Allow water to come to a boil. Add washed spinach leaves and tender stalks. Cook till spinach wilts. Don’t overcook. Transfer the spinach to ice cold water and ice cube mixture. Allow it to cool in the iced water for 5 minutes. Transfer to a colander to remove water. Puree in a food processor. Use spinach puree for parathas, curries, sauces, sabjis, snacks, etc.

Iru Puli Kuzhambu is a traditional tangy curry or gravy from the state of Tamil Nadu, India whereby both tamarind and yogurt along with a few spices are used. It is unbelievably tasty, comforting and definitely different from any other curries or gravies that I have tasted. Iru means 2 sources of sourness or tanginess. Puli is tanginess/ sourness.
