    healthy option Zucchini, baby marrow or courgettes can be cooked, eaten raw, baked, stir fried or pureed. I previously had tried just zucchini soup and it didn’t turn out that great. The end result was a pale colour soup and hardly any taste. However, next time round added a few more ingredients to make the colour and taste more appealing. The soup turned out just fine. What really beckons us to eat something besides the aroma is the colour. The eyes love what it sees and sends hunger signals to the brain. Anyway hope you like this recipe.     Fresh crunchy juicy cucumbers are a delight to have on its own or in a salad. Cucumbers grown locally in Mombasa seem to have disappeared. The ones from up country are fine but the skin can be a bit tough. Whenever I can, I buy English cucumber from the supermarkets. They rarely are bitter, are nice and juicy and the skin is thin and crunchy too. I used a mandolin (cheeni, slicer) to get thin slices length wise. Then I cut them into thin strips to give the salad a different look.
