Vaghareli Bread | Spicy Bread Snack is an easy to make, quick bread snack with spices. Vaghareli in Gujarati means tempered or seasoned. Do you have any old bread? Then turn it into a snack. Either enjoy the soft bread version or the crunchy crispy one. The crunchy crispy one takes a bit longer but lasts a few days. The softer one needs to be consumed on the same day.

Renu who blog’s at Cook with Renu has started a Facebook Group called Foodies Redoing Old Posts where every two weeks we can redo our old posts and share it on the group. What is the advantage of doing this? Well, it gives us the opportunity to improve the write up, update photos and get comments. I’ve got so many old posts that need updating especially where the photos are concerned. This group with definitely give me the ‘push’ to prepare the dishes again for better photos.

 

 

Memories

Bread can be toasted, buttered, fried, made into so many things…. sandwiches, breadcrumbs, croutons etc. When my brother and sister in law visited us for the first time in Mombasa, my sister in law Arti made vaghareli bread for us as a snack. It brought back fond memories. My mum would sometimes make Vaghareli bread for us as a snack. Simple white bread turned into a delicious snack. After Arti made it for us, it became a regular snack for my 3 kids. I took it one step further and prepared a big batch which would last us a few days. After seasoning the chopped bread, I would allow it to become crispy in the oven. The kids absolutely loved this version.

 

Advantage Of Baking Vaghareli Bread | Spicy Bread Snack

  • Firstly, less oil is required. We need a little for the vaghar or tempering.
  • The bread pieces crisp up and become crunchy, much like croutons.
  • Lasts a few days. However, till now it has not lasted more than 3 days as it is a popular snack.

Ingredients Required For Vaghareli Bread | Spicy Bread Snack

Bread

I use about 400g of bread, sliced and preferably white. While you can prepare this snack with brown bread, we prefer it with white. And I don’t remove the crust.

Oil

Any oil of your choice. I use sunflower oil.

Ginger

For this recipe best to use ginger paste. Add according to your taste.

Green Chilli

I add green chilli paste. Add according to your family’s taste.

Salt

Be careful how much you add as bread itself contains a bit of salt.

Turmeric Powder

Haldi, hardar, add to the oil before adding to the bread pieces. This way most of the bread pieces get coated with the turmeric powder.

Red Chilli Powder

Add according to your taste. We will add it after the bread becomes crispy. If you add when the bread pieces are baking it may get burnt.

Cumin Powder

I prefer adding jeera powder after the bread pieces are baked. This prevents the spice powder from burning.

Coriander Powder

Same as above, add after the bread is toasted and crispy.

 

 

 
 
 
 

VAGHARELI BREAD | SPICY BREAD SNACK

Cook Time 25 minutes
Total Time 30 minutes

Ingredients
  

  • 400 g bread slices
  • 4 tbsps oil
  • 1 tsp ginger paste
  • 1 tsp chilli paste
  • ½ to ¾ tsp salt
  • 1 tsp cumin powder
  • 1 tbsp coriander powder
  • ½ tsp turmeric powder
  • ½ tsp red chilli powder

Instructions
 

  • Preheat the oven at 150°C.
  • Cut the slices of bread into small squares.
  • Heat oil in a wide pan or a wok over medium heat.
  • When it is slightly hot, add the ginger and chilli paste and saute for a few seconds.
  • Add the turmeric powder and immediately add the cubes of bread.
  • Add salt and mix well.
  • Spread out the bread cubes in a baking tray.
  • Let it bake in the oven for 20 to 25 minutes or till the bread cubes become crunchy.
  • Mix red chilli, cumin and coriander powders.
  • Sprinkle it over the crispy bread pieces while it is still hot. Mix well.
  • Allow the Vaghareli bread to cool a bit in the tray.
  • Store in an airtight container.

Notes

  • Use spices of your choice. Try crushed kasuri methi, za'atar, paprika, etc.
  • Use different flavored oil or butter. Try it with ghee too, it tastes awesome.  
  • To make cumin powder at home, roast a handful of cumin seeds  over very low heat till they begin to turn a bit brown.. Let it cool down and then grind it into a powder in a coffee grinder. Store in an airtight jar. Add it to  salads, yogurt, lassi, etc.

    Use to be one of my favorites but slowly it got lost. We make similar to this but a bit different called as bread upma, but as you said it needs to be finished on the same day. I liked your idea of toasting it up more and in the oven, so that you can even store it and use as required.
