Grilled Halloumi Salad is a colourful, healthy and filling Mediterranean inspired salad. Some grilled halloumi , salad leaves, vegetables and some cooked grain with a homemade dressing is perfect as a summer or light meal salad. What I like about this salad is that you can add veggies, salad leaves, fruits, herbs and dressing of your choice. The star of this salad is the grilled halloumi. And I like mine with a generous amount of cheese. For this salad I went for a homemade Blackberry Salad Dressing.
What Is Halloumi?
Halloumi is a semi hard, unripened cheese made from sheep and goat or cow’s milk. This cheese originates from Cyprus. The firm squeaky cheese retains its texture when grilled or fried. The mild tangy slightly feta taste makes it a popular cheese to snack on, add to salads and sandwiches.
Halloumi And Me
I tasted halloumi cheese many years ago when I visited London. Back then halloumi was not even heard of in the regular cooking of most Kenyan homes. My sister in law being a foodie like me, had picked up the free halloumi sandwich recipe card from Sainsbury. Saturday brunch for quite a while was halloumi sandwich for us.
In Quebec, curd cheese tends to be more popular and I use that regularly for snacking or to add to sandwiches and salads. Once while I was browsing through the cheese section at my local supermarket, saw halloumi and bought it. A bit pricey but hey, I rather sacrifice a packet of chips for this authentic Greek cheese.
Sharing Grilled Halloumi Salad Recipe With 2025 Alphabet Challenge Group
When I was planning out the types of salads to share for the Alphabet Challenge, I knew I would be using halloumi. Whenever I go to a Greek restaurant my meal choice is Grilled Halloumi Salad or Watermelon Feta Salad whenever veggie options are limited. And I tend to make it the salad often during the summer season.
H is for honey, ham, horseradish, hazelnut, herbs, hummus, honeydew, hamburger, haddock, hakka noodles, haricot, etc. For this challenge my
H ingredient is Halloumi.

Ingredients Required For Grilled Halloumi Salad
Please note that the quantities of veggies you use can vary according to your choice. The quantities given in the recipe is just a guideline.
Grain
Any grain of your of your choice. It can be bulgur wheat, couscous, quinoa, farro, orzo, barley, rice, buckwheat, etc. I had some coarse bulgur wheat which I have used for this recipe. The medium coarse bulgur which I used had to be cooked for 10-15 minutes unlike the fine bulgur which requires no cooking. We need to add hot water to fine bulgur, allow it to sit for a while and fluff it up.
Halloumi Cheese
Buy authentic halloumi cheese. Easily available in most supermarkets or Greek stores. We are going to slice the cheese and grill it in a pan using some olive oil.
Salad Leaves
Any salad leaves of your choice. I had some romaine salad which I used up. Sometimes I add mixed salad leaves or only arugula.
Tomatoes
Can use baby tomatoes or Roma tomatoes chopped.
Cucumber
I prefer to use Persian or English cucumber as the skin is soft and has hardly any seeds. If the cucumber has seeds they tend to be small and soft.
Spring Onion
Wash and pat dry the spring onions. Trim the ends. Chop both the green and white part. We need about ½ cup of chopped spring onion. If you don’t have spring onion, finely dice a small red, yellow or white onion and add to the salad.
Radish
I like to add red radish to my salads whenever possible. Trim the ends and slice the radishes.
Beetroot
Can add cooked or raw beetroot. I tend to have cooked beetroot in the fridge so used that. One small or medium beet is enough.
Bell Pepper
Any colour of your choice. Cut into cubes. I have used half a bell pepper.
Fruit
I like to add peaches, grapes or pomegranate. Depends on what is available.This is an optional ingredient.
Fresh Herbs
My choice of herbs was dill. Can add fresh mint, oregano, parsley etc.
Olive Oil
Need some for the dressing and also for grilling the halloumi cheese.
Lemon Juice
Best to use fresh lemon juice for the dressing. If you want can replace it with balsamic vinegar or any other vinegar of your choice.
Salt
To add to the dressing
Pepper
Coarsely ground for the dressing. Add according to your taste.
Nuts
Toasted nuts of your choice. I used pine nuts which I toasted lightly in a pan.
Blackberries
For the Salad Dressing. Can use frozen or fresh. I used about ½ berries which I cooked in about ¼ cup water till they become soft. Mash the berries lightly. Add about 2-3 tbsp honey or maple syrup depending on how sweet the berries are. Allow the cooked blackberries to cool down before preparing the dressing. You can opt to make a Lemon Vinaigrette for this salad. If you have ready made blackberry sauce, you can use that.




GRILLED HALLOUMI SALAD AND BLACKBERRY SALAD DRESSING
Ingredients
FOR THE SALAD
- 200 g halloumi cheese
- 1 tbsp olive oil
- ½ cup coarse bulgur wheat
- 1 cup water
- ¼ tsp salt
- ½ cup medium coarse bulgur wheat
- 1 cup cucumber slices
- 10 baby tomatoes halved
- 1 small beetroot cubes cooked
- ½ bell pepper cubed
- 4-5 red radishes sliced
- ¼ cup pomegranate arils
- ½ cup spring onion chopped
- ¼ cup fresh dill finely chopped
- some salad leaves
- ¼ cup pine nuts toasted
FOR THE BLACKBERRY SALAD DRESSING
- 2 tbsp olive oil
- ¼ cup blackberry sauce
- 2 tbsp lemon juice
- ½ tsp black pepper coarsely ground
- ½ tsp salt
Instructions
COOK THE BULGUR WHEAT
- As I have used coarse bulgur wheat it needs to be cooked. If you use fine bulgur wheat then you don't need to cook it. Add hot water to it and allow it to rest according to the instructions on the packet.
- Add 1 cup of water in a saucepan. Heat it over medium till it begins to boil.
- Add ½ tsp salt and the ½ cup coarse bulgur.
- Allow the bulgur to simmer for 12-15 minutes till it becomes soft.
- Transfer the cooked bulgur to a plate and allow it to cool. If there is any water left then drain it out using a sieve or colander.
GRILL THE HALLOUMI CHEESE
- Cut the halloumi cheese into about ¼ inch thick slices.
- Heat 1 tbsp olive oil in a wide pan.
- Arrange the halloumi cheese slices in the pan. Lower the heat to medium.
- Grill the cheese till it becomes light golden brown.
- Flip the slices over and allow the other side to become golden brown.
- Remove the grilled slices onto a plate lined with a kitchen towel.
- Keep on the side till required.
TOAST THE PINE NUTS
- Wipe the pan with a kitchen towel.
- Add the pine nuts to the pan which is over low heat. Keep stirring them so that the pine nuts do not burn.
- Toast till they begin to turn light golden brown.
- Transfer the pine nuts from the pan to a plate. Allow them to cool.
PREPARE THE BLACKBERRY SALAD DRESSING
- Add the olive oil, lemon juice, salt, pepper in a cup or jar. Whisk or shake to mix.
- Add the blackberry sauce and whisk well. Adjust seasoning according to your taste.
- Please note that my blackberry sauce already contains maple syrup so I didn't add any extra sweetener.
- If you want to prepare the sauce take about ½ cup blackberries fresh or frozen. Add ¼ cup water and cook till the blackberries become soft. Mash a bit. Add about 2 tbsp honey or maple syrup and mix well.
PREPARATION OF THE SALAD
- Add the cooked bulgur wheat in a mixing bowl.
- Add the cucumber, radish, pomegranate, bell pepper, spring onion, beetroot, dill and tomatoes. Mix well.
- Add the toasted pine nuts and grilled halloumi cheese. Mix well.
- Add the blackberry salad dressing and mix well. Alternately, serve the dressing on the side.
Notes
- Add salad vegetables of your choice.
- Add salad leaves of your choice.
- Can serve the salad with Lemon Vinaigrette.
- Add the dressing just before serving.
- This is a grilled halloumi salad, so no there is no substitute for it.
