One Pot Ravioli Soup is a super easy, loaded with flavours, comforting and filling soup. Add any vegetables and ravioli of your choice. Top it up with some cheese and enjoy a different kind of hot dinner. Pasta and soup all rolled into one.
Please note that the recipe given below serves 4 as a side dish and 2 as a main meal.

I am the host for this weekend and just as well I chose Soups as the theme. A few weeks ago hubby and I cam down with this really nasty flu. It took forever to get over it. Still have that lingering dry cough. When hubby was feeling a bit better he went to the supermarket to pick up essentials. Not that we really felt like eating. But had to nourish our bodies. And soups and khichdi were it for nearly 3 weeks. He bought freshly made ravioli but we both didn’t feel like having ravioli on its own. That is when I decided to make the soup. Hot broth to sip on and nutritious with a few ravioli pieces to bite into. The soup lasted us for 2 days. Yes, on the second day the ravioli was extra soft but who is complaining when the throat hurts.

Do I Need Bread With This Soup?
Not really as it already has the carbs from the pasta. We had the soup on its own. Perhaps a small piece of bread maybe required if you want to wipe the bowl clean. As such no hard and fast rules. Serve some bread on the side if you want to.
Ingredients Required For One Pot Ravioli Soup
Vegetables
Add any vegetables of your choice. I had loads of carrots which I decided to add to the soup. I would have added mushrooms but I didn’t have any. Go ahead and add any veggies of your choice.
Tomato Puree
Can make fresh tomato puree or use canned tomatoes. I used passata which I had at hand.
Onion
Peel and dice a medium onion. Basically any onion of your choice, red, white or yellow. I had red onions which I used.
Garlic
Peel and mince the garlic. I used about 1 tablespoonful.
Herbs
Add fresh herbs like oregano, basil or dried. I used Mixed Italian Seasoning that I got as a Christmas present.
Vegetable Stock | Broth
I have this vegetarian stock powder which I get from the Farmers’ Market whenever I can. I add that to the water. Use ready made stock, homemade or stock cubes.
Baby Spinach
Chop roughly or add whole leaves at the end when the soup is ready. If you don’t get baby spinach, use the normal one but chop it up roughly.
Ravioli
Any ravioli of your choice, fresh or frozen. I used ricotta and spinach ravioli which is my favourite. We need about 200-225g of ravioli.
Olive Oil
Need some for cooking the onion and garlic.
Parmesan Cheese
Or any cheese of your choice, to add on top.
Fresh Cream
Add some fresh cream to make the tomato broth a bit more creamy. Also helps to balance the tangy flavour from the tomatoes.
Salt
Add according to your taste.
Black Pepper
Add freshly cracked black pepper.
Red Chilli Flakes
Add some for flavour and heat. This is an optional ingredient.

ONE POT RAVIOLI SOUP
Ingredients
- 1 cup onion finely diced
- 1 tbsp garlic minced
- 2 tbsp olive oil
- 1 cup carrots peeled and diced
- 2 cups tomato puree
- 3 cup broth or stock of your choice
- 1 tsp dried herbs or Italian Seasoning
- 200 g ravioli fresh or frozen
- 2 cups baby spinach roughly chopped
- ¾ tsp salt
- ½ tsp black pepper freshly cracked
- ½ tsp red chilli flakes optional
- ¼ cup fresh cream
- ¼ cup parmesan grated
Instructions
- Place a large saucepan over medium heat.
- Add olive oil and allow it to become a bit hot.
- Add the diced onion. Sauté till it appears soft and transculent.
- Add the minced garlic and stir fry for till it appears light pink.
- Add the diced carrots. If using other vegetables, add at this stage.
- Mix well.
- Lower the heat. Cover the pan. Allow the carrots to cook for 3-4 minutes.
- In between stir so that the carrots do not stick to the pan.
- Add the herbs or seasoning. Add salt. Also add the tomato puree and stock or broth.
- Increase the heat to medium and bring the mixture to a gentle simmer.
- Cover the pan again and allow the carrots to cook till done.
- Once the carrots are done, add the ravioli.
- I allowed the ravioli to cook for 5-7 minutes as indicated on the packet.
- Make sure it is not at a rolling boil Allow the soup to simmer over low to medium heat.
- When the ravioli is cooked, turn off the heat.
- Add the spinach, cream and pepper. Mix well.
- Ladle the soup into serving bowls.
- Garnish with some parmesan cheese, shaved or grated and the red chilli flakes.
Notes
- Add vegetables of your choice.
- To make it protein rich add minced meat, cooked meat.
- It is best to use good quality tomatoes, fresh, canned or passata.
- Use fresh or frozen ravioli.
- Add cheese of your choice. Tastes good with cheddar cheese.
