  • Iced Chai Saffron Latte

    July 16, 2018mayurisjikoni

EVENT: FOODIEMONDAY/BLOGHOP THEME: TYPES OF TEA RECIPE: ICED CHAI SAFFRON LATTE Iced Chai Saffron Latte is a spicy, flavourful, cooling tea drink that is ideal to beat the summer heat. Enjoy it with some whipped cream or without it. What Is Tea? Tea is the young leaves and buds picked from an evergreen shrub called camellia sinensis. All the different kinds of teas we know come from a specific species of camellia sinensis. Where Does Originate From? There are so many varieties of tea out there that it gets really confusing which one is the best. I say the one that you like, is the best. In fact, tea in many countries is a serious affair. Actually, Tea originates from Southwest China where is…

EVENT: FOODIEMONDAY/BLOGHOP THEME: #152 ASIAN CUISINE When Amrita who blogs at The Food Samaritan suggested Asian cuisine, we immediately knew that she wanted to challenge us to some south East Asian cooking and not the Sub Continent cuisine we all are so comfortable with. I jumped for joy as I immediately knew what I wanted to make. I had been eyeing the rice paper ever since I had seen it at the supermarket in Montreal. Its ingredients like these that excite me the most as I don’t get them back home in Mombasa. So when did I see them? Last year! When did I get a chance to use them? For the #152nd FoodieMonday theme, all thanks to Amrita. Yesterday hubby, my son, his girlfriend…

  • Corn Cornbread

    July 2, 2018mayurisjikoni

EVENT: FOODIEMONDAY/BLOGHOP THEME: #151 CORN The whole of today was spent indoor as right now Montreal is going through a heatwave. We thought that the night time would be cooler so went for a long walk with hubby. However, the heat was unbearable. The last time I experienced a blast of hot air like this was years ago when I first went to Amdavad before I joined school in Mt.Abu. Mombasa is a hot and humid place but we don’t get dry hot air. Tomorrow too is going to be hot and people have been advised to drink lots of water. Luckily the football matches for the World Cup are going on so for better half of the day watched the matches. I cannot sit…

  • Mixed Vegetable Curry

    June 25, 2018mayurisjikoni

EVENT: FOODIEMONDAY/BLOGHOP THEME: #150 – VEGGIES WITH ONE TSP OIL Sujata who blogs at Batter up with Sujata suggested that we make a veggie dish with just 1 tsp oil. I thought “ok that’s not difficult,” as most of the daily sabji, shaak or curry I make hardly has any oil in it unless I need to stir fry onions or roast some kind of flour to thicken the gravy. But the catch 22 was I couldn’t prepare it before I travelled as I didn’t want to buy any vegetables and I knew I would not be able to get all the ingredients I need here in Montreal. However, still managed a simple curry, so easy to make and hardly took 10-15 minutes to make.…

EVENT: FOODIEMONDAY/BLOGHOP THEME: #149 SALAD Now that all the Eid festivities are over, its time to get back to some healthy food. Though we don’t as per say celebrate Eid, we just can’t help gorging on the goodies that Muslim friends send home. Usually its sweet stuff and a taste here and a taste there and before you know it, sweets are eaten after lunch and dinner. I don’t know whether its just me or does it happen to all of you, let go off  a regular diet and meal plan for a couple of days and I feel like I’ve added a ton of weight! Today, I just had to tell my maid to take all the sweets (mithai).. no more temptation. I’m probably…

  • Mango Marble Mini Bundt Cakes

    June 4, 2018mayurisjikoni

When one looks at suggestions for snacks that are about 100 calories per serving, mangoes are never mentioned. There is a misconception that mangoes are fattening. One cup of mango is only 100 calories, 83% of its weight is water. It is packed with Vitamin A, D, C, antioxidants and is full of healthy fiber. Mangoes were grown in India over 4000 years ago. It is believed that the Buddhists took mangoes on their voyages to other lands. By the 10th Century mangoes had reached East Africa and Middle East. Mango design or paisley is featured in textile designs for centuries. Mangoes come in small, medium and large sizes, can vary in shape too and may be either yellow, orange or red in colour and…

  • Bread Rolls

    May 28, 2018mayurisjikoni

EVENT: FOODIEMONDAY/BLOGHOP  THEME:146TH BREAD RECIPES Breads have become such an important part of our daily diet, be it for breakfast with some butter, jam, eggs, as a sandwich for lunch, with our soups and sometimes some curries. As a snack we enjoy freshly baked rolls, buns, or snacks made out of bread. Bread is a versatile food. There have been several controversies out there indicating that bread is bad for health. I guess its only bad if you’re overeating. A couple of slices is fine. Today’s theme chosen by Kriti who blogs at Krispy Kadhai, is bread. Sometimes I like how members think. So Priya asked as to whether we have to bake a bread or make anything using bread? So that opened up a…

  • Orange Saffron Semolina Cake

    May 21, 2018mayurisjikoni

RECIPE: ORANGE SAFFRON SEMOLINA CAKE  Orange Saffron Semolina Cake is a soft, moist, aromatic, delectable dessert or tea time treat. Semolina gives this cake a very light and crumbly texture. Also known as Revani in Turkey and Greece the cake is usually made using semolina and plain flour. Then sugar syrup is drizzled over the baked cake to make it soft and moist. My version is different as I have replaced the flour with almond flour, added orange instead of water or milk and made it more flavourful by adding saffron. FoodieMonday/Bloghop Theme When Preethi who blogs at Preethi’s Cuisine suggested Cakes as the #145th theme,  I immediately knew that I which cake recipe I would be sharing.  I’ve been baking the usual eggless plain or…

  • Misal Pav

    May 14, 2018mayurisjikoni

Have you ever taken a shot of the food for blogging and forgotten to add one of the main ingredients? It happens to me often. Usually it may be a side dish or a condiment which is not such a big deal. However, when I was taking the shoots for misal pav I knew I was forgetting something. Just couldn’t remember, even when I checked the pictures (yes now have learnt to do that, at the beginning was not in the habit of checking them). Its only when we set down to enjoy the famous Maharashtrian Street food that I realized the pav was missing. I had guests so couldn’t go and do the whole set up again. I managed to take a photo of…
