Half the year is over, imagine, time is flying by so fast. Too much happening around the world but daily life continues for all. We’re on letter O which brings with it quite a few options. Oven baked, octopus, oranges, oats, orzo, onion, okra, olives, oil, etc. For me, the tussle was between orzo and orange. The supermarket near me ran out of orzo and didn’t want to walk too far to look for it in the other supermarkets. It is a good 45 min to the other supermarkets. And we’ve been in Magog for 4 years now and we still don’t own a car. We walk to almost all the places. If there is no pavement to that place then we need to take a taxi which is rarely. Oranges it was and I don’t regret making the salad for lunch as it was perfect for the hot days we’re experiencing.

Choose oranges that are succulent. Always pick oranges that are heavier and have a smoothish skin. Before cutting the orange make sure you get the zest as we will adding that to the dressing. Also need some orange juice for the dressing.
Avocado
I have used 2 small avocados. Add according to your preference.
Salad Leaves
Any salad leaves of your choice. I usually add about 3-4 cup full of leaves.
Fresh Basil
A few leaves add so much flavour to the salad. I have also made this salad with mint leaves and it tastes equally good.
Onion
My preference is the red one, thinly sliced. However, you may use any – yellow, white or red. I like to marinate the onion slices in a bit of lemon juice for 15-20 minutes, before adding to the salad.
Lemon Juice
We need some to marinate the onion slices and add some to the cut avocado so that it doesn’t turn brown or black.
Feta
I like the slightly salty taste with any citrus food. Therefore, opted to use Greek Feta. Can replace the feta with grilled halloumi or cheese curds.
Almond Slices
You may add chopped almonds. I had some almond slices in my pantry and opted to use those. Replace the almond with pecans or walnuts. If using whole nuts, it is best to toast them a bit in a pan over low to medium heat or in the microwave oven for 1-2 minutes.
For The Orange Salad Dressing
Olive Oil
Try and use good quality olive oil for flavour.
Fresh Orange Juice & Zest
We need both for the dressing
Dijon Mustard
Adds flavour.
Maple Syrup | Honey
Use either.
Salt
Add according to your taste.
Black Pepper
Freshly cracked always adds so much flavour.
Black Poppy Seeds
An optional ingredient.
ORANGE AVOCADO SALAD

Orange Avocado Salad is a colourful, refreshing, full of flavour kind of summer salad. Enjoy it as side or as a light meal. What I like about this salad is the delicious light orange dressing. And you can add other salad ingredients like radish, beans, quinoa, orzo, rice, etc. Somehow I felt that oranges and tomatoes don't go together well.
Peel and slice an onion thinly. You need about ¼ cup slices.
Add 1 tbsp lemon juice and allow the onion slices to marinate for 15-20 minutes.
Zest the orange. I usually freeze any extra zest to use in cakes, cookies and salad.
Remove the remaining white skin or pith.
Remove the orange segments from the thin skin.
Peel and slice or dice the avocados. Add 1 tbsp lemon juice and toss the avocado pieces.
Finely chop the basil leaves.
Either crumble or dice the feta cheese.
Arrange the salad leaves in a large or two individual plates.
Arrange orange, avocado and onion slices on the salad leaves.
Scatter the feta cheese over the salad.
Sprinkle with almond slices.
PREPARATION OF ORANGE POPPY SEED DRESSING
Add olive oil, orange juice, orange zest, dijon mustard, salt, pepper, poppy seeds, maple syrup or honey in a jar or a cup.
If you are using a cup, whisk the dressing till it appears creamy.
if you are using a jar, close the lid tightly and give it a good shake. Make sure the lid is tightly screwed on.
The dressing should become creamy.
SERVE THE SALAD
Pour the dressing over the salad and enjoy.
Notes
Add nuts of your choice like walnuts, pecans, etc. Toast them lightly in a pan over low heat or in the microwave oven for 1-2 minutes. Chop them roughly.
Replace the feta with a cheese of your preference. I like to use grilled halloumi or cheese curd.
