Orange Avocado Salad is a colourful, refreshing, full of flavour kind of summer salad. Enjoy it as side or as a light meal. What I like about this salad is the delicious light orange dressing. And you can add other salad ingredients like radish, beans, quinoa, orzo, rice, etc. Somehow I felt that oranges and tomatoes don't go together well.
Peel and slice an onion thinly. You need about ¼ cup slices.
Add 1 tbsp lemon juice and allow the onion slices to marinate for 15-20 minutes.
Zest the orange. I usually freeze any extra zest to use in cakes, cookies and salad.
Remove the remaining white skin or pith.
Remove the orange segments from the thin skin.
Peel and slice or dice the avocados. Add 1 tbsp lemon juice and toss the avocado pieces.
Finely chop the basil leaves.
Either crumble or dice the feta cheese.
Arrange the salad leaves in a large or two individual plates.
Arrange orange, avocado and onion slices on the salad leaves.
Scatter the feta cheese over the salad.
Sprinkle with almond slices.
PREPARATION OF ORANGE POPPY SEED DRESSING
Add olive oil, orange juice, orange zest, dijon mustard, salt, pepper, poppy seeds, maple syrup or honey in a jar or a cup.
If you are using a cup, whisk the dressing till it appears creamy.
if you are using a jar, close the lid tightly and give it a good shake. Make sure the lid is tightly screwed on.
The dressing should become creamy.
SERVE THE SALAD
Pour the dressing over the salad and enjoy.
Notes
Add nuts of your choice like walnuts, pecans, etc. Toast them lightly in a pan over low heat or in the microwave oven for 1-2 minutes. Chop them roughly.
Replace the feta with a cheese of your preference. I like to use grilled halloumi or cheese curd.
