Rosolli, Finnish Salad is usually prepared during Christmas time. It is made of beetroot, apple, carrot, potato and onion. The dressing is fresh cream. Trust me this salad has become one of my favourite. We enjoyed as a light meal. A balance of flavours and different textures. Softness from the boiled potatoes, crunch from the carrot and beetroot, crispiness from the onion and apples. A symphony for the tongue… if there is something like that!
You may find recipes on the internet using sour cream, mayonnaise, cream cheese as the dressing but the traditional way to go is fresh whipping or double cream. Trust me it tastes simply awesome. The other addition is any pickled vegetable | vegetables. I’m not a pickled veggie person so wanted to omit it. However, hubby insisted that I try adding a bit. Nope didn’t use pickled gherkins but chose capers.

Imagine we’ve already reached the letter R. I feel time is flying. Didn’t I post a salad recipe a few days ago? Where ingredients are concerned R is for roti, rhubarb, red onion, raspberry, radish, raisins, red cabbage, rice, ragi, etc. Initial plan was to make a red cabbage salad. However, more research on the internet took me to Rosolli. And I am so glad that I made this Finnish Salad.

RAGDA PATTIS
Ragda Pattis is a popular street food from the states of Gujarat and Maharastra. Dried peas curry is poured over potato pattis, topped with some chutneys, sev and chopped onion. Usually served hot, it is a filling, healthy and delicious dish. I usually make it not as a snack but for dinner. This dish is also served in many fast food restaurants.
Restaurant style, vegetarian Mexican Style Rice, loaded with vegetables. Homemade is million times better as you can add a variety of veggies and its so flavourful.
Jeera Bhaat | Jeera Rice is full of flavour, aromatic, easy to make, fluffy rice. It is usually served with dals or curries. Rice in Gujarati or Maharashtrian language is called Bhaat, while in Hindi it is chawal. Jeera is cumin, and thus a generous amount of cumin seeds are added along with other spices to make this popular rice dish.
Makki Di Roti is a traditional gluten free flatbread from the state of Punjab. It is made from simple ingredients namely, cornmeal, salt, water and oil. Some make the flatbread plain, others add carom seeds, fresh fenugreek leaves or grated radish.
Ragi Shavige Uppitu is a healthy, vegan, delicious breakfast or lunch box meal made from ragi vermicelli and vegetables. Also known as ragi semiya, ragi semiya upma or simply ragi vermicelli. Ragi is finger millet. Ragi vermicelli is widely used especially in South India as a breakfast or snack ingredient. Add vegetables and make an upma, add it to idlis, make kheer.
Ragi Rotti is a delicious, easy to make, gluten free and vegan flatbread. While I love to have it with some pickle and plain yogurt, one can enjoy it some sambar, lentil curry or vegetable stew. Enjoy it hot for breakfast or as a part of your main meal. Makes an ideal lunchbox item as cold ragi rotti tastes equally good.
Raspberry Mousse is so light, fluffy and easy to make. Super delicious, it is gelatin and agar agar free. Perfect gluten free dessert to enjoy and did I mention quick to put together.
Raspberry Lemon Pound Cake is a light but moist cake with a soft crumb. The lemon flavour, fresh raspberries and sour cream makes this cake a perfect summer time dessert. Enjoy it on its own, with some whipped cream or Greek Yogurt.
Ugandan Rolex has nothing to do with the famous watch brand Rolex. On the contrary it is a popular street food in Uganda which has a vegetable loaded omelette rolled up in a chapati or flatbread. The word rolex comes from rolled eggs. Enjoy Ugandan Rolex for breakfast, dinner, lunch or even as a snack.
Roasted Tomato & Ricotta Toast is warm toast slathered with ricotta cheese and topped with garlicky roasted tomatoes. Perfectly enjoyable as breakfast, or served with some soup as a light meal option.

Nectarine Quinoa Salad is a gluten free, vegan, colourful, bright, packed with flavours and textures kind of summery salad. With a homemade fresh ginger salad dressing, this is one salad you don't want to miss out on.
Either boil the beetroot whole and then peel and cut into small cubes or peel and cut the raw beetroot and then boil. Allow the cooked beetroot to cool down. If you prefer you can use pickled beetroot.
Potato
I prefer to peel and cut the raw potato into small cubes and then boil it till it is done. That way I don’t land up over cooking the potato. Feel free to use whichever method of cooking the potato you prefer. Allow the potato cubes to cool down.
Carrot
Peel and cut the carrot into small cubes. Add to some water and boil till done. Allow the carrot cubes to cool down.
Apple
I have used red apple for the salad. I didn’t remove the skin as I had bought organic apples. Remove the peel if it appears too waxy.
Onion
For this salad generally red onion is used. Peel and dice a small onion.
Vegetable Pickle
Use any vegetable pickle of your choice. Pickled gherkins, cucumber, zucchini, green beans, mixed, etc. I used capers as I am not a big fan of pickled veggies.
Pickle Liquid | Brine
Add a little to the salad for flavour.
Salt
Add according to your taste.
Pepper
Freshly cracked black pepper. We need about ½ tsp. Or add according to your taste.
Fresh Cream
For this salad I have used whipping cream.
Vinegar
Use cider or balsamic vinegar.
Sugar
An optional ingredient. I didn’t add any as for us the sweetness from the beetroot, potato, carrot and apple was enough.
