Recipe: Avocado Egg Salad Cups
This Avocado Egg Salad Cups is not your usual avocado and egg salad. First of all, no mayonnaise is used. Instead, I have used yogurt. Secondly, I have added some a topping of walnuts, cranberries, pomegranate, pumpkin seeds and fresh parsley. Lastly, this salad is served in individual bowls or cups making it an ideal starter for any party. Easy to make, protein rich and so flavourful, enjoy Avocado Egg Salad as a light meal or as a side dish. You can replace the yogurt with some mayonnaise if you wish. I’m not a big fan of mayonnaise so don’t use it that often.

For the 2025 Alphabet Challenge, created by Wendy, I have decided to share salads recipes from A-Z. We are now on letter E. I had two options for a salad, eggplant or eggs. When given a choice I choose eggs any day especially boiled. I love Avocado Egg Sandwich so decided to use the combination for my salad recipe. It was suppose to be a simple avocado egg salad with yogurt. However, the recipe changed a bit as I wanted to serve it for our Christmas cum Hubby’s birthday Party. So the simple salad had to be a bit more festive. Added a festive topping and served it in individual cups. With letter E we have eggs eggplants, edamame, endive, espresso, escargot, elderberry, enchiladas, edam, enoki mushrooms,eggnog, etc.
E is for Eggs.

Ingredients Required For Avocado Egg Salad Cups
Avocado
Need one medium avocado. Cut into half, remove the stone and peel. Cut the avocado into cubes. Immediately add about 1 tbsp lemon juice so that the avocado does not turn black.
Eggs
2 large eggs, hard boiled. Peel and cut into cubes.
Tomato
Need about ½ cup diced tomatoes. I used two Roma tomatoes. I did not remove the pulp.
Onion
Peel and finely chop any onion of your choice. I used red onion.
Cucumber
Use English or Persian Cucumber as the skin is thin and does not have hard seeds. Dice a small cucumber. We need about ½ cup.
Greek Yogurt
One cup plain Greek Yogurt is what is required. If you don’t have Greek Yogurt, then add about 1½ cups plain yogurt in a muslin or cotton cloth which is draped over a colander. Cover the yogurt with the edges of the cloth. Place a steel lid or plate over the cloth. Put something heavy on top of the plate or lid. This will help all the water or whey to come out from the yogurt. Leave it for 10-15 minutes.
Lemon Juice
About 2 tbsp of fresh lemon juice. 1 tbsp will be drizzled over the chopped avocado. The remaining will be added to the yogurt dressing.
Honey
Add 1-2 tsp honey to the dressing. Can replace it with maple syrup or agave syrup.
Olive Oil
Any good quality olive oil as we need to add 1 tbsp in the Yogurt Dressing.
Chilli Flakes
Add about ½ tsp dried chilli flakes to add a bit of heat.
Salt
Use any salt of your choice. I used sea salt for this recipe.
Garlic
I clove of garlic, peeled and minced to add to the dressing.
Pomegranate
About 2 tbsp pomegranate arils for topping. If you don’t get any then use grapes or strawberries.
Parsley
Finely chopped parsley either the flat or curly one.
Walnuts
Need about 10-12 walnuts for the topping. Lightly toast the walnuts in a pan for 2-3 minutes over low heat.
Dried Cranberries
About 2 tbsp for the topping.
Pumpkin Seeds
2 tbsp seeds is enough. Can replace pumpkin seeds with sunflower, flax or sesame seeds. Lightly toast the seeds in a pan for 2-3 minutes over low heat.
Sumac
Optional. To sprinkle some on top.




AVOCADO EGG SALAD CUPS
Ingredients
FOR THE AVOCADO EGG SALAD
- 1 medium avocado
- 1 tbsp lemon juice
- 2 large eggs boiled
- ½ cup tomatoes diced
- ½ cup cucumber diced
- ¼ cup onion finely chopped
- ½ tsp salt
FOR THE GREEK YOGURT DRESSING
- 1 cup Greek Yogurt plain
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1-2 tsp honey
- 1 clove garlic minced
- ½ tsp red chilli flakes
- ½ tsp salt
FOR THE TOPPING
- 10-12 walnuts lightly toasted
- 2 tbsp pumpkin seeds lightly toasted
- 2 tbsp dried cranberries
- 2 tbsp parsley chopped
- 2 tbsp pomegranate arils
- 1 tsp sumac optional
Instructions
PREPARATION OF THE AVOCADO EGG SALAD
- Boil the eggs till done.
- Add the cooked eggs to some cold water in a bowl.
- Peel the eggs and cut into pieces that are not too small or big.
- Cut the avocado into half. Remove the stone.
- Cut the avocado into small pieces. Immediately drizzle 1 tbsp lemon juice over it and mix gently.
- Add the avocado to the chopped eggs.
- Dice 1-2 tomatoes. Add to the avocado egg mixture.
- Dice a small cucumber and add to the salad.
- Peel and cut a small onion finely. Add to the salad.
- Add salt. Mix the salad gently.
PREPARATION OF GREEK YOGURT DRESSING
- Add the yogurt in a mixing bowl.
- Add the olive oil, lemon juice, minced garlic, chilli flakes, honey and salt.
- Whisk gently till it becomes smooth.
PREPARATION OF THE TOPPING
- Chop the parsley finely.
- Chop the walnuts, pumpkin seeds and cranberries roughly.
- Mix the above mixture, parsley and pomegranates in a mixing bowl.
HOW TO SERVE AVOCADO EGG SALAD
- Divide the avocado egg salad equally into four parts.
- Spoon it into individual bowls or cups.
- Add the Greek Yogurt Dressing on the salad.
- Finally top the dressing with a nice layer of the topping of chopped walnuts, seeds, cranberries, pomegranate and parsley.
- Sprinkle some sumac over the topping.
- Can leave the salad cups in the fridge to chill for about 1-2 hours before serving.
Notes
- Can mix the salad, dressing and topping all in one big bowl. Enjoy it as a light meal.
- Can replace the walnuts with any other nuts of your choice.
- Replace the pumpkin seeds with sunflower, sesame or flax seeds. Roast the seeds lightly.
- Add any other salad ingredients of your choice.
- Replace the yogurt dressing with mayonnaise.

I have those cups and never thought about using them for a layered salad. I also happen to have a newly ripened avocado. Serendipity! This sounds super nutritious too with all of those toppings.

That dressing sounds incredible! I have the hardest time getting an avocado that is ripe when I need it, I usually cheat and buy the mashed stuff by the deli counter.
