Chilli and Cheddar Potato Rolls#BreadBakers

Today is Dussehra. What is Dussehra? Dussehra is a festival celebrated by Hindus all over the world. Usually, no Hindu festival is celebrated for just one reason. The word Dussehra comes from the sanskrit word Dasa hara, meaning defeat of Ravan. Ravan was an evil demon King ruling over what is present day Sri Lanka. Ravan was enthralled by Sita’s beauty and wanted her. Sita was married to Lord Ram(the seventh incarnation of Lord Vishnu). Ravan abducted her and took her back to Lanka. Thus began the war between Ram and Ravan. The day Ram killed Ravan is celebrated as Dussehra, signifying victory over evil.
The second reason Dussehra is celebrated is because its on this day Goddess Durga was able to defeat the evil demigod Mahishasura(who wrecked havoc on earth) after fighting with him for nine days and nights.
Dussehra is usually celebrated by burning effigies of Ravan, fire sacrifice(havens) and worshipping Goddess Durga, the all powerful female who can be mild and protective but also fierce and destructive, depending on the situation. Its from Dussehra that stage shows -Ram lila(stories of Ramayan) begin in the northern parts India. For many families its the time to start preparations for Diwali.
Coming to this month’s bread with the Bread Baker’s group, Pavani our host challenged us to bake with Fall fruits or vegetables. Do visit her blog Cook’s Hideout for vegetarian recipes both Indian and western. Kenya and India do not experience Fall season but we do get the usual Fall fruits and vegetables like apples, pears, grapes, potatoes, broccoli, pumpkin, squash etc. Having baked quite a few sweet breads for the past few months, I decided to use potatoes. But frankly was so tempted to use apples. However, potato finally won and I made  chilli and cheddar potato rolls. I’ve baked potato bread before and any bread baked with potato turns out super soft. We enjoyed these ‘hot’ rolls with some hot tomato soup. So here’s the recipe:





8 big buns or 12 small ones or 16 tiny ones

3-3½ cups plain flour(all purpose flour)
1 cup cold mashed potato
1½ tsp sea salt
1 cup warm milk
2 tsp instant active dry yeast
3 tbsp butter, melt it
1 tsp sugar
1 cup grated cheddar
2-3 chopped green chillis

extra flour for dusting
extra melted butter for the top

  1. Mix flour, salt, sugar, yeast and mashed potato.
  2. Add cheddar cheese, melted butter and chopped chillis into the flour. Mix well.
  3. Add warm milk and form a dough.
  4. Sprinkle some extra flour on to the worktop and knead the dough till its smooth. This dough does not have to be kneaded for 10-15 minutes like other bread doughs.
  5. Shape the dough into a big ball.
  6. Grease a big bowl with oil or butter and place the dough in it. Cover and let the dough rise till its double the size. Remember, potato based doughs usually ferment faster than normal bread doughs.
  7. Dust the worktop with flour again. Gently knead the dough. Divide it according to the roll size you want. I wanted to bake them in a round tin so I divided the dough into 8.
  8. Shape the divided parts into balls. Place them on a greased baking tray. Since I used a baking tin, I arranged 7 balls in the tin and baked one separately. For small buns use 2 8″-9″ tins.
  9. Let the rolls rise till they are double the size (20-25 mins).
  10. Preheat the oven to 180°C. Put the tray or tin with the rolls in the oven and bake for 15-20 mins till the tops are golden brown.
  11. Remove the buns from the oven and brush them with melted butter.
  12. Serve with soup, salad or use them as sandwich bread.
  • Let the mashed potato cool down completely. I once made the mistake of adding hot mashed potato to the flour. The dough became too sticky and unmanageable.
  • Add chillis according to your taste and on how hot the chillis are.
  • Add rosemary for added flavour.
  • Sprinkle the tops with sea salt if you like.

    I hope you had a lovely celebration, these rolls certainly sound wonderful. My yoga teacher recently shared some of the info you wrote about and I am intrigued to learn more.
