It’s salad time again I made some pani puri for dinner a few days ago. In spite of the measurement, I was left with a bit of boiled chickpeas and green grams.Decided to use it up in a salad. Delightful was the verdict and refreshing. A clever way to have your proteins if you are a total vegetarian. The following recipe is a rough guideline but add any other vegetables you want to. The idea is to have a nutritious and filling salad. I have named it an indian bean salad because chickpeas and green grams are the most commonest beans present in any indian kitchen. What is a Greek Salad? A Greek Salad is a salad that is part of the Greek Cuisine. Usually, it comprises of tomatoes, cucumber, onion, olives, some feta cheese and fresh herbs usually oregano. It is also known as a Farmer’s Salad as he/she would have the ingredients at hand. A good healthy salad can be enjoyed as breakfast or as light lunch. These days it common to find variations of this salad where bell peppers, capers, fruits are added. My Greek Style Salad During the hot season, (okay I know its always hot in Mombasa), I hate spending time in the sweltering kitchen cooking elaborate meals. Sometimes even a simple meal of roti and sabji (veg side dish) becomes a task to cook.…

odd combinations….delightful taste When I got back from the market on Tuesday, Rachel my maid was helping me to sort out the veggies and fruits. She found some beetroot in the basket and just sighed and said in kiswahili that this lady loves beetroot, she buys it every week. I find adding beetroot to salads a great idea and my hubby and I both love them. For the salad recipe given below, I added boiled beetroot to mango and to offset the sweetness from both, I added feta cheese. Colourful and appetizing. Before I blog the recipe all my followers out there, please please please take some time to add comments to the recipes you have tried out. Please put them on the blog…

Recipe: Potato Salad With Dill Mention Potato Salad to my hubby and only one type comes to his mind, the creamy potato salad with dill. Whenever I buy baby potatoes to try out a new dish, he will insist that I make his potato salad. The first time I made it for a dinner party, I used fresh cream. Though it tasted really good, by the time we served it, it had become like a big clumpy thick mass. Next time I made it, I added thick plain yogurt. That worked well. Slowly the cream got replaced totally by thick yogurt. Do we miss the fresh cream in it? Not at all. Fresh or Dried Dill While most herbs can be interchangeable for a dish,…

EVENT: FOODIES_ REDOING OLD POSTS #32 Updated on 21/08/2020 Beetroot Carrot Salad is one of the easiest salads to put together. I simply love how well the red from the beetroot and orange from the carrot complement each other and makes the salad super tempting. Obviously, the first time photos for the salad were horrible. I’ve tried to take better clicks. The recipe remains the same. Anyway, who follows a fixed salad recipe? I don’t. Add whatever ingredients you like. If it were not for the group Foodies _ Redoing Old Posts, this post may never have got a breath of fresh air, new look and probably wouldn’t have taken time to read a bit about my awesome kids. Its a bi monthly group, where…

A colourful salad Avocados are in abundance at the moment and I am adding it to my salad practically every day. Today, I thought of making a dressing using the avocado instead of just chopping it and adding it to the salad. I love avocado dressing. Its a great alternative for mayonnaise or other egg based dressings. I was lucky to get some plum tomatoes from Nakumatt. We don’t get these delicious tomatoes often here. Whenever I am in UK or India, I prefer using plum or cherry tomatoes for my salads. However this does not deter me from making the salad whenever these tiny tomatoes are not available. I just use the normal ones. This salad is so colourful that anyone would get tempted…

I love adding cheese cubes , crumbled cheese , grated cheese to my salad. The day hubby sees cheese in the salad, he comments ” someone’s favourite is on the menu again!” Not that he wouldn’t eat the cheese, am sure he too loves it. Cheese makes the salad more fun…. can you imagine the mixture of different tastes…. its like music for the tongue. Enjoy this simple and lovely salad. Yes, avocados are still in season and not joking at all but now they are huge, they are actually the size of a hawaiian paw paw. I am serious. I’m sure you’ll love this salad as much as I love it. Its filling, different and loaded with all the essential nutrients required. You can…

Sometimes its nice to have a simple salad without many ingredients. I find that the salad recipe I am about to share with you, is a good accompaniment to pasta, burgers or sandwiches. I love buying the mixed green salad leaves we get these days at Nakumatt or Tusky. Taking advantage of this because as soon as the hot season begins the salads will disappear from Mombasa. People normally go nutty about nuts but I am going nutty about avocado. Just can’t get over the fact that they are still available in abundance. GREEN SALAD WITH AVOCADO DRESSING 4 Servings A bag of green salad leaves (approx. 4 to 5 handful) ¼ cup torn mint leaves Dressing: ½ cup mashed avocado ½ cup thick yogurt…
