Recipe: Caprese Bagel
Caprese Bagel is an easy, delish, fast sandwich made with toasted bagel, herby pesto, creamy mozzarella and juicy tomatoes. One of the easiest sandwiches to assemble especially if you have the pesto ready at hand. My all time favourite sandwich, tastes super duper especially when juicy sweetish tomatoes are season. Summer is the best time to make this sandwich.
Memories
My first ever bite into an authentic caprese sandwich was way back in 2014 at a cafe in Rome. Fresh creamy mozzarella, homemade basil pesto and juicy tomatoes tantalized the taste buds. On returning I made it at home but back then Kenya was not the best place to get authentic mozzarella. Can’t remember which year but got to enjoy it again at Heathrow Airport. I am one of those people who enjoy airport food! Weird??? Though it is quite pricey nowadays I still prefer enjoying a meal at the airport.
In July 2021 when we arrived in Canada, we had stay a few months in an AirBnb before we got our home. Being summer and with a kitchen not too well equipped, sandwiches were an everyday affair. While hubby could enjoy his sandwiches with different meats, I loved my caprese sandwich quite often. The type of bread used varied from baguettes to normal sliced and of course bagel.
Sharing Caprese Bagel Recipe With The Group Sunday Funday
July 26th is National BagelFest in the US. It honours the famous bagel that was introduced to America in the late 19th and early 20th century by the European Jewish immigrants. To celebrate this festival I requested that participants share a bagel recipe or showcasing how they enjoy bagels. I am a big fan of the crispy crust and inner chewy part bagels. The Polish Jewish immigrants introduced bagel on Manhattan’s Lower East Side and in Montreal. Consequently, began the difference in the New York and Montreal Bagels. My all time favourite bakery for bagels is St. Viatuer in Montreal and La Fabrique de Bagels Café Noir in Magog where both places use wood fired ovens. When I get the best bagels around me, why try making them at home!

Ingredients Required For Caprese Bagel
Bagels
For this caprese sandwich use plain, sesame, poppy seed or all dressed bagels. This time round I tried out Kamut Bagels which were less chewier.
Pesto
While the best is basil pesto, feel free to use any of your choice. Try it with Parsley Walnut Pesto .
Mozzarella
For caprese sandwich I prefer buying mozzarella balls. The ready sliced ones don’t taste that good.
Tomatoes
Baby tomatoes, beefsteak, heirloom, Roma. Roasted, sun-dried, or just plain slices. Choose whichever you prefer. I used baby tomatoes this time round as the Kamut bagels are pretty soft. Didn’t want the juice from the bigger tomatoes running into the crumb.
Salt
Sprinkle some according to your taste.
Pepper
Freshly cracked pepper adds so much flavour.
Olive Oil
To drizzle some on top. Use any flavoured or plain olive oil.




CAPRESE BAGEL
Ingredients
- 2 bagels any of your choice
- 100 g bocconcini
- 3-4 tbsp basil pesto
- 12 baby tomatoes halved
- some virgin olive oil
- ¼ tsp salt
- ½ tsp pepper coarsely ground
Instructions
- Cut the baby tomatoes into halves. If using a big tomato cut it into thick slices.
- Slice the mozzarella cheese.
- Slice the bagels into halves, horizontally.
- Toast them according to your preference.
- Smear pesto on all 4 slices.
- Arrange the mozzarella slices on it.
- Add the tomatoes.
- Sprinkle some salt and pepper.
- Drizzle some olive oil over the caprese. I used the oil from the pesto.
- I served it as an open sandwich. If you prefer, serve it as a closed sandwich.
Notes
- use any bagel of your choice.
- Can use any tomatoes of your choice.
- Try roasted or dried tomatoes.
- Can use ready made or homemade pesto.
- Add smoked salmon if you want to.
