Recipe:  Strawberry Sauce

Strawberry Sauce is easy to make at home, a versatile condiment without any artificial colouring, preservatives or flavouring. It comes together within 15 minutes from start to end.  And it just needs a few ingredients. This sauce is generally used as a topping. Make it smooth or leave it chunky. Depends on how you want to use the sauce. Though the sauce doesn’t remain fresh for too long, you can always use frozen strawberries when they are not in season. I sometimes freeze the sauce and allow it to thaw at room temperature.

How To Use Homemade Strawberry Sauce.

  • Serve your pancakes topped with strawberry sauce
  • Mix it in with vanilla ice cream and enjoy. So much better than the artificial flavoured strawberry ice cream.
  • Use it as a topping for your cheesecake, panna cotta, mousse.
  • Add to your cake or muffin batter. A small amount and not too much.
  • Serve it with some vanilla cake.
  • Adding some as a topping to a pound cake, it is pure bliss.
  • I use some to make Strawberry Salad Dressing.
  • Mix with some Greek Yogurt for a healthy dessert option.

The first time I made strawberry sauce at home was way back in May 2012. Made it as a topping for pancakes. When I posted the recipe on the blog, the only photo I had taken was pretty horrible. Sometimes we take better photos and if we don’t add them to the post immediately, they tend to get lost in the thousands of photos on our phone, laptop or icloud. A few days ago, the photo popped up on my phone… and it was like ” gosh I haven’t updated this post.” So now seems the right time (aaj muharat aaya!). Renu, hope you keep the group going as I am sure I am going to find many lost recipes that need my attention.

 

 

 

Ingredients Required To Make Strawberry Sauce

Strawberries

Use fresh or frozen strawberries. If you are using frozen ones don’t allow them to thaw. Cook them straight from the freezer. If you are using fresh strawberries, wash and hull them. Cut them into halves or quarters, depending on how big the strawberries are.

Lemon Juice

Adding some, balances the flavours. Makes the strawberry flavour pop.

Sugar

Not much sugar is required. It all depends on how sweet the strawberries are. Sometimes need to add a bit more if the strawberries are a bit tangy,

Cornstarch | Cornflour

A small quantity is required as it helps to thicken the sauce. Cannot add it directly. The cornstarch has to be mixed with a little bit of water to make a slurry before adding to the sauce mixture.

 

 

 

STRAWBERRY SAUCE

Servings 1 cup

Ingredients
  

  • 2 cups strawberries approx 250g
  • 2 tbsp sugar
  • 1 tsp cornflour or cornstarch
  • 2 tbsp water
  • 1 tbsp lemon juice
  • 1 tsp lemon zest

Instructions
 

  • Wash and hull the strawberries. Cut them into half or quarter depending on the size.
  • Mix the cornflour with the water to make a slurry.
  • Add the slurry, strawberries, sugar, lemon juice and zest to a pan.
  • Allow the mixture to become hot over medium heat.
  • Don't forget to stir the mixture as it cooks as it may stick to the bottom of the pan.
  • Using your spatula or wooden spoon, break up some of the strawberries.
  • Allow the mixture to simmer for 5 minutes. By then the strawberries will be soft and the sauce will be a bit thick.
  • Let the sauce cool down completely before storing in an airtight jar.

Notes

  • The sauce keeps well in the refrigerator for a week.
  • Serve it with ice cream, pancakes, waffles, fresh fruit, mousse, panna cotta or with cheesecake.
  • Try making the sauce using other berries, mangoes, peaches, plums or other fruits.
  • Remove the skin of peaches, plums.
  • Flavour the sauce with basil, mint.
  • Adjust the sugar according to the sweetness of the strawberries.

    Oh my this was so yummy, I am having a good harvest of strawberries and I decided to give this a try, and guess what I even made a pound cake so that I can add sauce to it as per ur suggestion. Simply delicious

    The colour of this beautiful strawberry sauce is what attracted me to it. We had them with a batch of pancakes and that was a celebration.

    Home made strawberry sauce is such a healthy and tastier option compared to the commercial ones ..we can easily alter the sugar levels and make it to our liking .

    Homemade Strawberry sauce is a Lovely condiement to keep handy at home. Would love to drizzle it on ice-creams / pancakes. interesting use of cornflour (for thickness) here. bookmarked !

      Thanks Kalyani. As the amount of sugar is less, the cornflour helps to thicken the sauce. Also it prevents one from over cooking the strawberries.
