  • Pan de Yuca/ Yuca Bread#BreadBakers

    July 10, 2018mayurisjikoni

EVENT: BREAD BAKERS THEME: GLUTEN FREE BREAD This pan de yuca, yuca bread or cassava bread recipe has been in my recipe book for over a year. I had once bought some cassava flour to try out some traditional African recipe. Lost the recipe, couldn’t remember the name and was left with the bag of flour. When I cleaning out the fridge, the flour came out from some hidden corner. Googled for recipes to use up the flour and came across the recipe for pan de yuca. I jotted it down and decided to check out other similar recipes. What got me so confused was the different oven temperatures used, the amount of cheese used. A bit frustrated, thought I’ll get back to the recipe…

  • Corn Cornbread

    July 2, 2018mayurisjikoni

EVENT: FOODIEMONDAY/BLOGHOP THEME: #151 CORN The whole of today was spent indoor as right now Montreal is going through a heatwave. We thought that the night time would be cooler so went for a long walk with hubby. However, the heat was unbearable. The last time I experienced a blast of hot air like this was years ago when I first went to Amdavad before I joined school in Mt.Abu. Mombasa is a hot and humid place but we don’t get dry hot air. Tomorrow too is going to be hot and people have been advised to drink lots of water. Luckily the football matches for the World Cup are going on so for better half of the day watched the matches. I cannot sit…

  • Feta, Olive and Basil Bread

    March 6, 2014mayurisjikoni

Feta, Olive and Basil Bread Feta, Olive and Basil Bread is a homemade bread which is stuffed with feta, olives and basil. Superbly delicious, goes well with a hearty salad or soup. Makes a good bread to carry for lunch, picnics or even when you’re travelling. Fresh Basil or Dried? While fresh basil would have been a better option, I didn’t have any so used the dried version. I’ve also tried the stuffing with other herbs and it tastes equally good. So, go ahead and use a herb of your choice.   Plain Flour or Whole Wheat Flour? The first time I baked this bread, I used all purpose flour only. Nowadays, I prefer to use wholewheat flour and add just a little of the…
