RECIPE: MAPLE ROASTED PEACHES

Maple Roasted Peaches, healthy, flavourful, so easy to make and best part – has no refined sugar. Served with some greek yogurt it makes a fruity summery light dessert. Sprinkle granola and it becomes a delightful fun breakfast.

Roasted Peaches can be served with ice cream, but with a diabetic hubby, I wanted to make it without refined sugar. The dark robust maple syrup gifted to me by my son and his girlfriend is perfect for this kind of recipe, not too sweet and very tasty.

From start to finish, this dish takes about 35 minutes. So it is a dessert that you can prepare while you’re enjoying your dinner. During the weekend mornings, by the time you’ve checked your phone, lazed around a bit, the roasted peaches will be ready in time for brunch.

Maple Roasted Peaches

Till last week, I wasn’t able to buy some good peaches, which is surprising considering that it is summer. Before that, bought peaches but didn’t think of taking photos of roasted peaches. I actually wanted to make a peach halwa as on Monday it is Lord Krishna’s birthday – Janmashtami. To celebrate this special day I wanted to include peaches to prepare an Indian sweet dish.

Just two days ago as I entered the supermarket, what greets me… some big beautiful coloured peaches. Hubby suggested I make roasted peaches again. So for now Maple Roasted Peaches it is for this theme. Don’t worry something special will definitely be ready for Janmashtami celebrations on Monday.

As Peaches tend to be pretty expensive in Mombasa when available, I don’t have that many Peach recipes on my blog. However, 2020 saw Kenya markets flooded with so much imported fruit and also not frightfully expensive. At that time I tried out Peach Cardamom Lassi and it is a must try recipe. So refreshing and filling during the summer.

Now that I’m in Montreal, enjoying peaches whenever available and hopefully will soon be able to make some more recipes using this stone fruit before it disappears.

MAPLE ROASTED PEACHES

Ingredients

  • 2 large peaches ripe
  • ¼ cup maple syrup
  • ½ tsp cinnamon powder
  • ¼ tsp nutmeg powder
  • tsp clove powder
  • 1 tsp vanilla extract
  • ¼ tsp butter for greasing
  • tsp sea salt

FOR SERVING:

  • ½ cup Greek Yogurt
  • 2 tbsp chopped nuts mixed

Instructions

  • Preheat the oven to 180°C.

PREPARATION OF THE MAPLE SYRUP MIXTURE:

  • Add maple syrup into a small bowl.
  • Add the spices, salt and vanilla extract. Mix well.
  • Grease a baking tray with the butter.
  • Cut the peaches into halves. Remove the stones.
  • Arrange in the baking tray with the cut side facing up.
  • Brush the peaches with the maple syrup mixture.
  • Add some into the cavities of the peaches.
  • Bake the peaches for 25-30 minutes until they become soft and appear light golden in colour on the top.
  • Remove from the oven. Allow to cool for 5 minutes.
  • Add some yogurt on the roasted peaches. Sprinkle with chopped nuts.
  • Serve immedaitely.

Notes

  • Replace the yogurt with cream cheese, cottage cheese or ice cream.
  • To serve as breakfast add some granola with yogurt, cream cheese or cottage cheese.
  • Use honey if you don't get maple syrup.
  • Use any nuts of your choice. Or sprinkle with some chocolate.
  • Replace the spices with cardamom and ginger powders. Tastes equally good.
  • Tastes good even when it is chilled.
