Pomegranate Mousse is an easy, creamy, delectable dessert. Simple and yet the light pink makes it an attractive dessert. Ideal for parties, for Valentine’s Day celebration or just simply to indulge in. Mousse generally are pretty easy to make, well at least the simple ones and are light. Perfect as a summer dessert. There are so many variations of mousse. Some add cream cheese, some add jelly (jello) while others prepare layers of a crumb or cake, mousse and jelly. I am going the simple and easy way. It is my go to recipe when I am entertaining a crowd as I can make them a day ahead. Usually, serve them in those small party dessert cups. That stretches the dessert to serve a lot more people. If I have fewer guests then I prefer to set the mousse in a serving bowl or glass.
Pomegranate Mousse And Pink Colour
The colour of pomegranate mousse will largely depend on the colour of the pomegranate juice. Some appear dark red, but when mixed with the cream, almost appear like pale pink. If the juice has some colorant, the mousse will be light pink. When I am entertaining and I want the mousse to appear light pink, I add a bit of rose syrup to it. The one we use for falooda and milk. 1 tsp goes a long way. And you get a bit of a floral flavour too. Twice, I added some beetroot juice to it. But that sometimes doesn’t work out too well colour wise. But you can always opt for food colour – a few drops of red.
Memories
Whenever I participate in theme based groups, I usually have the recipe ready to post a week ahead. However, sometimes how much ever you plan something has to go wrong. Our fridge conked out on a Sunday. We called the LG helpline and the lady took down all the details. However, the part she missed was to make payment to book the technician. Come Monday and hubby felt why no call or messages from LG. He called again. This time we booked the technician. I thought it is a done deal.Within a day or two someone will come. Alas, it took 13 days! Imagine in this day and age no fridge for that long! The day the fridge stopped cooling we put all the stuff in our balcony as it had a substantial amount of snow. Things were fine as the temperatures for 4 days was hovering between -3ºC and -5ºC. But 5th day the sun came and began to melt the snow!
I went into a panic mode, as the food won’t stay out there in the direct sun. So our compost bin got most of it. Every day meal plans worked around what we can make without requiring much ingredients and there should be no leftovers. Almost sat out for this theme but on Thursday the technician repaired the fridge. He did insist that we wait till Monday before we stock it up. Convinced my hubby we need to do a “mousse test”. If the mousse sets in the fridge then it is working fine. Well it is but we need to treat the fridge like a baby, don’t overfeed it! By the way with nothing much except for a juice carton and my sparkling water the fridge was cold enough to set the mousse in 3 hours.

Ingredients Required For Pomegranate Mousse
Pomegranate Juice
You may use fresh pomegranate juice. However, I prefer to use the carton or bottled ones as the colour tends to be dark. Homemade juice usually is very pale pink. However, it depends on the type of pomegranate arils. Dark red ones will result in a darker colour juice.
Whipping Cream
The one from the carton and not the cans. Also known as heavy or double cream. Gives the best light airy result. Whisk the cream to a soft peak consistency. When you lift the whisk a soft peak should form.
Sugar
So that the sugar melts quickly, I prefer to use powdered, icing or confectioner’s sugar. Add according to your taste. Also it depends on how sweet the juice is. I added 3 tbsp as the pomegranate juice I bought was not that sweet.
Vege- Gel
I like using Dr.Oetker’s Vege- Gel as it sets like the normal gelatine. Vege-gel is an excellent substitute for animal based gelatine. Agar agar usually sets a bit hard and doesn’t give that smooth silky mousse. However, if you don’t get vege- gel then substitute it with agar agar powder, same amount. If you opt to use animal based gelatine then you replace it with the same amount. Soak the vege – gel or gelatin in ¼ cup of pomegranate juice for 10 minutes. Heat it up for 30 seconds in the microwave oven or over hot water till the gelatine dissolves. Add to the rest of the juice and mix well.
If you choose to use agar agar then you will have to heat the juice till it becomes hot. Add the agar agar and mix till it dissolves in the juice. Allow the juice to cool down before adding to the whipped cream.
Pomegranate Arils
Optional, but I like to add some on top.
Pistachio
Roughly chopped. Again an optional ingredient.





POMEGRANATE MOUSSE
Ingredients
- 1 cup pomegranate juice
- 1 cup whipping cream
- 2-3 tbsp powdered sugar
- 1½ tsp vege -gel
FOR THE TOPPING:
- 2 tbsp pomegranate arils
- 2 tbsp pistachio chopped
Instructions
- Allow the vege-gel to bloom in ¼ cup of the pomegranate juice for 10 minutes.
- In the meantime add the whipping cream and sugar in a mixing bowl.
- Whisk the cream to a soft peak consistency.
- Heat the vege-gel mixture in the microwave oven for 30 seconds.
- Alternately, you can place the bowl over hot water and stir to melt the vege-gel.
- Add the vege-gel mixture to the remaining pomegranate juice.
- Mix well.
- Add the juice mixture to the whipped cream.
- Whisk to mix.
- Pour or spoon the mousse mixture into 4 serving bowls or glasses.
- Cover them with some cling film.
- Put them in the fridge for 3-4 hours or overnight. I prefer to allow it to set overnight.
- Garnish the pomegranate mousse with some pomegranate arils and chopped pistachio.
- Serve immediately.
Notes
If you want to use agar agar then use 1½ tsp powdered version. However, to activate it you need to heat the juice, add the agar agar and stir till it melts. Allow the juice to cool down a bit before adding to the whipped cream.
I sometimes replace whipped cream with coconut cream.
Add a topping of your choice.
If you want to add a jelly/jello layer, allow the mousse to set before adding the jelly liquid. Also make sure it is not hot.
