Recipe: Mango Strawberry Salad

Mango Strawberry Salad is a refreshing, delicious, colourful summer time salad. Easy to make, it can be served as a side dish or as a light meal. We enjoy this salad as a light lunch option as I add mozzarella which makes it filling. As for the dressing, add any of your choice.

Natural sweetness from the fruits, bite from the roasted almond, refreshing flavour from the mint and protein rich with those grassy slightly tangy mozzarella balls. I prefer to use a vinaigrette. I’m actually quite gullible when it comes to salads with fruits, can eat a huge bowlful of it. No wonder most of my salads feature some sort of fruit.

This month Anu who blogs at Ente Thattukada suggested the theme mango. She asked us to prepare any dish using raw or ripe mango. I wanted to make Mango Mastani which is my list like forever, but couldn’t. So I decided on a simple but delicious salad using both mango and strawberries. My Partner

This group requires partners. They give each other two secret ingredients to use in their dish. The others then guess the secret ingredients. Once again have partnered with Archana who blogs at The Mad Scientist’s Kitchen. I gave her milk and salt. Using those two ingredients she has prepared my all time favourite Aamras. When the mango season is full on, we enjoy aamras. Sometimes I make puri but our favourite is Padvari Rotli. These soft rotis pair so well with the fresh aamras.

Archana suggested I use mozzarella and mint. Incidentally the ingredients were perfect for my summer Mango Strawberry Salad.

Ingredients Required For Mango Strawberry Salad

Mango – use ripe but firm mango for the salad.

Strawberries – Wash the strawberries and hull them.

Salad Leaves – use any of your choice. I prefer to use mixed salad leaves. Add more or less, according to your preference.

Fresh Mint – adds a sweetish and cooling taste. Can replace it with fresh basil.

Almonds – roast the almonds in a pan over low heat or in the microwave oven for 1-2 minutes.

Mozzarella Balls – can replace it with feta cheese if you want to.

Salad Dressing – use home made or ready made salad dressing of your choice. Scroll up for some suggestions.

MANGO STRAWBERRY SALAD

Ingredients

  • 1 medium mango ripe but firm
  • 8-10 strawberries
  • 1-2 cups salad leaves
  • 8-10 mint leaves
  • 8-10 almonds
  • 6-8 small mozzarella balls
  • Salad Dressing of your choice

Instructions

  • Roast the almonds in a wide pan over low heat for 3-4 minutes. Make sure you stir them all the time to avoid burning them.
  • Alternately, roast them in the microwave oven for 1-2 minutes.
  • Allow the almonds to cool before you chop them into halves.
  • Peel and chop the mango into bite size pieces. Add them to a mixing bowl.
  • Hull the strawberries and cut them into quarters or thick slices. Add to the chopped mango.
  • Add the salad leaves and mint too.
  • Cut the mozzarella balls into halves or quarters and add to the salad.
  • Add the almonds. Toss the salad.
  • Chill it in the fridge till required.
  • Add the salad dressing just before serving or serve the dressing on the side.

Notes

  • Add any salad dressing of your choice.

  • Replace mozzarella with feta cheese, tastes equally good.
  • Replace mint with basil leaves.
  • Use a mango that has no or very little fibre.
