Peach & Mozzarella Flatbread is a summer time fast appetizer. So easy to make, all you need is some ready made naan, some fresh peaches, mozzarella and an appetizer is ready within 20 minutes. Alternately, enjoy it as a main meal with some salad.

As Sue suggested, this Sunday we’re sharing recipes with peaches to celebrate Peach National Month which is during the month of August. With peaches in full season during summer especially around August, one has to enjoy them to the fullest.

Peaches And Me
Bite into a ripe juicy peach or add it to your oats, smoothies, salads, desserts, main meals, drinks or even as appetizers.Well, that is what most food bloggers would do. To me peaches in season are like mangoes in season in India or Kenya… go wild! Whenever I pick up the large punnet of peaches, hubby always questions “what are we going to do with so many peaches?” My answer always is “eat them!” Not surprising that the peaches we buy don’t land up in any of the dishes as I tend to eat most of them! It was a bit difficult for me to save the two ripe ones for this flatbread recipe. Well, before the season ends hopefully I will have more peach recipes on the blog. If not then you know where they ended up!

Ingredients Required For Peach & Mozzarella Flatbread
Naan
Buy naan from a store nearby you. I like to use the Stonefire or Irresistibles as they are not chewy at all.
Peaches
Ripe but slightly firm peaches . Cut the peaches into halves, remove the stones and slice them. I used one peach for each naan. Depending on the size of the naan and peaches, you may need 2-3 of them.
Mozzarella Cheese
I had mozzarella balls at hand so used them. Go for normal mozzarella cheese. If you get burrata can use that. Or swap the mozzarella with feta, ricotta or brie.
Olive Oil
Need some to brush the naans with.
Balsamic Glaze
To drizzle on top just before serving. I drizzled balsamic glaze on one flatbread and used pesto for the other.
Pesto
To add some just before serving. I added blobs of pesto on one flatbread.
Arugula
Also known as rocket, add some on top before serving.
Basil Leaves
Fresh basil to add some flavour. Or add mint.
Salt
Add according to your taste.
Pepper
Add some crushed black pepper according to your taste.
Chilli Flakes
We added some chilli flakes for a bit of a kick. This is an optional ingredient.





PEACH & MOZZARELLA FLATBREAD
Ingredients
- 2 naan
- 2 big peaches
- 150 g mozzarella cheese
- handful arugula
- 8-10 basil leaves
- 2 tsp olive oil
- 1-2 tbsp balsamic glaze
- 1-2 tbsp pesto
- ½ tsp salt
- ½ tsp black pepper powder
- ¼ tsp chilli flakes
Instructions
- Preheat the oven to 180℃.
- Line a baking tray with some parchment paper.
- Arrange the 2 naans on the tray.
- Cut the mozzarella into chunks and arrange on the 2 naans in a random fashion.
- Cut the peaches into halves. Remove the stones. Slice the peaches.
- Arrange the slices in between the mozzarella pieces.
- Brush the peaches lightly with some olive oil.
- Sprinkle some salt and pepper over the mozzarella and peaches.
- Bake the naan for 12-15 minutes just enough for the cheese to melt a bit.
- Remove the flatbread from the oven.
- I drizzled balsamic glaze on one and added blobs of pesto on the other.
- Use both or either, according to your taste. We love the flavour of both.
- Scatter some basil leaves over the flatbreads.
- Add some arugula, sprinkle some chilli flakes and serve immediately.
- Serve as a starter or as a meal with a salad.
- Serve with some balsamic glaze and pesto on the side.
Notes
- Can add chopped nuts like walnuts or almonds before baking the flatbreads.
- Can grill the peach slices on your grill or a grill pan. Warm the naans, arrange the peaches and serve.
- Add any cheese of your cheese. We sometimes use brie and love it.
- Don't over bake the flatbreads as the cheese will become rubbery.

I too love peaches and can assure you it was so tasty. Try and get burrata.
