Recipe: Avocado, Bean & Mango Salad
Avocado, Bean & Mango Salad is a zesty, nutritious, filling and delicious salad bursting with colours. Like me if you are a lover of both avocado and mango then this salad is just right for you. With homemade Cilantro Dressing, we love to have this salad as a light meal. I enjoy it as it is and hubby likes to make it a bit more crunchy with some tortilla chips. Make it as a starter, side dish or for potluck parties.

2025 Alphabet Challenge For Me
This year I will try and add salad recipes for this challenge. Besides desserts and baking, I love making different kinds of salads. I remember helping my mum prepare a simple salad of tomatoes, cucumber, carrot and lettuce on the weekends. We were a huge family and we all had to pitch in over the weekend. I learned how to use a knife and peeler when I was barely 8 years old. For this challenge some old salad posts will get new life, some may be popular salads and the rest my own concoctions. Most of the time, I will endeavour to make homemade salad dressings, but some may be ready made. So keeping my fingers crossed,beginning by redoing an old post.

A Bit About Avocado, Bean & Mango Salad
When I first made it way back in 2012 and posted the recipe on 25/05/2012, it was pretty simple. As Kenya has an abundance of mangoes and avocado, it makes sense to pair them in a salad. Over time, got more ideas and finally the one we all love is with the Mexican flavours. The beans are sometimes red or black -all depends on availability. Republishing it with more ingredients added and a video on 01/01/2025. Please feel free to add more ingredients to the salad to make it into an enjoyable and healthy meal.
Ingredients Required For Avocado, Bean & Mango Salad
Avocado
Need one medium ripe but firm avocado. Peel and cut the avocado into cubes. Sprinkle about 1 tbsp lemon juice over it so it doesn’t turn black.
Mango
One medium ripe mango. Peel and cut the mango into cubes. From the medium mango I got about 1 cup of chopped mango.
Beans
Can use red kidney or black beans. I usually add canned beans. Occasionally add soaked and cooked beans. All depends on the time I have and if I have planned to make the salad.
Jalapeño
Need one. If you don’t like your salad spicy then remove the white pith and seeds. Chop the jalapeño into slices or very fine. Can opt to use pickled ones if you like.
Sweet Corn
Fresh, tinned or frozen. Cook the corn before adding to the salad. I usually add little water to the frozen corn and allow it to cook in the microwave oven for 1-2 minutes.
Spring Onion
Trim and chop about 2 stalks of spring onion. I use about ¼ cup chopped spring onion. If you don’t have any at hand use red, white or yellow onion instead.
Fresh Coriander | Cilantro
Remove any tough stalks. If they are tender, then chop them along with the leaves. Need some for the dressing and also to add some to the salad. We love coriander so I always tend to add extra.
Paprika Or Red Chilli Powder
Add red chilli powder according to your taste. Some tend to be spicier than others.
Olive Oil
Or go for avocado oil if you have any. Need it for the Cilantro Dressing.
Lime Juice
Fresh lime juice. If you don’t have any then add lemon juice.
Honey| Maple Syrup
Add according to your taste. Sometimes when the mango is very sweet, I don’t add any sweetener to the dressing.
Salt
Add according to your taste. Remember the beans may contain some salt so add accordingly.
Pepper
Coarsely ground or cracked pepper. Add according to your taste.

AVOCADO, BEAN & MANGO SALAD
Ingredients
SALAD INGREDIENTS
- 1 cup ripe mango diced
- 1 medium avocado cut into cubes
- 1 cup red|black beans cooked
- ½ cup sweet corn cooked
- 2 tbsp fresh coriander chopped
- 1 jalapeno chopped or sliced
- ¼ cup spring onion chopped
- 1 tbsp lime or lemon juice
- ½ tsp paprika
CILANTRO SALAD DRESSING
- 3 tbsp olive oil
- ¼ tsp salt
- ½ tsp coarsely ground pepper
- 2 tbsp lime or lemon juice
- 1 tsp maple syrup optional
- 2 tbsp cilantro finely chopped
Instructions
- Microwave the corn with little water in the microwave oven for 1-2 minutes if you are using fresh or frozen. If you are using canned then no need to cook them.
- Drain out the liquid from the canned beans. I prefer to give them a rinse.
- Cut the avocado into half. Remove the seed.
- Remove the peel and cut the avocado into cubes.
- Drizzle 1 tbsp lemon juice over the avocado cubes and toss gently.
- This prevents the avocado from turning black.
- Cut the mango into half. Peel and cut the flesh into cubes.
- Trim the end of about 2 stalks of spring onion. Chop it both the white and green parts.
- Mix all the ingredients for the salad in a big bowl.
- Add paprika and fresh coriander or cilantro. Mix well.
PREPARATION OF CILANTRO SALAD DRESSING
- Whisk olive oil, lime or lemon juice, salt,pepper and maple syrup together in a small jug or container.
- Alternately, add the ingredients in a jar. Close the lid tightly. Give the dressing a good shake.
- Add the cilantro. Mix well.
- Pour it over the salad, toss and serve.
Notes
- Don't use over ripe mango or avocado as it make the salad mushy.
- Add oregano if you don't like coriander | cilantro.
- Add some red chilli powder for a little spiciness.
- Add cucumber, bell pepper if you like.
