Toast the walnuts in a wide pan over low heat for 2-3 minutes or in the microwave oven for 2 minutes.
Allow the walnuts to cool down a bit.
In the meantime, pit the dates. Remove the seeds.
Transfer the walnuts to a food processor. Process till they are roughly chopped.
Add the pitted dates and peanut butter.
Process till the mixture comes together as a paste.
Transfer the mixture to a plate or bowl.
Add the desiccated coconut if you are using any. Mix well.
If the mixture appears a bit dry add some melted butter or coconut oil and mix well. I didn't need to use any.
Take about ½ tablespoonful of the walnut date paste and roll it into a ball.
Use a silicon mini muffin cup to shape the ball into a mini tartlet.
Alternately use the back of a scoop spoon to shape the mixture into a cup or tartlet.
Add the chocolate chips into a microwave safe bowl.
Melt the chocolate for 50-60 seconds. Mix well. If need be microwave it for another 10 seconds.
Using a small spoon. fill the tartlets with the melted chocolate.
Rest the walnut chocolate tartlets in the fridge for 10 minutes before serving.
Can add some sprinkles or chopped pistachio on top if you want to.
