• Stir Fried Pak Choy

    September 1, 2023mayurisjikoni

Recipe: Stir Fried Pak Choy This Stir Fried Pak Choy served with a delicious garlic sauce is good  to enjoy on its own. Healthy and crunchy, you can also enjoy it as a side with some stir fried rice/noodles. Memories First time I ever tasted pak choy was  our local Chinese Restaurant in Mombasa, Galaxy. The pak choy was chopped into large chunks and stir fried with green beans and snow peas. Loved the grassy, slightly bitter taste of it.  I am sure they must be getting their supply of pak choy from Nairobi as we don’t get it in the stores. During a trip to Nairobi, I brought back pak choy and tofu as I had this stir fry recipe in mind that I…

  • Summer Avocado Salad

    August 9, 2023mayurisjikoni

Recipe: Summer Avocado Salad Summer Avocado Salad is an easy, healthy, filling, nutritious salad. With two summer fruits, avocado and juicy fresh tomatoes, I like to enjoy this salad as a light meal.  Add some roasted nuts and seeds and in no time a delicious summery salad is ready. As a matter of fact, I love both avocado and tomatoes a lot so they tend to find their way into most of my salad recipes. I had first published this recipe on 28/08/2012. Republishing it with new photos and better write up. What Type Of Salad Dressing To Use? Well, any of your choice. Use ready made ones or make the dressing at home. It is very easy to make vinaigrette. For this summer avocado…

  • Lemon Linguine

    July 23, 2023mayurisjikoni

Recipe: Lemon Linguine Lemon Linguine or classic Italian linguine al limone is one of the easiest, most flavourful pasta dish that comes together in 10 minutes. All you need is some pasta, lemon, good quality parmesan cheese, salt, garlic and a bit of pepper. Add herbs of your choice. Don’t want to add heavy cream then go for some milk. And a quick, delicious, summery pasta dish is ready in no time. Pasta with lemon sauce is one of my favourite ways to enjoy pasta. Frankly, I am a big fan of pasta and therefore it is on the menu at least once a week if not more. I like to try out different flavours and sauces for my pasta dish.   Memories The first…

  • Pasta & Sweet Potato Salad

    July 2, 2023mayurisjikoni

Recipe: Pasta & Sweet Potato Salad Pasta & Sweet Potato Salad is a different, delicious and filling kind of salad. What I like about this salad is that it can be served warm or cold. Additionally, one can add any other ingredients to make it more appealing and filling. Add a dressing of your choice, a light one or a creamy one.   Memories – Drought, A National Disaster 2016 did not bring enough rains to many parts of Kenya. Fast forward to 2017 and out of 47 counties 23 which are arid or semi arid parts of Kenya are facing drought. Rivers have dried up, animals and humans are dying without food. A National and International appeal has been sent out to help these…

  • Mango Strawberry Salad

    June 28, 2023mayurisjikoni

Recipe: Mango Strawberry Salad Mango Strawberry Salad is a refreshing, delicious, colourful summer time salad. Easy to make, it can be served as a side dish or as a light meal. We enjoy this salad as a light lunch option as I add mozzarella which makes it filling. As for the dressing, add any of your choice. Natural sweetness from the fruits, bite from the roasted almond, refreshing flavour from the mint and protein rich with those grassy slightly tangy mozzarella balls. I prefer to use a vinaigrette. I’m actually quite gullible when it comes to salads with fruits, can eat a huge bowlful of it. No wonder most of my salads feature some sort of fruit. • Chole Bhature

    June 25, 2023mayurisjikoni

Recipe: Chole Bhature Chole Bhature is a popular dish in the Northern part of India. Apparently, it originates from Delhi. Chole is a spicy chickpea curry and bhatura is a soft puffed up flatbread that goes with the chole. One is bhatura and several are called bhature. It is also known as chana bhature. Generally enjoyed as a breakfast dish, but one can enjoy it for lunch or dinner. We love chole bhature with some chilled chaas. The process of making chole bhature with homemade chole masala or spice mixture may seem tedious but trust me, it is worth all the effort. The freshness of spices adds so much flavour and aroma to the chole. Sharing This Recipe With Sunday Funday Group Sunday Funday is…

  • Apple Cucumber Salad

    June 16, 2023mayurisjikoni

Apple Cucumber Salad Apple Cucumber Salad, the name in a way doesn’t include all the other ingredients. However, I had to shorten the title. But yes, the main ingredients for this salad are apple, cucumber and onion. The rest are what I add depending what is available in my fridge. Apple Cucumber Salad is so easy to put together. It is a healthy, filling and crunchy salad. Several times I’ve made big batches of this salad for pizza parties, potlucks, picnics, etc.  The orange vinaigrette adds a deliciously sweetish fruity taste to the salad. Whenever I have to make a larger quantity, I chop the salad ingredients a day before except for the apple. As apple turns brown I prefer to chop it when required.…

  • Parsley Walnut Pesto

    June 11, 2023mayurisjikoni

Recipe: Parsley Walnut Pesto Parsley Walnut Pesto is different from the traditional basil and pine nut pesto.  With a bit of peppery and earthy taste from the parsley, slight tang from the walnuts, this pesto is a pleasant change especially during winter time. Basil tends to disappear or is too expensive during winter. Parsley makes a good substitute. And most of us have walnuts in our fridge or pantry. What Is Pesto? Pesto is a green sauce typically made from fresh basil, garlic, pine nuts, olive oil and hard cheese like parmesan. Originating from Genoa, traditionally it is crushed in a mortar using a pestle. However, modern times make use of food processors, blenders, choppers, etc. Some Pesto Recipes On My Blog Coriander Mint &…

  • Apple Carrot Salad

    May 28, 2023mayurisjikoni

Apple Carrot Salad Apple Carrot Salad is a delicious, crunchy, tangy and refreshing salad that is perfect as a light lunch option or as a side dish. With homemade lemon vinaigrette, this is my go to salad for picnics and potlucks. An easy salad which does not require too many ingredients. While one can easily grate both the apple and carrot to make the whole process of preparing the salad faster, I find that if I am making it for picnics, potluck or cookouts, after a while the salad goes limp and too watery. If we are going to enjoy the salad straight away then I grate both. Homemade Lemon Vinaigrette adds a tangy, refreshing flavour to the salad. However, if you want to prepare…
