Niku’s recipe

         Whenever my son Niku comes down home for a holiday, its fun to have him in the kitchen working with me. Not only do we bond while cooking but I also  get to learn a lot of things from him. A slight change here or an addition there makes a whole difference to a recipe. Just a few days ago he made a simple but absolutely delicious lemon drink. I would go through the whole procedure of allowing the herb to steep in hot water, but he just whizzed this recipe within 5 minutes. If you have the ingredients in your fridge, then this drink can be served without any hassles to unexpected guests.

 

 
BASIL MINT LEMON DRINK
Serves 4
 
4 to 4½ cups of chilled water
2 lemons /limes
½ cup mint leaves
½ cup basil leaves
8 to 10 tsps sugar
a pinch of salt
ice cubes to serve
  1. Squeeze out the juice from the lemons.
  2. Chop the mint and basil leaves roughly.
  3. Add all the ingredients except the ice cubes into a blender. Add 8 spoons of sugar initially. Can add more if required after you taste it.
  4. Blend it till the leaves are finely chopped.
  5. Pour the juice into 4 serving glasses. 
  6. Add ice cubes and serve immediately.
Tips :
  • Instead of sugar, use artificial sweetener or honey.
  • Can use only mint or basil leaves.
  • Mince the leaves in a herb mill without water. Add lemonade and serve. If you use lemonade, don’t add any sugar.

    Hey wow what an interesting iced lemon drink. I absolutely love the ease with which you can make this yummy recipe. I will make it for hubby sounds perfect.
