a chef but works for the hospitality industry. Over the years many more suggestions have poured in…

I can eat raw broccoli, blanched, in soup form but I hate boiled broccoli. So it was broccoli salad for dinner on that day. The recipe is very easy to make and a nutritious one. • 67. mango avocado and bean salad

    May 25, 2012mayurisjikoni

Very tropical   The temperatures are soaring, its just too hot to have heavy meals. I just want to make a quick salad and be out of the kitchen in a jiffy. For today’s salad, I mixed avocado, mango with beans. You would think that avocado and mango would be a weird combination but when I made this salad it actually tasted really great. If you are a lover of both avocado and mango then this salad is just right for you. I did not add any form of sweetness as the mango was sweet. This salad has to be prepared just before serving as both the avocado and mango tend to turn black if kept cut for a while. Adding fruits, seeds, nuts and herbs…

  • Avocado,Tomato & Feta Salad

    May 24, 2012mayurisjikoni

Recipe: Avocado,Tomato & Feta Salad  Avocado, Tomato & Feta Salad is so easy to put together, delicious and a healthy meal on its own or as a side dish. Feta pairs so well with both avocado and tomato. This is my favourite summer time salad especially when a variety of tomatoes are in season. What Is Feta? Feta is a type of Greek cheese that is made from sheep or goat’s milk. It is a brined white cheese. Sometimes it is made from a combination of goat and sheep milk. Authentic feta is usually soft, crumbly. One is usually not able to cut it into perfect cubes the way we can for hard cheese. You will find that Feta is used in many Greek dishes.…

No cooking takes place for the Salsa Fresca. The ingredients are chopped and mixed together. Usually enjoyed with some tortilla chips or on its own as a starter or a salad. • Avocado Vinaigrette

    May 1, 2012mayurisjikoni

Avocado Vinaigrette Avocado Vinaigrette is a classic traditional entrée which is so simple to prepare but a very delicious way to enjoy avocados. The only important factors for this so easy to prepare starter is that the avocado should be just ripe and that the vinaigrette does not taste like acetic acid, too acidic and tangy.   Memories – No anchovies for me please! I remember when some old classic restaurant in Mombasa would serve Avocado Vinaigrette as a starter/entrée. Mostly, there wouldn’t be a suitable vegetarian starter except for Avocado Vinaigrette. Though labelled as vegetarian, it would have anchovies! Most restaurant owners do not understand that when you are a vegetarian it includes no fish! “But fish is vegetarian Ma’am” is the answer I…

  • 17. Plum Salsa salad

    January 26, 2012mayurisjikoni

Salsa or salad, you decide!    Plums, the dark red Santa Rosa variety are once again in season in Kenya. Compared to the ones I have eaten in UK, these plums are very juicy and sweet and a bit tart at the same time. The skin also tastes a bit tart. One of my favourite fruits but unfortunately the season is very short, just about 3 to 4 weeks. Plums are rich in vitamin C and K, fiber and antioxidants. Dried plums are called prunes. While the season lasts, I have been busy trying out various recipes using plums. A quick and very easy recipe is plum salsa salad. Have it as a salad or as a salsa with tortilla chips. The sweetness from the plums,…
