Peach Baked Oatmeal loaded with fresh juicy peach, flavoured with cinnamon and vanilla extract makes a perfect refined sugar free breakfast or brunch treat. And the best part is that you can make it for one or for a crowd. Did I mention that it is so easy to make this baked oatmeal? I enjoy it with a dollop of Greek Yogurt. Keeps me full for a long time.

Since we have moved to Canada, peaches has become what mangoes was for us in Kenya. Always look forward to the peach season and make the most till it lasts. Absolutely love them. This year it appears that the peaches are on steroids – they are huge! While the season lasts, a peach a day is the norm.
A Bit About Peach Baked Oatmeal
Hubby was not too keen on having warm oatmeal especially since it was pretty hot and humid a couple of days ago. So I decided to tweak the recipe and made it into a one serving meal. I used maple syrup instead of sugar. As the peaches were sweet, this option worked well for me. I could have added some nuts… perhaps walnuts. Oh well, maybe next time. As the peach slices get cooked they taste so much more juicier and sweeter. For a richer oatmeal you can easily substitute the milk with some fresh cream. And trust me it tastes really good with some plain Greek Yogurt. Double, triple the recipe for a larger quantity. My recommendation is to make individual servings if possible. Looks so much cuter.

Ingredients Required For Peach Baked Oatmeal
Peaches
Need 1 large ripe peach for this recipe. Cut the peach into slices. Save a couple of slices for the topping.
Oats
I like to use rolled oats or old fashioned oats as opposed to the quick oats for this recipe. Quick oats become a bit too soggy.
Egg
I have used one large egg.
Milk
Normal 2% or 3% milk. Can substitute it with oat, almond milk if you want to but don’t see the point as this recipe is not vegan.
Butter
Need some for that buttery flavour and also to grease the baking ware.
Maple Syrup
I love adding maple syrup or honey. Can use brown sugar instead. The amount required will depend on how sweet the peaches are and on how sweet you would like the baked oatmeal.
Cinnamon
Adds some flavour. Can also add a bit of nutmeg and clove powder along with the cinnamon. Or add any other spice blend like pumpkin pie, apple pies spice mixtures.
Salt
Just a little bit and it brings out the flavours of all the ingredients.
Vanilla Extract
Adds another level of flavour. I try and use the best quality. However, when I run out of it I do occasionally use vanilla essence.

PEACH BAKED OATMEAL
Ingredients
- 1 large peach ripe
- ¼ cup oats, old fashioned
- 1 tbsp butter divided
- 1 large egg
- ¼ cup milk
- 1-2 tbsp maple syrup | honey
- ¼ tsp cinnamon powder
- ⅛ tsp salt
- ¼ tsp vanilla extract
- some peach slices for topping
Instructions
- Preheat the oven to 180℃.
- Take a single serve bakeware or dish. I have used a 13oz (4.5" square one). Can use any you have or use a foil one.
- Apply half of the butter on the base and the sides of the dish.
- Slice the peach. Leave a couple of slices for the topping.
- Melt the remaining butter. I put the bowl containing the butter in hot water. It melts the butter within 2 minutes or less. I usually use a steel one.
- Mix the oats, cinnamon powder and salt in one bowl.
- In another bowl or a jug add milk, egg, vanilla extract, maple syrup and melted butter.
- Whisk it to mix.
- Layer the peach slices in the buttered dish.
- Sprinkle the oat mix over the peach slices.
- Pour in the egg mixture.
- Put the dish in the preheated oven.
- Allow the oatmeal to bake for 30-35 minutes.
- Insert a toothpick in the middle of the baked oatmeal. It should come out almost clean if it is baked well.
- Add the peach slices you saved for the topping.
- Add a dollop of Greek Yogurt or whipped cream and enjoy.
Notes
- Can replace peach with any other fruit of your choice.
- Add spices of your choice.
- Can add some protein powder to make it a protein rich breakfast.
- Double or triple the recipe for larger servings.
- Can drizzle more maple syrup or honey before serving.
