Kenyan Style Masala Chips— yes French fries are called chips in Kenya. No fixed recipe required as such. First you need fried or oven baked French fries. Heat a bit of oil in a wide pan. Add 1/2 tsp cumin seeds. Add chopped onion. Sauté till it becomes soft. Add minced garlic according to your taste. Sauté for a minute. Add chopped green chillis. Add salt, pepper powder, coriander powder and cayenne peppper. Mix well. Add 1 cup thick tomato purée. Mix well. If the sauce or purée is watery allow it to evaporate. Add the chips.
