RECIPE: HOMEMADE BOUNTY CHOCOLATE

Homemade Bounty Chocolate, so easy to make, absolutely delicious. Maple Syrup and Vanilla flavoured soft moist coconut coated with dark or semi sweet chocolate.

This Homemade Bounty Chocolate is so much better than ready made one as it is less sweet and one can add any flavouring of choice to the moist coconut centre. Most people love homemade chocolate and if gifted to them it is even more appreciated. I prefer making edible gifts for festivals, birthdays, anniversaries, etc.

I recently joined this awesome group where food bloggers are paired and they give each secret ingredients to cook with. This is my second post for Shhh Cooking Secretly since I’ve joined. My partner this month is Srividhya Balaji. She blogs at Vidhas Kitchen. Srividhya gave me chocolate and milk powder to use in my recipe. At first I thought I’d make a barfi and then remembered that with raksha bandhan approaching, best to make what my brothers love…chocolates.

I gave Srividhya beetroot and paneer. With those ingredients she made a delicious and healthy paneer beetroot sandwich.

Memories

I started making my choco coconut bites on Friday and kept them in the fridge so that I could coat them with chocolate the next day. However that was not possible as there was no water! We woke up in the morning to find our taps dry. Everyone came out of their apartments to find out what the problem was. The pump had broken down and it was going to take a while to repair it.

Many homes in Mombasa have to store water in jerricans, buckets, huge plastic containers etc. Getting clean water in our taps is a huge problem. With the new government and each county having its own governing body, we had high expectations. But unfortunately things just seem to be getting worse, water problems, power cuts, roads full of potholes, insecurity. These are just a few of the problems. Everyone hopes that things will get better but when is the big question.

Chocolate Medallions – so easy to make and healthy if you use dark chocolate.

 

Ingredients Required For Homemade Bounty Chocolate:

  • Desiccated Coconut – I use unsweetened one.Make sure it is fresh and has not gone rancid and dry.
  • Powdered Sugar – or icing sugar, confectioners sugar. Use as per your taste.
  • Milk Powder – also known as dried milk. Use any of your choice, all fat or skimmed.
  • Maple Syrup/ Honey – any of your choice. I sometimes like to use flavoured honey/maple syrup for that extra flavour.
  • Vanilla Extract – or can replace it with orange, mint or any flavouring of your choice.
  • Butter – melted. I melt it over low heat or in the microwave.
  • Milk – mainly to bind the coconut filling.

 

For Coating:

Chocolate – I prefer to use dark or semi sweet chocolate. You can use milk chocolate too. Melt the chocolate in the microwave oven. To do that place the chocolate chips in a heatproof and micro friendly bowl. Melt for 30seconds. Mix and melt for further 30-40 seconds.

To melt over hot water. Take a pan on which the bowl will sit well on it. It should not fall into the water. Add water in the pan, 1/4 way. Heat it till it becomes hot. Take the pan off the heat. Put the bowl with chocolate on top of it. Mix. The heat from the water helps to melt the chocolate. For this I prefer taking a glass or steel bowl.

For Decoration:

Sprinkles or finely chopped nuts… totally optional.

HOMEMADE BOUNTY CHOCOLATE

Cook Time 5 minutes

Ingredients
  

  • 2 cups desiccated coconut
  • ¾ -1 cup powdered sugar
  • ½ cup milk powder
  • 3 tbsp maple syrup honey or golden syrup
  • 1 tsp vanilla or coconut extract
  • 1 tbsp butter
  • 4 tbsp milk

FOR COATING:

  • 200 -300 g dark chocolate milk chocolate or mixed

TO DECORATE:

  • chopped nuts
  • sprinkles

Instructions
 

  • Melt the butter.
  • Sift milk powder and powdered sugar together.
  • Add desiccated coconut and mix well.
  • Add maple syrup, coconut, vanilla extract, butter and fresh milk.
  • Mix to make a soft dough.
  • Rest the dough for 10-15 minutes.
  • Wet your hands with water if necessary and make balls with the coconut dough. Take about a tablespoonful. Roll into a ball and flatten it slightly so it looks like a disc.
  • Put the discs in the freezer for 10-15 minutes.
  • Melt chocolate in the microwave oven or over hot water.
  • Line a tray with parchment /greaseproof paper.
  • Coat each disc with chocolate using a spoon and fork.
  • Shake off excess chocolate.
  • Put them on the tray. Sprinkle with chopped nuts or sprinkles.
  • Let it set in the fridge for 1 hour or so.
  • Store in the fridge in an airtight contianer if the weather is hot.

Notes

  • Put grated or chocolate chips in a heatproof bowl. Place it over a bowl or pan of hot water. The bowl should sit on the pan and not inside the pan. Stir till it melts.
  • I prefer using dark or semi sweet chocolate.
  • Add a flavouring of your choice.
  • Dip the ball or disc into the chocolate and remove it with a fork. Shake the fork gently to remove excess chocolate.
  • Make shapes from the coconut dough of your choice, small round balls or squares.
