Easy to make, its perfect for parties.   Memories The first time I made strawberry mousse was when I was around 18. At that time, with no internet and Google, the only way I could try out new recipes was to follow Tarla Dalal cooking books. Her Strawberry Mousse recipe used strawberry jelly. For some years that’s how I made it. That is till Google came into my life and I started trying out the ‘real’ mousse recipe. What is Mousse? A mousse can be sweet or savory. Vitumbua #BreadBakers From the East Coast of Africa Vitumbua (singular kitumbua) pronounced as vee toom booa are the local answer to pancakes/ doughnuts in East Africa especially in Tanzania and the coastal part of Kenya.Instead of being deep fried, they are made in a special vitumbua griddle/pan. Its similar to the aebleskiver pan or appe pan or paniyaram pan. Vitumbua is a common Tanzanian street food and found during Ramadhan in Mombasa. Its usually served with hot tea as breakfast. Beneath the crust the interior is light and fluffy, melt in the mouth texture. Most of the East African Coast cuisine has been influenced by Indian, Yemeni and Omani culture so perhaps vitumbua too may have been brought here by one of the settlers. The…

  • Vegan Banana Ice Cream

    April 13, 2015mayurisjikoni

RECIPE: VEGAN BANANA ICE CREAM Vegan Banana Ice Cream is so easy to make with over ripe frozen bananas, coconut cream, peanut butter and some nuts. Flavour it with cinnamon powder and you have an instant frozen dessert ready in a jiffy. For a more firmer texture, freeze the ice cream for 30 minutes.   What I Do With Over Ripe Bananas During the hot season bananas tend to ripen very quickly. Often I slice them, arrange them on a tray or plate and freeze them overnight. Next day, I use them or put them in a zip lock bag. Don’t forget to label how many bananas you’ve frozen as it is helpful when you need them for a recipe. Thaw the slices and they…

The main conversation these days where ever you go is the heat. People are getting fed up of the really hot weather and are praying for rain.
