• Semolina Sesame Seed Bread

    June 15, 2020mayurisjikoni

EVENT: FOODIEMONDAY/BLOGHOP THEME: #251 RAVA RAAGA DISH: SEMOLINA SESAME SEED BREAD Theme this week on FoodieMonday/Bloghop After all the celebration, for the 250th theme by members of this awesome group, we are back to suggesting themes whereby all members have easy access to ingredients. Though many countries are trying to get back to some sort of normal life…which by the way is never going to be the same for anyone, some ingredients are still difficult to source. Keeping this in mind, Aruna who blogs at Vasus Veg Kitchen suggested that we use Semolina to prepare a dish.  What is Semolina? Also known as Suji, sooji, rava, rawa, it is actually the middle part or endosperm of the hardy durum wheat. While milling the bran and…

EVENT: FOODIEMONDAY/BLOGHOP THEME: #250 LET’S CELEBRATE WITH CAKE   Theme this week on FoodieMonday/Bloghop This week FoodieMonday/Bloghop is celebrating 250th theme. What better way to celebrate this milestone with some cake. We’ve had some interesting themes, some repeats and some challenging ones too. For a group to continue strongly for 5 years and that too with recipes every week of the month is no small feat.    My Journey with FoodieMonday/Bloghop I joined the group on 14th march 2016 for their 31st theme which was Fusion Thandai Recipes. I made Thandai Kulfi thinking that I’ve definitely created something different. Unfortunately that was not the case, as other participants had made souffles, galettes,  thandai barfi with cherry glaze, thandai baked yogurt etc. That was the first…

EVENT: FOODIEMONDAY/BLOGHOP THEME: #249 MONSOON MUNCHIES For India, the hype of summer with people going on holidays, enjoying late nights out, street food, ice creams, mango delights all passed by without much celebration this year with the lockdown because of Covid 19. Some states are already experiencing rains while others are waiting for the Monsoon. Monsoon in India equates to hot hot bhajias (pakoras), steaming or roasted corn and garam garam (hot) chai.  Theme this week on FoodieMonday/Bloghop Archana who blogs at The Mad Scientist’s Kitchen suggested Monsoon food and I was thinking like I really don’t want to fry anything or even make a hot soup as it has been just too hot for the past week or so in Mombasa. We are suppose…

    May 25, 2020mayurisjikoni

RECIPE: LAVENDER LEMON PANNA COTTA WITH LEMON CURD Lavender Lemon Panna Cotta with Lemon Curd is an easy to make, refreshingly, delicious, light dessert, perfect for the summer. Making the lemon curd with fragrant lemons is such a delight and surprisingly very easy.   FoodieMonday/Bloghop Theme This week’s theme, Lemons was suggested by Waagmi who blogs at Cooking is Funn. Her photography speaks volumes, making every dish appear delectable. She suggested we use Lemon to prepare our dish for this week’s theme. Most of us are still cooking with basic ingredients that are available in our pantries. Keeping lemon in mind I would love to try out Waagmi’s simple and yet tempting Eggless Lemon Cake. Lemons Lemons are bright yellow citrus fruits with an acidic…

EVENT: FOODIEMONDAY/BLOGHOP THEME: #247 IT’S CHAAT TIME Summer time in India equates to not only mangoes but also Chaats and loads of it. This is the time when most kitchens are closed especially in the evenings and families venture out to sample lip smacking street food and chaats. However, this year I’m sure its a totally different scenario with everyone cooped up at home. However, that doesn’t mean that one cannot enjoy Chaats from the comforts of their homes. FoodieMonday/Bloghop Theme Here in Kenya, we don’t get Chaats as street food, as it has its own street food specials like Mahamari, Fried Mogo, Kebabs, Chicken Tikka, Kachri Bateta, Viazi Karai, etc. If we want to enjoy some Chaats we either have to make them at…

  • Date Paneer Cheesecake

    May 11, 2020mayurisjikoni

EVENT: FOODIEMONDAY/BLOGHOP THEME: #246 P FOR PANEER My Paneer Dish : Date  Paneer Cheesecake I must have had the recipe for date and paneer cheesecake jotted down in my recipe book for ages. If I’m not mistaken I must have jotted it down from the Elle Magazine (India Edition) that my daughter kept on buying during her college years. Right now we get the best choice of Dates during Ramadan month and it would be really sad if I didn’t take the opportunity to try out the dessert. Sweet dates were enough to add a little sweetness to the dessert. Most of us are still under lockdowns, stay at home, self isolation, etc etc as times are getting more uncertain as to how the Corona…

  • Coffee and Walnut Cake

    May 4, 2020mayurisjikoni

EVENT: FOODIEMONDAY/BLOGHOP THEME: #245 LOVE FOR COFFEE The theme name is so apt when it comes to hubby and me, as we both love coffee. Having said that, I’m a little surprised that I really don’t have that many recipes on the blog where I’ve used coffee powder or granules as an ingredient. However, that has been taken care of to some degree with the coffee and walnut cake that I prepared for the theme.   FoodieMonday/Bloghop Theme Before I get into the whole coffee story a reminder that the FoodieMonday/ Bloghop group members decide on a theme and post a new recipe every Monday. For this week Sasmita who blogs at First Timer Cook suggested that we use Coffee to make our dishes. General…

EVENT: FOODIEMONDAY/BLOGHOP THEME: #244 SNACKMANIA FoodieMonday/Bloghop Theme Many countries are still under lockdown or curfew while some are planning to open up malls, restaurants, shops but with limited people allowed in these places. This week Renu who blogs at Cook with Renu, suggested that we make snacks which can be stored at least for two weeks if not less. Truthfully, most snacks in my home don’t last beyond two weeks besides chevdo. Snacks With families at home with this Stay Home Be Safe that everyone in the world is practicing, more food is consumed. Especially when you have kids at home, they constantly need something to snack on. For many its not easy to get fresh fruits and vegetables all the time. So most of…

  • Pineapple Slush

EVENT: FOODIEMONDAY/BLOGHOP THEME: #243 LITTLE CHEFS RECIPE: PINEAPPLE SLUSH Pineapple Slush is so easy to put together, is refreshing and so delicious. An ideal treat for summer parties, kids parties and for adults add a shot of rum or vodka. FoodieMonday/Bloghop Theme As many parents find themselves and their kids at home because of the worldwide spread of Corona Virus, parents are taking this opportunity to introduce their kids to other skills than those learnt in the classroom. Cooking and helping around the house are some of them. Bearing this in mind, this week’s theme suggested by Priya is recipes that kids can put together either partly or entirely by themselves. For this theme I’ve chosen to make the ever so easy Pineapple Slush. Memories…..…

  • Dhana Jiru/Coriander Cumin Spice Powder

    April 13, 2020mayurisjikoni

Recipe :Dhana Jiru/Coriander Cumin Powder Dhana Jiru is basically a combination of roasted coriander seeds and cumin seeds. Some add turmeric to it some don’t. Dhana Jiru is used in every Gujarati home for all the dals, curries, shaaks/Sabjis (vegetables), and some snacks too. I cannot imagine making bhinda nu shaak(okra stir fried), Stuffed brinjal, Tuvar Dal, without dhana jiru. I like to make small batches so that the freshly ground spice powder adds much flavour to the dish. If you want to add turmeric then generally a small dried piece of it is added to the spices before grinding. I usually don’t add that as I prefer to add  turmeric separately. It is so easy to make dhana jiru as the ratio is 1:¼.…
