Allow water to come to a boil. Add washed spinach leaves and tender stalks. Cook till spinach wilts. Don’t overcook. Transfer the spinach to ice cold water and ice cube mixture. Allow it to cool in the iced water for 5 minutes. Transfer to a colander to remove water. Puree in a food processor. Use spinach puree for parathas, curries, sauces, sabjis, snacks, etc.

Generally, lasooni palak is served as a pureed creamy spinach sauce or gravy. However, there are variations. Iru Puli Kuzhambu is a traditional tangy curry or gravy from the state of Tamil Nadu, India whereby both tamarind and yogurt along with a few spices are used.
