What Is Chermoula?
Chermoula or Charmoula (pronounced sher-moo-lah,) is a popular North African sauce made of fresh coriander, parsley, lemon, olive oil, garlic and warming spices. This popular condiment is used as a marinade, dip or a dressing. Traditionally it is made using a mortar and pestle but I used a food processor. This sauce requires a rough texture and not a smooth one. Therefore just a few pulses and the sauce is ready. For the coriander, I added also the tender stems as they are full of flavour. It is quite similar to chimichurri except that warming spices are used in chermoula and lemon. We mostly add vinegar in chimichurri.

We’ve reached letter S, in fact just too quickly. I almost forgot that I am suppose to post the salad recipe with letter S this week! So here it is almost 11 p.m. and I am frantically trying to type out the post. Usually, I have my posts as soon as I prepare the salad, but this time laziness took over. This Alphabet Challenge, initiated by Wendy has allowed me to try out salads from different parts of the world. This time I am using chermouli which I had tasted sometime back with potatoes. So figured why not with sweet potato. S is for salad leaves, semolina, sweet potato, smoothies, strawberry, shallot, spinach, spices, sugar, soya, sriracha, saffron, salmon, scallops,salads, etc.

SAMA PULAO | MORIYO PULAO
Sama Pulao is a simple, healthy, filling, one pot meal that is generally prepared during the Hindu Fasting Days like Navratri, Ekadashi, Ram Navmi, etc. Sama, samak chawal, moriyo, barnyard millet is widely used during fasting. Though the name has the word millet it is not a true millet. Actually it is a grass seed much like quinoa but smaller.
Strawberry Yogurt Sherbet is an easy to make, healthy, quick, cooling, refreshing frozen treat. Add the ingredients in a blender or food processor and sherbet is ready within minutes. And the best part is that no refined sugar is used. I like to use either maple syrup or honey.

Malagasy Lasopy is simply a pureed vegetable soup. It is usually served with a condiment called sakay and some baguette on the side. Any fresh seasonal vegetables and meat bones are all added in the pot with a generous amount of water. My recipe omits the meat bones.

Ingredients Required For Chermoula Sweet Potato Salad
Sweet Potato
Peel and cut the sweet potato into bite size cubes. I have used approximately 330g of sweet potato. We are going to roast the sweet potato cubes. Can be roasted in the oven at 180ºC for 20-25 minutes or in a pan over the stove. I opted for the stove option.
Chickpeas
Here I have used canned chickpeas. You can used dry chickpeas, soak them overnight and then pressure cook them.
Couscous
Optional ingredient. You can use quinoa instead. I added couscous so that it can be enjoyed as a meal rather than just a side dish. Can add less couscous if you wish.
Olive Oil
For this recipe we will need a generous amount of olive oil. We need some to roast the sweet potato, add some to the couscous and then a good quantity for the chermouli sauce.
Olives
I had some sliced olives which I added to the salad. Add any olives of your choice.
Onion
Here the preference is red onion. However, you can use white or yellow. Slice a small onion thinly. Marinade it while the sweet potato and couscous get ready with some lemon juice. Makes the onion less sharp and tastes more sweeter.
Feta
I had some crumbled feta which I added to the salad. For a vegan version omit the feta cheese.
Baby Tomatoes
Cut the tomatoes into halves.
Fresh Parsley
Pluck the leaves from the stems and roughly chop the parsley. About ½ cup of chopped parsley will be enough.
Fresh Coriander
Roughly chop fresh coriander with the tender stems. The stems have a lot of flavour. We will need about ½ cup of chopped coriander.
Garlic
I made mine extra garlicky by adding a large garlic clove. You can opt for a smaller one.
Coriander Powder
Easily available in all grocery stores. We need a small quantity for the sauce.
Ginger Powder
Need a small amount for the sauce.
Paprika Powder
We will be adding some to the sauce. I had smoked paprika which I used.
Red Chilli Flakes
Add according to your taste. As my chilli flakes are a bit hot so I added only ½ tsp.
Saffron
We need a pinch or couple of strands. It adds aroma and a subtle flavour to the sauce.
Lemon
We will be using both the rind and the lemon juice. If you have preserved lemon then add that to the sauce.
Salt
Some will be added to the sweet potatoes, couscous and the sauce. So be careful and add according to your taste.
Water
Normal tap water to cook the couscous. Here I have not used stock as I want the flavours of the chermoula sauce to come through.
CHERMOULA SWEET POTATO SALAD

Chermoula Sweet Potato Salad is a filling, flavourful salad where sweet potato, chickpeas, couscous, tomatoes, olives and feta are mixed with Chermoula Sauce. Enjoy this delicious salad warm or cold.
Peel and slice the onion as thinly as possible We need a medium onion or according to your preference..
Add the slices to a bowl.
Add 2 tbsp lemon juice and mix well. Also this will help to separate the onion petals.
ROAST THE SWEET POTATO
Peel and cut the sweet potato into bite size cubes. Keep them in the water till you are ready to roast them.
Drain the water out.
Heat 2 tbsp olive oil in a wide pan.
Add the sweet potato cubes.
Add ½ tsp salt. Mix well.
Cover the pan. Allow the sweet potato to cook over medium heat for 15 minutes or until done.
Remember to stir them half way so that they do not burn at the bottom.
PREPARATION OF COUSCOUS
Add 1 cup water to a pan over medium heat.
Add ½ tsp salt and 2 tbsp olive oil.
Allow the water to boil.
Add the couscous. Mix gently.
Switch off the heat and cover the pan.
Allow the couscous to rest for 5 minutes.
Using a fork, fluff the couscous up.
PREPARATION OF CHERMOULA SAUCE
Add chopped coriander, parsley, lemon juice, lemon zest, all the spices, salt and olive oil to a food processor jug.
Process the sauce to a rough texture using short pulses.
You will have about ½ cup of sauce.
PREPARATION OF THE SALAD
Add chickpeas, tomatoes, olive slices, feta, marinated onion to the roasted sweet potato cubes.
Mix well.
Add the chermoula sauce.
Mix well. The salad is ready.
Notes
To enjoy a warm salad, first prepare the sauce and keep it ready. Keep the marinated onion ready. Heat the roasted sweet potato with the chickpeas till it becomes hot. Lastly prepare the couscous. As soon as it is ready add to the pan with the sweet potato.Mix well.
Add salt, garlic, red chilli flakes according to your taste.
Can replace the couscous with quinoa.
Add other salad ingredients like cucumber, bell pepper, etc.
