What Are Lentils?
Sometimes referred to as pulses, it is a plant known as legume. They are flattish almost like lens in shape. The most common types of lentils are brown, green and the red ones which are mostly sold in the split form. The others are sold whole. What makes them a popular ingredient for rice, soup and salad dishes is that the lentils cook pretty fast compared to other legumes. Commonly known as masoor dal in Hindi, both the whole and split ones are used widely for various dishes in the Indian Sub Continent.

Baked Lentil Kebabs
Baked Lentil Kebabs with flavours from the Middle East and the Indian Sub Continent are soft, delectable and easy to make. In brief, these kebabs make a wonderful starter and are easy to make. Also nutritious and best part is that they are gluten free and vegan. Serve them with any chutney or dip of your choice.
Mujaddara is an inexpensive, gluten free, vegan, healthy, flavorful and filling main dish. The main flavour of this rice dish comes from the caramelized onions. It is usually served with a salad and some yogurt, hummus or tahini sauce.
Spinach Masoor Dal or Spinch Puy Lentil Curry is a wholesome, healthy, easy to prepare, creamy, with flavors of spinach and coconut. Best enjoyed with some plain rice or any Indian Flatbread.
Sharing This Recipe With 2024 Alphabet Challenge Group
As we steadily sail through the journey of cooking alphabetically, we’ve reached Letter L. Almost halfway but not yet. With letter L the choice of ingredients beginning with L or dish names with L are plenty. It was a bit difficult for me to decide on which recipe to make. However, my endeavour to make a conscious effort to include more plant based proteins beckoned me to share a lentil recipe. I have to make a whole lifestyle change if I want to be healthy and strong for a longer time. Eating healthy is one of them besides including exercise in my daily routine. Truthfully, I do get a bit lazy when it comes to the latter. But slow and steady, as this is not a crash diet course.
The Alphabet Challenge So Far
AMARANTH PARATHA | RAJGIRA PARATHA
Amaranth Paratha is gluten free, vegan, soft, tasty and healthy flatbread. Pretty easy to make, it is a good way to include amaranth in your diet. Known as rajgira paratha in Hindi, these parathas can be enjoyed during fasting days like Ekadashi, Navratri, Ram Navmi, etc.
Beetroot Tomato Soup is a comforting, easy to make and healthy soup. With some warm spices, it is perfect for the cold season. With the weather so unpredictable at the moment, snow, rain, wind chills, storms, etc soups are so comforting and definitely warm up the body and soul.
Cranberry Achar or Cranberry Pickle is an easy to make, tangy, spicy, delicious pickle that comes together in a matter of a few minutes. However, you will have to wait for a few days before you can enjoy the pickle.Enjoy the pickle or achar with your parathas, rice dishes or add a bit to your sandwich. What I love about this pickle is the natural tanginess from the fresh cranberries.
Dangella | Tawa Handvo is a traditional Gujarati recipe where the handvo batter is cooked on a tawa instead of baking it. It is a Gujarati style savoury pancake. Above all, it is a delicious and healthy breakfast, tea time snack or a light dinner or lunch meal. The advantage of making Dangella or Tawa Handvo is that you can add a lot of vegetables.
Egg Pulao is a one pot, delicious, filling pilaf dish that is made with long grain rice, eggs and spices. It is a versatile recipe as one can choose to add vegetables and spices of their choice. We enjoy egg pulao as a meal on its own with some raita and papad on the side. However you can easily serve it with any curry your choice.
Turkish Fig Pudding also known as Incir Uyutmasi is an easy to make, delectable, melt in the mouth, luscious pudding that can be enjoyed for breakfast or as dessert. Basically you need only 2 main ingredients, dried figs and milk. This dessert is sugar free and excellent indulgence for diabetics.
Guacamole Salad is an easy to make, delicious, healthy salad that has all the components of guacamole. Enjoy it as a side dish with your Mexican food or as a light meal option. Best part is that you can customize this salad to your liking.
Panna Cotta With Hibiscus Berry Sauce is an exquisite, creamy dessert. The Hibiscus Berry Sauce adds a little tartness to the panna cotta. Easy to make and am sure it will be a show stopper at your next party.
Iceberg Wedge Salad is a delicious, healthy way to enjoy crisp and crunchy lettuce. The classic wedge salad has a topping of bacon crumbles, onion and tomatoes with a generous drizzle of blue cheese dressing. My version of the Iceberg Wedge Salad is different- a vegetarian one.
Jeera Bhaat | Jeera Rice is full of flavour, aromatic, easy to make, fluffy rice. It is usually served with dals or curries. Rice in Gujarati or Maharashtrian language is called Bhaat, while in Hindi it is chawal. Jeera is cumin, and thus a generous amount of cumin seeds are added along with other spices to make this popular rice dish.
Khamang Kakdi is an easy, delicious, cooling and refreshing Maharashtrian style cucumber salad or side dish. It is generally served as part of a thali meal. Also known as Kakdi Koshimbir, just a few ingredients put together results in a healthy and tasty side dish. Personally, I enjoy a whole bowlful of it on its own as a snack or light lunch. Khamang in Marathi means delicious, tasty and well balanced. Which undoubtedly this salad recipe is. Kakdi is cucumber.
I love the fact that a lot of veggies are used, olives and olive oil. And best part, it allows me to use my favourite feta, mozzarella and halloumi cheeses. Different grains are included in the recipes, giving one all 3 – Carbs, Protein and healthy Fats.

LAKNAVI KOFTA CURRY
Laknavi Kofta Curry is fried potato and greens dumplings in a rich creamy sauce that is made using yogurt, milk and cream. This delicious, flavourful, creamy curry is quite different from the usual tomato onion based sauces or curries. Laknavi refers to Lucknow.
Vegetarian Lasagna Soup tastes like lasagna with all that tomato sauce, veggies and cheese but so much easier than making lasagna. Every time I make baked lasagna I always get leftover with a couple of sheets or the broken sheets. This soup is so easy to make, super delicious, awesomely comforting during the cold season and hearty.
Malagasy Lasopy is simply a pureed vegetable soup. It is usually served with a condiment called sakay and some baguette on the side. Any fresh seasonal vegetables and meat bones are all added in the pot with a generous amount of water. My recipe omits the meat bones.
Ladi Pav | Indian Bread Rolls are homemade, soft, pillowy, buttery eggless rolls that are commonly served with certain types of street food. Easy to make, these slightly sweetish and golden pav are perfect for pav bhaji, vada pav, egg bun, maska buns and dabeli.
Gur Na Ladwa /Churma Laddoo is a common sweet made during Diwali by most Patel homes. Made from wheat flour, ghee, milk with spices and nuts added to the mixture. These delectable, melt in the mouth laddoos are made either with jaggery or sugar.
Lemon Linguine or classic Italian linguine al limone is one of the easiest, most flavourful pasta dish that comes together in 10 minutes. All you need is some pasta, lemon, good quality parmesan cheese, salt, garlic and a bit of pepper.
Lemon rice or Chitranna as it is known in Kannada, is the easiest but yummiest rice dish. With spices and lemon, this spicy tangy rice is best enjoyed with some some rice papad. Makes an excellent lunchbox or travel food option as it tastes equally good whether hot or cold. The other good thing about this rice dish it that you can use leftover plain rice.
Lemon Yogurt Cake - Eggless is so easy to make, moist with a soft crumb and refreshingly delicious. Slightly tangy, the addition of black poppy seeds adds a delightful texture to the overall flavour.
Light and airy with citrusy fragrance, floral taste and little bits of crunch, these lemon and lavender scones are easy to make. They make a perfect breakfast, teatime or picnic treat.
Ingredients Required For Mediterranean Lentil Salad
Lentils
I have used brown lentils that are sold in most supermarkets. It is best to soak any type of legumes before cooking them. This includes lentils though they cook fast. Soaking legumes removes phytic acid and enzyme inhibitors. This makes the legumes more digestible and also prevents flatulence and bloating. Also cooking time reduces when you allow legumes to soak. Generally, I allow lentils to soak for 30 minutes in warm water. Add the soaked lentils into a pan with enough water. Allow them to cook till done. Keep an eye as you don’t want mushy lentils. Usually 10-15 minutes is enough. Remember once the lentils are soaked and cooked they will be about one cup full.
Beetroot
Roast, steam or boil the beetroot. Peel and cut into small cubes.
Onion
Use any onion of your choice, red, yellow or white. I have used red onion. Peel and chop the onion finely.
Spring Onion
As I had some in my fridge, I used spring onion. It adds a slightly pungent taste to the salad.
Olives
Use olives of your choice.
Bell Pepper
Use any colour. Dice the bell pepper.
Cucumber
I prefer to use Persian or English Cucumber as they do not need to be peeled and also the seeds are tiny and super soft. If the cucumber you use has a hardy skin then peel it. Dice the cucumber.
Tomatoes
Can use any tomato but I prefer the baby ones. Cut into halves.
Mint
Fresh Mint adds is so aromatic and adds a refreshing taste to the salad.
Parsley
Can use flat or curly. I prefer flat as it tends to be much tender.
Feta
Crumbled or cut into small pieces.
Olive Oil
Use the best quality you can afford.
Vinegar
Use good quality vinegar like balsamic, apple cider or red/white wine vinegar. I used a raspberry vinegar which I had got from the Farmer’s Market in Magog.
Garlic
Peel and mince 1 small clove of garlic.
Salt
Add salt according to your taste. Use any salt of your choice. We will be adding some when cooking the lentils and some in the dressing.
Pepper
Freshly cracked black pepper adds so much flavour to the salad. So would highly recommend that.
Sumac
I used a bit of sumac to prepare the dressing. As the raspberry vinegar is not so tangy, sumac added the right amount of tartness. Sumac or summaq is a dark red astringent powder that comes from berry fruit of the Rhus Coriaria shrub. If you don’t have sumac it with some lemon juice.
Other options are za’atar, oregano.
Honey | Maple Syrup
Or any sweetener of your choice. I didn’t add any as the sweetness comes from the beetroot. Add if you want to.
Water
Warm water to soak the lentils. More water, about 2 cups for cooking the lentils.

Ingredients
FOR THE SALAD
½cuplentilsuncooked
2cups water
½tspsalt
¼cuponion finely chopped
¼cupolives,sliced or choppedapprox. 8 large ones
1cupbaby tomatoescut into halves
½cupbell pepperchopped
1cupcucumberdiced
⅓cupfeta, approx 60gcubes or crumbled
¼cupcooked beetrootapprox 65g
¼cupmint leaves
¼cupparsleychopped
¼cupspring onionchopped
FOR THE SALAD DRESSING:
2tbspolive oil
1-2tbspvinegar
1clovegarlicpeeled and minced
½tspsalt
¼tspblack pepper powder
1tspsumac
1tbsphoney or maple syrupoptional
Instructions
COOK THE LENTILS
Soak the lentils in enough warm water for at least 20-30 minutes.
Drain out the water from the lentils using a sieve.
Wash the lentils.
Add about 2 cups water in a saucepan.
Add the soaked and washed lentils.
Add about ½ tsp salt.
Allow the lentil water mixture to come to a boil over medium heat.
After 5 minutes check if the lentils are cooked. Make sure you don't over cook them. Mine took 10 minutes.
Drain out the water and spread out the lentils on a plate to cool.
Don't throw the water away. Use it up when you prepare some soup, dal or curry.
PREPARATION OF THE SALAD
Cut the tomatoes, cucumber, herbs, beetroot, onion. I prefer to cut into small dice size pieces for this salad.
Add all the salad ingredients, including the lentils in a mixing bowl.
Mix or toss the salad.
PREPARE THE SALAD DRESSING
Add all the salad dressing ingredients in a cup, bowl or jar.
Whisk the dressing till it appears creamy.
If you are using a jar, close the lid tightly and give the jar a good shake.
TO SERVE
if you are serving this salad for lunch, divide it between two serving plates.
Drizzle with some of the salad dressing and enjoy.
If you're serving it as a side dish, for a party or enjoying it for a picnic, add the dressing just before serving and mix well.
Notes
Add vegetables of your choice like red radish, carrot, broccoli, cauliflower, etc.
If you don't have sumac, add some lemon juice and lemon zest.
Add herbs of your choice.
I have used less olive oil as I prepared the salad as a weight loss diet plan recipe. You can add more olive oil if you want to.
If you are preparing the salad as a part of a weight loss diet plan, make sure you use the correct quantities of the ingredients. Don't be tempted to add more oil or cheese.
