Summer Avocado Salad is an easy, healthy, filling, nutritious salad. With two summer fruits, avocado and juicy fresh tomatoes, I like to enjoy this salad as a light meal. Add some roasted nuts and seeds and in no time a delicious summery salad is ready. As a matter of fact, I love both avocado and tomatoes a lot so they tend to find their way into most of my salad recipes.

What Type Of Salad Dressing To Use?
Well, any of your choice. Use ready made ones or make the dressing at home. It is very easy to make vinaigrette. For this summer avocado salad I like to pair it with a Creamy Lemon Dressing.

Ingredients Required For Summer Avocado Salad & Creamy Lemon Dressing
Avocado – ripe but not too soft. Peel, remove the stone/seed and cut the avocado into cubes or slices.
Baby Tomatoes – use any you get. Can also use regular tomatoes. Just chop them into small pieces.
Salad Leaves – add any of your choice. I got a mixed salad leaves.
Olives – add any of your choice, black, green, kalamata, etc.
Nuts – add nuts of your choice like walnuts, cashew nuts, almonds, pecans or mixed. Roast them lightly in a pan, oven or in the microwave oven. If you want to roast them in the oven then preheat the oven to 180C. Spread the nuts out on a baking sheet. Bake for 5 minutes. Bigger nuts may take about 7 minutes. I usually toast/roast them when I finish baking. Once the nuts cool down I store them in an airtight jar. To roast them in the microwave it usually takes about 2-3 minutes on high setting.
Seeds – any seeds of your choice. I like to roast/toast them lightly in a pan. For this recipe I have used sunflower seeds.
Onion – use any of your choice, red, yellow or white. I have used red. Peel and slice or chop a small onion.
Olive Oil – best to use good quality olive oil for the salad dressing.
Lemon Juice – I prefer to use freshly squeezed whenever possible.
Lemon Zest – why waste that lovely aromatic, flavourful rind! Just grate it and add to the dressing.
Sour Cream – it adds creaminess to the dressing.
Salt – add according to your taste.
Pepper – coarsely ground or powder. Add according to your taste. I have a tendency to add a bit more.
Parsley – I have used parsley but feel free to use any fresh herb of your choice.
Honey/ Maple Syrup – add according to your taste.

Summer Avocado Salad is an easy, healthy, filling, nutritious salad. With two summer fruits, avocado and juicy fresh tomatoes, I like to enjoy this salad as a light meal. I add some roasted nuts and seeds and in no time a delicious summery salad is ready.
Roast the nuts you use in a pan over low heat. Or in the microwave oven for 2-3 minutes. Alternately, roast them in a preheated oven for 5 minutes. Preheat the oven to 180°C.
Roast the seeds in a pan over low heat, stirring all the time. Usually takes about 3-5 minutes depending on the seeds you use. Alternately toast them in the microwave oven for 1-2 minutes.
PREPARE THE CREAMY LEMON DRESSING
Add all the dressing ingredients in a bowl or a jar.
Whisk it well if you've added them to a bowl.
If you're using a jar, close the jar lid tightly and then give it a good shake.
PREPARE THE SUMMER AVOCADO SALAD
Wash and pat dry the salad leaves.
Layer them on a serving plate.
Cut the avocados into halves. Remove the stone/seed.
Using a knife make lines to cut the avocados into cubes. Or remove the peel and cut into slices.
Add it to the salad leaves.
Cut the baby tomatoes into halves. Add to the avocados.
Peel and chop the onion into slices or finely.
Add the olives either whole or sliced.
Add the roasted nuts and seeds.
Add the creamy lemon dressing and serve.
Notes
Add nuts of your choice. Walnuts, almonds, cashew nuts, pecans, etc. Or use a mixture of nuts.
Add seeds of your choice.
Use fresh herb of your choice like cilantro, mint, basil, oregano, thyme, etc.
If you don't have baby tomatoes, then use regular tomatoes. Cut them into bite size pieces.
