TANDOORI CAULIFLOWER STEAKS

Tandoori Cauliflower Steaks are not only healthy but so flavourful and not too difficult to make. Generally tandoori cauliflower is deep fried. However, it can easily be prepared without deep frying. Bake them in a tandoor or oven.

Ingredients
  

  • 2 cauliflower steaks, approx 430g in total 1 inch thick
  • ½ cup plain yogurt thick
  • 1 tbsp chickpea flour
  • 1 tbsp semolina |rice flour
  • ½ tsp turmeric powder
  • ½ tsp Kashmiri chilli powder
  • 1 tsp tandoori spice mixture
  • 1 tbsp kasuri methi
  • 1 tsp jaggery powder | brown sugar optional
  • 1 tsp salt
  • 1 tbsp oil
  • 1 tbsp lemon juice
  • 1 tsp garlic minced
  • 1 tsp ginger minced
  • 1 tsp green chilli minced
  • 1 tsp oil for greasing
  • 1 tbsp fresh coriander chopped

Instructions
 

GET CAULIFLOWER STEAKS READY

  • Take a medium or large cauliflower. Remove all the leaves.
  • Trim the stem. Place the cauliflower on a chopping board with stem down.
  • Using a sharp knife, cut the cauliflower into half.
  • From each half, with the stem still down, cut 1 inch thick slice of the cauliflower.
  • Repeat with the other half.
  • The remaining cauliflower can be used for another recipe.
  • Wash or soak the 2 cauliflower steaks well to remove any worms or insects.
  • Pat dry the steaks with a kitchen towel to remove excess water.

PREPARE THE MARINADE

  • Add yogurt in a mixing bowl.
  • Add chickpea flour and semolina or rice flour.
  • Add turmeric, chilli powders. Add the tandoori spice blend.
  • Add the minced ginger, garlic and green chillis.
  • Crush the kasuri methi between your palms and add to the yogurt.
  • Add salt, jaggery, 1 tbsp oil and lemon juice.
  • Mix the marinade well.

MARINATE THE CAULIFLOWER STEAKS

  • Line a baking tray with some parchment paper.
  • Brush the paper with 1 tsp oil.
  • Arrange the two cauliflower steaks in the tray.
  • Brush marinade on both the slices. Use up about ¾ of the marinade. As you apply it, it will find its way to the spaces in between.
  • Allow the steaks to marinate for 30 minutes. If preparing later put it in the fridge.

ROASTING | BAKING THE CAULIFLOWER STEAKS

  • Preheat the oven to 180℃.
  • Bake the cauliflower steaks for 20 minutes.
  • Remove the tray from the oven after 20 minutes.
  • Flip the steaks over. Brush the remaining marinade between the two steaks.
  • Return the tray in the oven and bake for 15-20 minutes.
  • Prick the cauliflower steak with a fork. It should go in easily. Here we are not over cooking the cauliflower.
  • For a bit charred look you can broil the steaks on high for 3-5 minutes.
  • Sprinkle some chopped coriander and serve immediately with some salad or with your main dish.

Notes

  • Use medium or large cauliflower. I used a large cauliflower. The total weight of the two slices was 430g.
  • Add spices of your choice.
  • If you want  more crispy cauliflower steaks add more oil to the marinade. I used less to make it a healthy meal.
  • Make sure the plain yogurt is thick.
