We’re almost reaching the end of this challenge, just 3 more to go and the year ends. But, I think a new challenge will be decided for 2025. For this one, I had planned to redo an old recipe, Watermelon Bruschetta. However, as easy as the recipe is, the right time or moment didn’t come up. With all the travelling I have been doing! I almost missed out on letter W. I prepared these Walnut Chocolate Tartlets for Diwali. When I told hubby I have not prepared my dish for letter W, smart and observant that he is, stated ” I thought those walnut things are for the blog!” I had a duh moment. But of course, W for walnuts. Phew!!!
Not too many options when it comes to W. We have watermelon, waffles, white chocolate, walnuts, wheat, wontons, white beans, whiskey, wine, white gourd.

Schezwan Sauce is readily available in all the stores but I like to make my own. Firstly, I can control the spice level and secondly because it is free from chemical preservatives and artificial flavours.

To make it protein rich I like to add cooked chickpeas,beans or paneer. Today I am sharing a recipe where besides a mixture of vegetables I have added cooked chickpeas.
Vegetable Cutlets is a popular deep fried snack in India. It is usually made of cooked and mashed vegetables with some spices. The mixture is shaped into discs or heart shapes, coated with breadcrumbs and fried. It is usually served with some chutney and /or tomato ketchup. To make the vegetable cutlets more healthier I opted to air fry them and love the extra crispy coating without it being too oily.
Ingredients Required For Walnut Chocolate Tartlets
Walnuts
We need walnuts that are toasted. Either toast them in a wide pan over low heat for 2-3 minutes or in the microwave oven as I do. Toast them for 2 minutes or less.
Dark Chocolate
Use 70%-80% dark chocolate for healthier walnut chocolate tartlets. If you making them for kids go ahead and use milk chocolate. I melted the chocolate in the microwave oven for 1 minute.
Dates
Soft dates are best for this recipe as they will not only add natural sweetness but also act as a binding agent.
Peanut Butter
I like to use natural peanut butter without any sugar or added oil. The natural peanut butter I use has natural peanut oil therefore no addition coconut oil or melted butter is required.
Desiccated Coconut
Optional. Add if you want to. I have used unsweetened desiccated coconut.
Melted Butter | Coconut Oil
Need it only if the mixture is too dry and you cannot shape it. I didn’t need to add any as there was some natural oil from the peanut butter.
