Turkish Fig Pudding also known as Incir Uyutmasi is an easy to make, delectable, melt in the mouth, luscious pudding that can be enjoyed for breakfast or as dessert. Basically you need only 2 main ingredients, dried figs and milk. This dessert is sugar free and excellent indulgence for diabetics. This Turkish Fig Pudding is a traditional recipe, that probably comes way back from the Ottoman Empire times. Incir Uyutmasi translates as ‘sleeping figs’ as the figs are allowed to ‘sleep’ in the milk overnight. In reality, the figs help to ferment the milk to make a yogurt like consistency.
Trail And Error
The first time I made the pudding it did not set at all. The pudding became thick because of the figs and was edible. That is because it is winter and the kitchen is not warm enough. So the second time round, I warmed up the oven to a temperature of 150°C and switched off. I allowed the pudding to sit in the warm oven for 6 hours. Then I allowed it to chill in the fridge overnight.

Ingredients Required For Turkish Fig Pudding
What Kind Of Figs To Use?
Don’t use the dark brown more dry figs. Best ones to use are the golden variety which are not hard. The figs are soaked in hot water for 30-60 minutes to soften them.
What Type Of Milk To Use?
For that creamy luscious texture it is best to use full fat dairy milk. As I didn’t have that at hand, I added a bit of fresh cream to the milk. I took 450ml milk and 50ml fresh whipping cream. The milk has to be warm enough about 25°C. Raw milk should be heated to almost boiling point and then allowed to cool till it reaches 25°C. Or when you insert your pinky finger in the milk, you can leave it there comfortably for a few seconds.
What Flavours To Add?
Can add cinnamon or cardamom powder. If you prefer, don’t add any flavours. The flavours from the figs is good enough.
Water
Some hot water is required to soak the figs in.

Walnuts
While you can serve the pudding without any topping, adding a bit of crunch would make it more exotic. I added some roasted chopped walnuts. You can opt for almonds or pistachios.
Maple Syrup |Honey | Grape Molasses
Generally, the pudding is not too sweet and the sweetness from the figs is enough. However, if you want the pudding a wee bit sweeter then drizzle some honey or maple syrup on top just before serving. I used some maple syrup as I don’t have grape molasses.

TURKISH FIG PUDDING | INCIR UYUTMASI
Ingredients
- 125 g dried golden figs
- 500 ml full fat milk
- ½ tsp cardamom powder
- 40 g walnuts roasted
- 2-4 tbsp honey, maple syrup or grape molasses
Instructions
- Wash the figs. Cut the figs into halves or quarters.
- Put them in a bowl. Add enough hot water to soak the figs.
- Cover the bowl and allow the figs to soak for at least 30 minutes.
- Don't add too much water. Even if some water is left, don't throw it away. Add it to your smoothie as it is naturally sweet.
- Remove the figs from the water. Pat them dry with a kitchen towel. Remove the stems.
- Preheat the oven to 150℃. As soon as it reaches the required temperature, switch the oven off.
- If your place is hot, then you don't need to put the pudding in the oven to ferment. Leaving it at room temperature is enough.
- Warm the milk to 25-30℃ or till you can comfortably leave your pinky finger in the milk for 30-60 secs.
- Transfer the figs to a blender jug. Add just enough milk so you can puree the figs.
- Add the cardamom powder or any flavouring you are using.
- Puree the figs to a smooth paste.
- Add the puree to the warm milk.
- Mix well.
- Divide the pudding between 4 small bowls, glasses or cups.
- Cover the bowls, glasses or cups with foil or cling film.
- Put them in the switched off but warm oven. Remember we are not baking them. It is to provide a warm environment so that the milk can ferment.
- Allow the milk to ferment for 4-6 hours.
- After that put the pudding in the fridge to chilli for at least 3-4 hours or preferably overnight.
- The texture of the pudding should be like set yogurt.
- Roast the walnuts in a pan or in the microwave oven for 2 minutes.
- Roughly chop them and add as topping on the Turkish Fig Pudding.
- Drizzle some grape molasses, maple syrup or honey over the nuts and enjoy.
Notes
- use soft dried golden figs.
- make sure the milk is warm enough.
- use full fat milk or add some fresh cream to it as I did.
- Add topping of your choice, almonds, pistachios, fresh figs,etc
- Drizzling the pudding with honey, maple syrup or grapes molasses is optional.
- A warm place is required to ferment the milk.

Thanks Lisa. We love it as it has no added sugar. The sweetness is from the dried figs. Adding maple syrup or honey is just to give it more flavour and extra sweetness.

I’m definitely going to have to remember to pick up some figs the next time I’m at the market because this sounds fantastic. A fun recipe to play around with by adding different spices and toppings.

Thanks Jolene, usually honey is drizzled over it but I love the flavour of maple syrup. I’d got the opportunity to see how tree tapping is done in 2021.
