Recipe: Bean Burgers

These Bean burgers with some Tex Mex flavours are so hearty, filling, flavourful and healthy too. You can bake, pan fry or grill the bean patties. Enjoy them with buns or simply with a salad and guacamole. After trying out this simple bean burger recipe you’ll stop buying those flavourless frozen ones.

Memories

The first time I ever had bean burgers was at Burger King in London years ago. Back then when McDonald’s didn’t offer vegetarian option besides french fries and apple pie, Burger King offered bean burgers. The bean burgers were made from red kidney beans and some veggies. Though not that flavourful, it was fun going there just because they offered a veg option.

When I went back home, tried making my own version of bean burgers. Instantly it was a hit  with my kids. Saturdays became  Burger Day for a very long time. It was either bean burgers or chickpea burgers. Back then quinoa was an exotic ingredient so I used potato or cooked barnyard millet. I had the opportunity to use fresh red kidney beans as they grow in abundance in Kenya. Salad was always there as that was a great way to get my kids to have some. Sometimes I would serve it with mashed avocado, other times with homemade Ketchup Sauce. Yes, when they were young, I’ve made umpteen bottles of ketchup at home.

I first posted this recipe on my blog on 15/06/2012 with one horrible photo. Back then didn’t really understand how to take better photos. But now I am trying and find taking photos of certain foods more tougher than others. Burgers is one of them. However, I thought of updating this post with the new photos. If ever I am able to take better ones, I will surely share them here. Updated post 17/05/2024.

Ingredients Required For Bean Burgers

Kidney Beans

Use canned or dried beans. If you are using dried kidney beans or rajma then soak them overnight in warm water. Next day drain out the water and wash the beans. Cook the beans with enough water and little salt in a pressure cooker, Instant Pot or in a saucepan. Usually 3 whistles is enough for the pressure cooker. When using the IP I set it on pressure cook, 5 minutes. If you cook the beans in a saucepan it will take longer.If you don’t have red beans, you can easily replace them with black or white beans.

Onion

Use red, white or yellow onion. We need to chop some finely for the patties and the guacamole. The rest can be sliced or cut into rings.

Tomato

We need some finely chopped for the guacamole. We need tomato slices for the burger.

Beetroot

I add some grated beetroot as it gives the patties a lovely red colour. Can replace it with carrots if you wish.

Jalapeno

Finely chopped for the patties and some for the guacamole.

Garlic

Peeled and minced for the patties.

Salt

Need salt of your choice for the patties and the guacamole. Adjust according to your taste.

Black Pepper Powder

Add some to the patties and some to the guacamole.

Cooked Rice

I generally use up leftover rice. You can easily replace the rice with cooked quinoa, millet, mashed potato or sweet potato.

Chickpea Flour

I roast the chickpea flour lightly in a pan till I get aroma. If you don’t want to use chickpea flour, replace it with bread crumbs or cornstarch.

Lemon Or Lime Juice

We need some to add to the patties and the guacamole. I don’t go in a frenzy if I don’t have lime. Lemon juice tastes equally good in a guacamole.

Taco | Fajita Seasoning

I have this aromatic taco seasoning that I bought from a Farmer’s Market. So I use it mostly for all my TexMex recipes. If you don’t have any, add some cumin, coriander, paprika and red chilli powders.

Coriander | Cilantro

Fresh coriander or cilantro, chop some with the tender stalks too. Will be adding some to the patties and also the guacamole.

Oil

Any oil of your choice. Need some to lightly pan fry the patties. You can also opt to bake them or cook them on the grill.

Avocado

Use 1 medium or 2 small avocados. Cut the avocado into half, remove the seed and scoop out the flesh into a bowl.

Salad Leaves

Any salad leaves of your choice.

Burger Buns

Use any of your choice. I like to use the Ozery brand sandwich buns. This way you have a burger that is less ‘bready’ and more of the pattis.

Cheese

Opt for cheddar or Montrey Jack cheese.

Ingredients
  

FOR THE BEAN PATTIES

  • 2 cups red kidney beans cooked
  • ¼ cup onion finely chopped
  • 1 jalapeno finely chopped
  • 1-2 tbsp lemon | lime juice
  • 1 tbsp garlic minced
  • 1 tsp taco seasoning
  • ¾ cup rice cooked
  • ¼ cup fresh coriander chopped
  • ½ cup beetroot grated
  • 2-3 tbsp chickpea flour
  • 1 tsp smoked paprika optional
  • ½ tsp pepper powder
  • 3-4 tbsp oil

FOR THE GUACAMOLE:

  • 1 medium avocado
  • ½ tsp salt
  • ¼ cup tomato finely chopped
  • ¼ cup fresh coriander chopped
  • 2 tbsp onion finely chopped
  • 1-2 tbsp lemon |lime juice
  • ¼ tsp pepper powder
  • ½ -1 jalapeno finely chopped

FOR THE BEAN BURGERS

  • 6 Burger Buns
  • 2 cups salad leaves of your choice
  • Some onion slices
  • Some tomato slices
  • 6 slices cheddar cheese

Instructions
 

PREPARATION OF THE BEAN PATTIES

  • Make sure that the cooked or tinned beans are not wet, pat them dry with a kitchen towel.
  • Mash the beans lightly.
  • Add the chopped onion, cooked rice, grated beetroot, salt, pepper, coriander, jalapeno, garlic, taco seasoning, lemon juice and paprika.
  • Also add chickpea flour and mix well.
  • Divide the mixture into 6 parts.
  • Shape each part into a round pattie. Make sure it is the size of the buns you are going to use.
  • Leave the patties in the fridge for 1 hour or overnight.
  • Heat some oil in a skillet or frying pan over medium heat.
  • Cook the patties on both sides till they are golden brown.
  • Each side may take about 4-5 minutes.
  • Keep the bean patties on a kitchen towel till required.

PREPARATION OF GUACAMOLE

  • Cut the avocado into half. Remove the seed.
  • Scoop out the pulp into a mixing bowl.
  • Mash it lightly with a fork.
  • Add the chopped onion, tomato, coriander, lemon juice, jalapeno, salt and pepper.
  • Mix well.

PREPARATION OF BEAN BURGER

  • Lightly toast the buns. I skipped the butter as we will be using guacamole.
  • On one half of the bun spread some guacamole.
  • Add some salad leaves.
  • Place the cooked bean patti.
  • Top with sliced tomatoes, onion and cheddar cheese slice.
  • Cover with the other part of the bun.
  • Serve immediately.

Notes

Add grated carrot instead of beetroot.
Can replace the cooked rice with mashed potato.
Add seasoning and flavouring of your choice.
Can use breadcrumbs or corn starch instead of chickpea flour.

    What a perfect burger this turned out to be. I had some leftover rice and kidney beans and was wondering what to do. I made these burgers and it turned out super good. My kids loved it. Thanks for the recipe.
