• 441. Poppy seeds and sesame seeds crackers

    October 15, 2014mayurisjikoni

First attempt at crackers         Priya challenged the Home Bakers Challenge members to bake crackers. As usual the first few days are spent on deciding which recipe to follow, this one, no that one, try them all! Usually don’t have time to try them all but the recipes keep on piling up in the bookmarked section. I finally decided on the poppy seeds and sesame seeds crackers. After baking them, I was wondering why I have never tried baking crackers before. They are healthier than the normal cookies and loved them. I use to love the dinner crackers made by House of Manji when I was a kid. These days the dinner crackers have no taste and I have stopped buying them.…

  • Apple Dessert Pizza

EVENT: WE KNEAD TO BAKE RECIPE: APPLE DESSERT PIZZA What is an Apple Dessert Pizza? Did you know that tomatoes were brought to Europe around the 16th Century. Before that pizza topping did not include tomato. In fact it was anything from cheese, fruits, pine nuts, raisins to honey. Though not commonly found, dessert pizza do exist and are found in some of the pastry shops in Italy. Over time dessert pizza has evolved to include so many different ingredients that are commonly used for desserts – fruits, nuts, dried fruits, sauces, chocolate, candy, etc. After enjoying a fruity pizza as dessert during our trip to Italy, I had to try out an apple dessert pizza. We stayed at the Grand Dino Hotel in Baveno…

crunch, crunch, munch   Tomorrow I am leaving for Italy… my dream destination. I have always wanted to visit Italy because from what I have read , pictures I have seen and the food, makes Italy seem like a romantic country. Wine, pasta, pizza, caprese salad, gelato, limoncello…. seriously how can one leave that country hungry? Churches, piazzas, gondolas, beautiful beaches, scenic countryside what more is required to feel romantic? Before hubby and I get into that holiday mood and behave like typical tourists, clicking umpteen photos and trying to see every thing and anything, we have to pack, catch a flight, close the house, etc etc. So many minor details to take care of before we can go on a holiday. Have you noticed…

  • 428. savoury rose rolls (eggless)

    August 12, 2014mayurisjikoni

baking and some more baking Just a few days after I had made the pesto braided bread and patted my back 🙂 and Aparna of My Diverse Kitchen comes up with the August We Knead to Bake challenge…. a savoury filled bread and the bread had to be decorative. Couldn’t do the Russian Braid again so the earnest hunt began for a decorative bread. The first place I hunted was my book marked and saved recipes and lo behold came across rose buns to try from Fauzia’s Kitchen Fun. More than the filling what caught my eye was the shape. I searched for other decorative shapes but the rose rolls were stuck in my head. So one more bookmarked recipe or rather technique over and…

Home Bakers Challenge # 1  This is my first entry for the Home Bakers Challenge, a group where enthusiastic home bakers bake every month according to the challenge set. The group was started by Priya of Priya’s Versatile Recipes. This month the recipes were selected by Gayathri a member of the group. She gave a choice of five recipes. I spent nearly a week trying to decide which one to make, sweet or savoury, savoury or sweet. Kept on scrolling down the recipes umpteen of times. Finally decide on a savoury recipe as for the past few weeks I have baked so many sweet treats. I am glad I chose to make the pizza rolls. I decided to make the dough at home and…

  • 424. Eggless Swedish tea ring (Vetekrans)

    July 30, 2014mayurisjikoni

an early Christmas treat!    What is a Swedish tea ring? Its a sweet pastry/ bread traditionally served during Christmas as a tea time treat or for breakfast. Thus the name tea ring. Its very much like the cinnamon buns but this tea ring is shaped into a wreath. The filling can vary from nuts to dried fruits and different spices. When Gayathri the initiator of the Baking Eggless group sent the recipe as the challenge for this month, I took one look at the picture and thought, that it would be complicated. It actually is not and its fun to make different shapes with yeast dough. I will be certainly making this recipe again and again as the tea ring was absolutely delicious. Perhaps…

  • 421. Gibassier

    July 24, 2014mayurisjikoni

J’adore ce pain The July challenge from the we knead to bake group  was Gibassier (pronounced as zee-bah-see-ay). This aromatic, delicious, rich, breakfast bread or pastry hails from the Lourmarin village in the Provence region of France. It is usually flavoured with candied orange peel, orange zest, orange blossom water and anise seeds (fennel seeds). It is brushed with clarified butter and sprinkled with caster sugar. It is believed that the doughnut like bread or pastry got its name from the mountain Le Gibas that can be seen in the horizon of the village. For more information about this delicious bread or cookie as some in France call it visit Aparna’s blog, My Diverse Kitchen. I was doing more research on the bread on the…

  • 420.braided pesto bread

    July 23, 2014mayurisjikoni

aroma therapy   While the bread was baking, the whole house was filled with the aroma of basil. My neighbour smelt basil all the way near the lift of our floor. She came to check what was cooking. Remember in my last post I mentioned that I made some pesto, well I used it to make some delicious bread which I wanted to bake for such a long time. Using biga to make the bread was the other temptation. Using biga makes the bread more flavourful. It gives more strength to weak flour. So the plain flour that we get in Kenya and India is quite weak compared to the ones available in the western countries. Its also amazing how two pinches of yeast can…

Shhhh cooking secretly# 1          I joined this group of enthusiast bloggers just recently. The initiator of this group is Priya of  Priya’s Versatile Recipes. She pairs members each month and they send each other two secret ingredients. We get a month to prepare the dish, be it a sweet or savoury one. The fun part is when fellow bloggers post the picture on the group’s facebook page and we have to try and guess the secret ingredients. Sometimes, the secret ingredients are obvious but most of the time very difficult to guess. The exciting part was waiting for the partner to give you the two ingredients. As soon as I got mine from Sandhya Ramakrishnan, broccoli and barley, the first thing that…

World Cup finals BBC world news   For so many days I had pages open on my ipad researching vegetarian cuisines from Brazil, France, Germany, Costa Rica, Argentina, Netherlands, Belgium, Chile, etc. The search was narrowed down to Brazil, Germany, Netherlands and Argentina.Unfortunately Brazil suffered a humiliating defeat in both the hands of the German and Dutch team. So today the finals will be played between Germany and Argentina. I must admit I didn’t watch the matches from the beginning, I usually wait for the quarter finals to get a bit excited. It has not been easy staying up till late watching football. What got me through, was the anticipation of that one or more goal. The most exciting game has to be the one…
