    March 26, 2025mayurisjikoni

Recipe: Guava Salad, Burmese Style Guava Salad, Burmese Style is full of unique flavours imparted by toasted chickpea flour, fried onion, tamarind,  jaggery and the red chilli flakes. Easy to make, it can be enjoyed as a light meal if you are a guava lover like me. Initially I was a bit apprehensive as to how the toasted chickpea flour would taste in a salad. I was totally astonished as to how well it paired with the guavas and imparted a unique nutty and earthy flavour.   What Is Guava? Guava is a popular tropical fruit. It usually has a green or light yellow skin. The flesh can be pink, red or white. Guava can be eaten when it is semi ripe or ripe. When…

Fattoush is an ideal weight loss salad as it is low in calories, filling and flavourful.   Two Common Ingredients In Most Salads As I have decided to share salads for the Alphabetical Challenge, I have realized that all salads be it from Africa, Asia, Europe, The Americas, all have two common ingredients – tomatoes and cucumber. Yup! When we make traditional or regional based salads for parties, as light meals, sides, etc we add all the ingredients together without thinking much. As I do my research for different salads, tomato and cucumber are in almost all of them! Not that I am complaining…

An excellent way to use up old pita bread, enjoy this salad as a meal or side dish.   A Bit About Yotam Ottolenghi’s Recipes Ottolenghi’s recipes are so vibrant, colourful, fresh and super tempting. What I like about his recipes is that he makes use of seasonal produce, adds layers of flavours by using herbs, spices and umami ingredients. I have a couple of his books but sadly all packed up boxes from the time we moved from Kenya. Hopefully, this year I will be able to get them out and try out…

  • Chickpea Chaat Salad

    January 29, 2025mayurisjikoni

Recipe: Chickpea Chaat Salad Chickpea Chaat Salad is a tasty, gluten free, vegan, slightly sweet, a bit spicy and tangy kind of salad. The star ingredient is boiled chickpeas. Add salad vegetables of your choice. This salad is a version of the popular Indian street food Chana Chaat. It is usually a mixture of boiled chickpeas and potatoes served with tangy sauces like coriander and date tamarind chutney. For this recipe I have added a salad dressing instead of adding the chutneys. What Is Chaat? It is not pronounced as chat as in English but cha-aa-t.  Chaat derives from the Hindi word cāṭ चाट which means delicious, finger licking good. Chaat is actually a whole branch of Indian Cuisine on its own. Variations of chaats…

Recipe: Barley Salad Barley Salad with a Greek lemony dressing is easy to make, ideal potluck salad and makes a healthy meal. Add vegetables of your choice. What I like about this salad is that it stays fresh for at least 3 days in the fridge. Therefore, I like to make a large batch so that I have a light meal ready for busy days.   What Is Barley? Barley is a cereal grain commonly used in breads, stews, soups and sometimes as a side to enjoy with the main dish. This potassium, folate, Vitamin B-6, iron and fiber rich grain doesn’t get the attention it deserves. It is highly recommended for good heart health and to control blood pressure. Love making this salad whenever I make Avocado Dressing. Not only do I love the hues of green but also the flavours and textures. Recipe: Veggie Taquitos These homemade baked veggie taquitos filled with cheese and vegetables makes an excellent appetizer dish or to enjoy  as a main meal. Protein rich, filling and so delicious, these little tacos rolled up not only look cute but can be easily enjoyed without the filling falling off all over the place. What Are Taquitos? Taquitos are rolled up tacos. Small tacos are filled and rolled up like spring rolls but with both ends open. The rolled up tacos are then either shallow or deep fried. I sometimes shallow fry or bake them. With baked ones, less oil is used. Generally taquitos are filled with meat, chicken etc, but I’ve made a veggie version of them. As for the tortilla, use any of…
