I love chocolate so any recipe with chocolate catches my eye and I cannot rest in peace till I have tried out the recipe. I tried this recipe out which must have been in my recipe book for eons. After the first time I baked them, I have made many more batches since for friends and relatives and have had a few orders too. I love the fact that in a single bite you can get both the vanilla and chocolate taste or you can choose which part to bite into first, the chocolate or the vanilla. Ok… am getting to the point, don’t be impatient. Today I am going to share with you a recipe for marbled cookies.
MARBLE COOKIES
makes about 35 to 40 cookies
For the vanilla part :
125g soft butter
½ cup powdered sugar
1¼ cups cornflour ( the fine powdery type used for thickening sauces etc)
¾ cup plain flour
1 tsp vanilla extract
For the chocolate part :
125g soft butter
- Put sugar and butter for both parts in 2 separate bowls.
- In two separate bowls sieve together the plain flour and cornflour. For the chocolate part also sieve together the cocoa powder.
- Cream the butter and sugar for both parts using an electric whisk. Add the vanilla extract in both and mix.
- Add the sieved flours in both parts.
- Form a dough. First form the vanilla dough and then the chocolate one.
- Preheat the oven to 180°C.
- Grease 2 baking trays.
- Divide the vanilla dough into about 35 to 40 parts.
- Do the same with the chocolate dough.
- Take one part vanilla dough and roll it into a ball. Take one part of the chocolate dough and roll it into a ball. Gently press both the balls together. Gently roll. You will get one big ball with vanilla and chocolate together. Gently press the big ball between your palm. Place it on the greased tray.
- Repeat with the remaining dough.
- Place the cookies about an inch apart as they will spread a little.
- Bake for 15 to 20 minutes. The vanilla part should not become too brown.
- Remove the tray from the oven. Leave the cookies on the tray for 5 minutes. Remove them from the tray and let the cookies cool on a wire rack.
- Enjoy them with a hot cup of coffee or cold milk.
- If the dough cracks when you roll it, add about a tbsp of milk to it.
- Use the recipe to make only vanilla cookies or only chocolate cookies.
